- Cook the pasta according to the instructions on the package, reserving 1/4 cup of cooking water before draining, and adding 1 teaspoon of kosher salt with the dry pasta.
- While the water is coming to a boil, prepare the rest of the ingredients. Cut the broccoli, mince the garlic, and shred the cheese.
- In a large skillet, heat the olive oil over high heat. Add garlic and red pepper flakes. Sauté for 30 seconds until the garlic is fragrant, being careful not to burn it. Add in the sausage and break up, browning it.
- Once in the sausage is browned, add the broccoli, pasta water, and a teaspoon of salt. Cook until the broccoli is tender, about 4 minutes.
- Toss with the cooked pasta. Stir in the freshly grated parmesan cheese. Serve and enjoy!

- Bring a large pot of well-salted water to a boil. Add pasta and begin cooking according to package instructions. Five minutes before the cooking time is up, add broccoli. Give it a stir and let everything continue cooking. Drain the broccoli and pasta together and place in a large bowl. Meanwhile, heat 1-2 tablespoons olive oil in a large sauté pan over medium heat. When hot, add the sausage, breaking it up with a wooden spoon until it starts to brown, about 5 minutes. Remove with a slotted spoon or spatula, leaving about 1 tablespoon of fat behind. Preheat oven to 350°F. Melt butter in the same saucepan over medium heat. Once melted, add flour and whisk into butter until smooth. Cook the mixture for a minute or two, stirring constantly. Pour in a small drizzle of milk, whisk constantly until smooth. Continue to drizzle a small amount of milk at a time while whisking. Once you have added a little over half of the milk, the sauce will start to thicken and you can add the milk in larger splashes. Once the milk is completely added, add the salt, garlic and a few grinds of pepper. Bring the mixture to a simmer and cook, while stirring frequently, for 10 minutes. Taste and adjust seasonings as needed. Add the sausage and sauce to the bowl with the pasta and broccoli. Stir in mozzarella and half of the grated Parmesan. Pour into a deep oval or rectangular 3-Qt baking dish and top with remaining Parmesan. Bake for 30 minutes, until the edges start to brown. Garnish with basil if desired. Eat warm and reheat as needed!

- Bring a large pan of water to the boil and cook the pasta until nearly al dente. Throw in the broccoli and cook for 2 mins more. Drain, saving 1-2 tbsp of the water.
- Heat the oil in a large frying pan and add the garlic, fennel seeds, if using, and chillies. When they start to colour a bit, add the sausage and cook until golden and cooked through. Tip in the pasta and broccoli with the reserved water and toss. Serve hot with the Parmesan shavings.

- Heat the olive oil in a large Dutch oven or heavy-bottomed pot over medium-high heat. Add the sausage and cook until browned, breaking up with a wooden spoon, about 8 minutes.

- Heat 2 tbsp sunflower oil in a pan over a medium heat and fry the onion for 8-10 mins until soft and translucent.
- Squeeze the sausagemeat from the casings and crumble into the pan with the onion. Drizzle in 1 tbsp sunflower oil, turn up the heat to medium-high and fry until the sausagemeat has started to colour and turn slightly crisp in parts, about 5-6 mins. Lightly crush the fennel seeds using a pestle and mortar. Add the garlic and crushed fennel seeds to the sausagemeat and cook for 1 min more until fragrant, then remove from the heat and set aside.
- Bring a large pan of salted water to the boil and cook the pasta following pack instructions, or until al dente. Halfway through the cooking time, add the broccoli. When the pasta is ready and broccoli tender, drain in a colander, reserving a mugful of the cooking water.
- Stir the cooked broccoli and pasta into the sausage mixture in the pan until coated. Season well. Stir through the lemon juice, chilli flakes and a splash of the reserved cooking water to loosen if needed (or use 1 tbsp oil, if you like). Serve in bowls topped with the cheese.

- Preheat oven to 375 degrees. Lightly oil a 9-x-13-inch gratin or baking dish.
- In a separate pot, bring water to a boil and add 1/2 teaspoon of salt, broccoli and garlic. Simmer the broccoli and garlic for 5 minutes, until softened. With a slotted spoon remove the broccoli and garlic to a large bowl. Bring the water back to the boil, add the pasta, and cook the pasta for about 2 minutes less than the package directions suggest, about 11 minutes. The pasta should be al dente, a little firm.
- Meanwhile, in a large Dutch oven set over medium-high heat, heat the oil. Add sausage and the garlic cloves from the broccoli bowl, and cook, stirring frequently until meat is fully cooked and no longer pink, about 4 to 5 minutes, if using fresh sausage. (If using fully cooked sausage, cook until surface is golden, about 2 to 3 minutes.) With a slotted spoon, transfer sausage to the broccoli, and drain most of the oil from the pan, leaving about 2 tablespoons. Discard the garlic.
- Toss drained pasta with sausage mixture. Add beans, stock, 3/4 cup of grated mozzarella cheese and all of the ricotta. Add remaining salt and pepper. Gently toss. Transfer to prepared gratin or baking dish, top with breadcrumbs, remaining 1/4 cup of grated cheese and 1/4 cup mozzarella cheese, and drizzle with olive oil.
- If making this in advance, allow the mixture to come to room temperature, cover with plastic wrap and place in the refrigerator.
- Bake for 25 minutes, until heated through and crusty on top.
SAUSAGE AND BROCCOLI PASTA
I was craving pasta one night and couldn't find a recipe that looked good.. so i made up my own. Not bad, I think it has nice flavour. You can use fresh or frozen broccoli, but if you use frozen I recommend defrosting in the microwave for a minute or so, just so its not too cold.

- Boil pasta in salted water to al dente.
- While pasta is boiling, remove casings from sausage and scramble fry with onions and garlic until no longer pink.
- Add tomatoes, undrained, and bring to a boil.
- Add salt, pepper, basil and Italian seasoning. Boil 1 minute.
- Add broccoli and cook until soft.
- Continue cooking to desired consistency (I like it a little runnier than most, I like to soak up sauce with bread).
- Add half the parmesan cheese, and mix through (optional).
- Toss pasta with sauce.
- Serve hot and sprinkle with more parmesan, if desired.

An Italian-American classic, this freezable sausage pasta bake is an ideal make-ahead family dish for busy days

- To make the ragu, heat the oil in a large shallow pan or flameproof casserole. Squeeze the sausagemeat from its skins in small balls straight into the pan. Sizzle for 10 mins until browned (don't worry if the meat breaks up). Add the garlic and sizzle for another minute until starting to turn golden, then stir in the chilli flakes, if using, the tomato purée and vinegar. Tip in the tomatoes and bring to a simmer. Reduce the heat to low and bubble for 30 mins.
- Meanwhile, make the white sauce. Melt the butter in a saucepan and stir in the flour to make a loose paste. Sizzle for a minute, then gradually whisk in the milk. Simmer gently for 10 mins, whisking occasionally to ensure the sauce stays smooth. Season and whisk in the parmesan. Remove from the heat and set aside.
- Cook the pasta in a large saucepan of boiling water for 9 mins, or a minute less than pack instructions. Drain and return to the pan. Scrape most of the white sauce into the pasta and stir to coat. Tip in most of the ragu and most of the mozzarella and stir until just combined. Pour the pasta mixture into a large baking dish and spoon over the remaining white sauce and ragu. Dot with the rest of the mozzarella and sprinkle with extra parmesan. Leave to cool completely, then wrap and chill for up to a day, or freeze for up to two months. Defrost in the fridge for 24 hrs before baking.
- Heat the oven to 190C/170C fan/gas 5. Bake for 25-30 mins until the top is slightly crisp at the edges and the cheese is melted. Leave to rest for 5-10 mins, then take the baking dish straight to the table for people to scoop onto their plates.
