SOFT-SHELL CRABS WITH TOMATO COMPOTE

- Prepare the compote: Preheat the oven to 450 degrees F. Core the tomatoes and halve crosswise, then squeeze out the seeds. Put the tomatoes cut-side up on a baking sheet. Drizzle with 3 tablespoons olive oil; sprinkle with 1 teaspoon salt, and pepper to taste. Roast until shriveled, about 40 minutes. Cool slightly, then slip off the skins. Cut into chunks.
- Toast the coriander and cumin seeds in a skillet over medium heat, about 2 minutes. Remove from the skillet and grind with a spice grinder or chop with a knife. Heat the remaining 2 tablespoons olive oil, the garlic and ginger in the skillet over medium heat and cook until beginning to brown, about 3 minutes. Add the tomatoes, ground coriander and cumin, and salt and pepper to taste.
- Prepare the crabs: Heat 1/8 inch vegetable oil in a large nonstick skillet over medium-high heat. Put the polenta in a baking dish; add 2 teaspoons salt and 1 teaspoon pepper. Put the milk in a bowl. Dip the crabs in the milk and shake off the excess, then dredge in the polenta and shake off the excess.
- Working in batches, fry the crabs, upside-down first, 3 to 4 minutes per side. Transfer to a paper towellined plate. Wipe out the skillet and add fresh oil between batches.
- Reheat the compote and stir in the herbs. Serve the crabs with the compote and lime wedges.

WHOLE GRILLED BLUEFISH
Steps:
- Preheat grill to medium.
- Dress fish with oil, and lemon and lime juices. Season with pepper and salt. Be sure to rub all ingredients throughout fish and inside cavity. Stuff inside of fish with lemon wedges.
- Place in fish basket. Cook 10 to 15 minutes per side or until skin is slightly charred. Remove carefully. Serve with lemon.
TOMATO OLIVE CAPER COMPOTE

Steps:
- 1. Heat oil in a skillet over medium heat. Add the onions and sauté for 5 minutes, until soft. Add the garlic and sauté for 1 minute more.
- 2. Add the tomatoes, olives, capers, and salt and cook over medium-high heat for 10-15 minutes, until most of the liquid has evaporated.
- 3. Serve over grilled chicken, fish, pasta or rice.
BROILED BLUEFISH WITH TOMATO AND HERBS
Steps:
- Preheat broiler. Line rack of a broiler pan with foil.
- Put fish skin sides down on foil and sprinkle with pepper and 1/4 teaspoon salt.
- Whisk together mayonnaise, lemon juice, dill, and chives in a small bowl. Spread evenly over fish, then cover with tomato slices, overlapping slightly, and sprinkle with remaining 1/4 teaspoon salt.
- Broil fish 3 to 4 inches from heat until just cooked through, 12 to 15 minutes.

- Preheat broiler to low with the rack positioned 6 inches from the flame.
- Place fish on a sheet pan and brush with 1 tbsp olive and season with salt and black pepper, to taste.
- In a medium skillet, heat the remaining olive oil. Add garlic and shallots and sauté on medium-low about 4-5 minutes. Add tomatoes and season with salt and pepper, to taste.
- Add wine and sauté until wine reduces, about 5 minutes. Add capers and sauté an additional minute.
- Meanwhile, broil until fish is cooked through, about 6 to 8 minutes, depending on the thickness.
- Place fish on a platter and top with tomato caper sauce.
