CHEESY BROCCOLI RICE BAKE

- Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Cook rice in water as directed on package.
- Meanwhile, in 10-inch skillet, melt 1 tablespoon butter over medium-high heat. Add onion; cook, stirring occasionally, until crisp-tender. Reduce heat to medium. Stir in cheese, soup, milk and pepper. Cook, stirring frequently, until cheese is melted.
- Stir in broccoli and rice. Spoon into baking dish. In small bowl, mix bread crumbs and 1 tablespoon melted butter; sprinkle over rice mixture.
- Bake uncovered 30 to 35 minutes or until light brown on top and bubbly around edges.

- Remove from heat.

BROCCOLI CHEESE RICE (GOOP)

- Instructions Mix rice and melted butter together in oven-proof casserole. (3-quart casserole should do it.) Mix in all other ingredients and blend well. Cook about 1 to 1-1/4 hours in 375 degree F. preheated oven. Note: Cooking time may vary depending on how long mixture sits before baking. The longer it sits, the less cooking time needed. You may wish to stir once at the midway point of the baking cycle. You can also add fresh, peeled raw shrimp or cooked chicken cubes for a different casserole. Always test rice for doneness before serving. Cooking times vary with different ovens, and you don't want any surprises!

- In a large skillet over medium heat, saute onion, celery and broccoli in butter for 3-5 minutes, Stir in cheese, soup, and milk until smooth.
- Place rice in greased 8-inch square baking dish.
- Pour cheese mixture over rice, do not stir.
- Bake uncovered at 325°F for 25-30 minutes or until hot and bubbly.

- Saute onion in olive oil and set aside.
- Boil broccoli florets in water for 3 minutes. Drain and chop into pieces.
- Mix broccoli with cream of chicken soup, prepared instant rice, onions and cheddar cheese. Pour into a one quart size baking dish.
- Mix crackers crumbs with butter and sprinkle on top.
- Bake in a 350 degree oven for 30 minutes or until bubbly around edges.

- Preheat oven to 350°. Melt 2 Tbsp. butter. Combine melted butter with panko and 1 cup shredded Cheddar cheese; toss to coat.
- Bring broth and next 3 ingredients to a simmer in a medium saucepan over medium-low heat. Reduce heat to low; cover and keep mixture warm until ready to use.
- Melt remaining 4 Tbsp. butter in a large shallow Dutch oven or ovenproof skillet over medium heat. Add onion and celery to Dutch oven, and cook, stirring occasionally, 3 to 5 minutes or until onion is lightly browned. Add mushrooms to Dutch oven, and stir in 1/2 tsp. kosher salt and a pinch each of black pepper and ground red pepper. Cook, stirring occasionally, 3 to 5 minutes or until mushrooms are tender. Add garlic, and cook, stirring constantly, 45 seconds. Stir in flour until combined. (Mixture will be dry.)
- Remove and discard bay leaf and thyme from broth mixture. Gradually stir warm broth mixture into mushroom mixture. Add remaining 1 cup cheese, and stir until well blended and smooth. Stir in rice and next 3 ingredients. Cover Dutch oven with a tight-fitting lid.
