Growing up, I never liked broccoli, but I'm hooked on this salad's light, sweet taste. It gives broccoli a whole new look and personality. -Jessica Conrey, Cedar Rapids, Iowa

8 cups fresh broccoli florets (about 1 pound)
1 bunch green onions, thinly sliced
1/2 cup dried cranberries
3 tablespoons canola oil
3 tablespoons seasoned rice vinegar
2 tablespoons sugar
1/4 cup sunflower kernels
3 bacon strips, cooked and crumbled

Steps:

  • In a large bowl, combine broccoli, green onions and cranberries. In a small bowl, whisk oil, vinegar and sugar until blended; drizzle over broccoli mixture and toss to coat. Refrigerate until serving. Sprinkle with sunflower kernels and bacon before serving.

Being the only person in my house that likes broccoli salad, this recipe fits the bill. Very simple - most of the prep time is refrigeration time.

Number Of Ingredients 8

2 cups broccoli florets
2 slices bacon, cooked and crumbled
3 tablespoons dried cranberries
1 tablespoon sunflower seeds
1/3 cup mayonnaise (low-fat works just fine)
4 teaspoons sugar
2 teaspoons white vinegar
1/3 cup shredded cheddar cheese

Steps:

  • Start off by making the dressing. In a small mixing bowl, whisk together the mayonnaise, sugar, and vinegar. Mix until the sugar is completely dissolved, and the dressing is smooth.
  • Toss in the remaining ingredients. Keep the bowl covered, and refrigerate for at least 2 hours. Stir the salad again, before serving.

This fresh, crunchy side dish pairs well with chicken, salmon, or beef! It makes four servings so nothing goes to waste!

1 medium head of broccoli, diced into small uniform pieces
⅓ cup diced red onion
⅓ cup dried cranberries
⅛ cup bacon bits
¼ cup sunflower seed kernels
⅓ cup shredded cheddar cheese
¼ cup olive oil mayonnaise
2 tsp granulated sugar
2 tbsp white vinegar

Steps:

  • Mix broccoli, diced red onion, dried cranberries, bacon bits, sunflower seed kernels, and shredded cheddar cheese in a medium bowl.
  • In a small bowl, mix together dressing ingredients until well combined and sugar is dissolved. Pour dressing on top of broccoli mixture and toss to combine.
  • Cover and let sit in the refrigerator for 15 minutes before serving to allow the flavors to come together. Enjoy!

Broccoli Crunch Salad is a classic salad recipe. Broccoli, dried cranberries, bacon, sunflower seeds (but I add pepitas!) and finely diced red onion is tossed in a simple (like 3 ingredients) dressing. Not only is this salad colorful and crunchy, but delicious too!

2/3 cup mayonnaise (homemade or store-bought)
1-1/2 tablespoons apple cider vinegar
2 teaspoons poppy seeds
kosher salt (to taste)
freshly ground pepper (to taste)
4 slices thick-cut applewood bacon (cooked and finely chopped)
1 large head broccoli (cut into bite-size pieces)
1/2 cup dried cranberries
1/3 cup pepitas
1/3 cup finely chopped red onion
1/4 cup unsalted roasted sunflower seeds (shelled)

Steps:

  • In a small bowl, combine the mayo, cider vinegar and poppy seeds. Season with salt and pepper to taste.
  • In a large bowl combine crumbled bacon with the broccoli florets, cranberries, pepitas, onion and sunflower seeds.
  • Pour in the dressing an toss to combine.
  • Cover and chill for 1 hour or longer, or until ready to serve.
