1 (9 inch) deep dish prepared pie crust
1 teaspoon vegetable oil, or as needed
2 cups finely chopped broccoli
4 eggs
½ cup milk
1 tablespoon Dijon mustard
1 teaspoon dried oregano
½ teaspoon salt
¼ teaspoon ground black pepper
½ teaspoon dried thyme
½ cup shredded Cheddar cheese
¼ cup grated Parmesan cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Line a baking sheet with aluminum foil.
  • Place pie crust into a 9-inch deep pie dish and prick crust all over with a fork; brush with oil. Place crust onto prepared baking sheet.
  • Bake crust in the preheated oven for 8 minutes.
  • Place broccoli into a bowl and microwave on high until broccoli is bright green and slightly tender, about 4 minutes. Whisk eggs, milk, Dijon mustard, oregano, salt, pepper, and thyme in a bowl; stir broccoli into egg mixture. Pour mixture into crust and sprinkle quiche with Cheddar and Parmesan cheeses. Place pie dish on the baking sheet.
  • Bake until a knife inserted into the middle of the quiche comes out clean, about 40 minutes. Let stand 10 minutes before cutting.

2 cups broccoli, minced
3 cups potato, frozen, shredded
1 ½ cups shredded cheddar cheese, divided
1 teaspoon salt, divided
½ teaspoon pepper, divided
1 tablespoon olive oil
6 eggs
1 cup broccoli, chopped
1 tomato, diced
1 small onion, diced
2 tablespoons half & half

Steps:

  • Preheat oven to 350˚F (180˚C).
  • In a bowl, add broccoli, potatoes, 1 cup (100 g) cheddar, ½ teaspoon salt salt, and ¼ teaspoon pepper. Stir to combine.
  • Grease a 9-inch (23 cm) nonstick tart pan with olive oil. Pour the broccoli mixture into the pan. Press evenly into the pan and the sides of the pan until firm using a measuring cup.
  • Bake for 45 minutes until the potatoes begin to brown.
  • In a bowl, mix together the eggs, broccoli, tomatoes, onion, remaining cheddar, half-and-half, and the rest of the salt and pepper.
  • Pour the egg mixture into the cooked crust. Bake for 25 minutes until eggs are firm.
  • Let cool, then serve.

Ina Garten's quiche is made with a buttery, crispy and flaky pie crust along with a rich egg filling and some delicious mix-ins including bacon and herbs. It's perfect for weekends and holidays and you can add whatever you want to it like Feta cheese, ham, white cheddar cheese, crab meat, or spinach.

1 cup all-purpose flour, plus more for dusting
Kosher salt, to taste
1 stick (8 tbsp) cold unsalted butter, cut in small pieces
3 to 5 tbsp ice water
1 tbsp unsalted butter
1 small yellow onion, very thinly sliced
Kosher salt and freshly ground black pepper, to taste
4 ounces bacon, cut into 1/2-inch pieces
2 tsp fresh thyme leaves, divided
1/2 cup shredded Gruyere (about 2 ounces)
1 cup heavy cream
2 large eggs

Steps:

  • Pulse the flour and 1/2 tsp salt in a food processor until combined. Add the butter and pulse until the flour looks like cornmeal.
  • Next, sprinkle in 3 tbsp of ice water and start pulsing until your dough begins to come together.
  • Now, pinch the dough with your fingers to make sure it holds together. If it doesn't, add up to 2 tbsp of ice water, 1 tbsp at a time, and pulse the mixture again.
  • Transfer the dough to a sheet of plastic wrap and pat it into a disc before wrapping it tightly and placing it in the fridge until firm. Allow it to sit for at least 1 hour or preferably overnight.
  • Roll the dough into an 11-inch round, about 1/8-inch thick, on a lightly floured working surface.
  • Line a 9-inch fluted tart pan with a removable bottom with the dough, leaving an even overhang of dough all around.
  • Press the dough into the edges of the pan and the fluted sides. Then, roll a rolling pin over the top to cut off the excess dough. Discard the excess dough.
  • Prick the bottom all over with the use of a fork, and let it chill for about 30 minutes.
  • Meanwhile, position an oven rack in the lower third of your oven and preheat the oven to 375 F.
  • Press a piece of parchment over your chilled crust and then fill the crust with either pie weights, raw beans, or rice. Put the pan on a baking sheet.
  • Bake the crust for about 40 minutes until it turns golden around the edges.
  • When it's done, carefully remove the parchment and weights; return the crust to the oven to bake for another 15 minutes until the crust is dry and slightly golden.
  • Allow the crust to cool completely for about 30 minutes.
  • In a medium skillet, combine the butter with the onion, 1/2 tsp salt, and 1/2 cup water.
  • Cook over medium-low heat for about 30 minutes while stirring occasionally, until the onions are completely softened and all the water has evaporated.
  • Meanwhile, cook the bacon in a separate medium skillet set over medium-low heat for about 10-15 minutes, stirring occasionally, until the fat has rendered and the bacon is crisp.
  • When the onion is cooked, add the bacon to it using a slotted spoon. Then, stir in 1 tsp thyme and 1/2 tsp pepper.
  • Now, you spread the onion mixture on the bottom of the crust and sprinkle the top with the Gruyere.
  • Next, in a medium bowl, whisk the cream with the eggs and 1/2 tsp salt until well combined.
  • Pour the cream mixture over the filling in the crust and top it with the remaining 1 tsp thyme.
  • Bake the quiche on the baking sheet until set and golden, about 30 minutes.
  • Make sure to let the quiche cool for at least 30 minutes before serving.

Roasted Broccolini and Cheddar image

1 1/2 pounds broccolini
Good olive oil
Kosher salt and freshly ground black pepper
6 ounces good sharp aged white Cheddar, such as Cabot
Juice of half a lemon

Steps:

  • Preheat the oven to 400 degrees F.
  • Remove and discard the bottom half of the broccolini stems. Cut the broccolini stems in half or quarters lengthwise, depending on the size of the stems. Don't cut the florets--just pull them apart. Place the broccolini on a sheet pan. Drizzle 3 tablespoons of olive oil on the broccolini and sprinkle with 1 teaspoon salt and 1/2 teaspoon pepper. Toss well, making sure the broccolini is lightly coated with oil. Spread the broccolini in one layer and roast for 10 to 15 minutes, tossing once with a metal spatula, until crisp-tender.
  • Meanwhile, slice the Cheddar 1/4-inch thick and break it into large crumbles. When the broccolini is ready, sprinkle the cheese on the broccolini and return to the oven for 3 to 4 minutes, until the cheese just melts. Squeeze on the lemon juice, taste for seasonings, and serve hot.

Store-bought or Homemade Pie Dough, recipe follows
1/4 to 1/2 cup chopped roasted or steamed broccoli
1/4 to 1/2 cup sauteed sliced red onions
3/4 to 1 cup shredded pepper jack cheese
3 large eggs
1 1/4 cups heavy cream, half-and-half or milk
Kosher salt and freshly ground pepper
1 to 2 tablespoons chopped chives
1/2 teaspoon paprika or chile powder, or some grated lemon zest (optional)
1 3/4 cups all-purpose flour, plus more for dusting
1/2 teaspoon salt
2 tablespoons sugar
12 tablespoons (1 1/2 sticks) unsalted butter, diced and chilled
4 teaspoons apple cider vinegar or white vinegar

Steps:

  • Preheat the oven to 375 degrees F. Line a 9-inch pie plate with pie dough and crimp as desired; chill 30 minutes. Line with foil, then fill with pie weights or dried beans. Bake until the crust is set, about 20 minutes. Remove the foil and weights and continue baking until lightly golden, 5 to 10 more minutes. Let cool while you prepare the filling.
  • Put the broccoli and red onions in a large bowl. Add the pepper jack and toss to combine.
  • Whisk the eggs, heavy cream, 1/2 teaspoon salt and 1/4 teaspoon pepper in a large bowl. Stir in the chives. Add the and paprika, chile powder or lemon zest, if desired. Spread the vegetable-cheese mixture in the crust, then pour the egg mixture on top. Reduce the oven temperature to 350 degrees F and bake until the filling is set, 40 to 50 minutes. Let cool at least 30 minutes before slicing.
  • Pulse the flour, salt and sugar in a food processor. Add about one-third of the butter; process until the butter is combined. Pulse in the remaining butter in 5 or 6 pulses to form coarse crumbs. Add the vinegar; pulse quickly a few times while adding 1/3 cup ice water. Squeeze some dough between your fingers. It should just hold its shape; if it's still crumbly, quickly pulse in more ice water by the tablespoonful. (Do not overwork the dough.)
  • Turn the dough out onto a large piece of plastic wrap. Wrap the dough, then press and flatten into a thin round. Refrigerate 1 hour.
  • Roll out the dough into an 11-to-12-inch round, about 1/8 inch thick, on a lightly floured surface. Center over a 9-inch pie plate. Fold in the edges and crimp as desired. Refrigerate at least 30 minutes before using.

1 homemade or store-bought single-crust pie dough
1 tablespoon unsalted butter

3/4 pound broccoli florets, steamed until crisp-tender
1 cup grated sharp cheddar (4 ounces)

Steps:

  • Preheat oven to 375 degrees. Lightly flour a rolling pin and work surface and roll out dough to a 12-inch round. Place in a 9-inch pie plate, fold overhang under, and crimp edge. All-butter pastry dough
10 ounces (1-inch-wide) broccoli florets (with 1 to 2 inches of stem attached)
2 large garlic cloves
6 large eggs
1 1/2 cups half-and-half
1/4 teaspoon grated nutmeg
1/4 teaspoon cayenne
5 ounces extra-sharp Cheddar, coarsely grated (2 cups)
1/4 cup grated Parmigiano-Reggiano
Equipment: a 9 1/2-inch deep-dish pie plate or a 9-inch (2-inch-deep) round fluted tart pan with removable bottom; pie weights or dried beans

Steps:

  • Preheat oven to 375°F with rack in middle.
  • Roll out dough on a lightly floured surface with a lightly floured rolling pin into a 13-inch round. Fit dough into pie plate, letting excess hang over edge. Fold overhang inward and press against side of pie plate to reinforce edge. Prick bottom all over with a fork. Chill until firm, about 30 minutes.
  • Line pie shell with foil and fill with pie weights. Bake until pastry is set and edge is pale golden, 20 to 25 minutes.
  • Carefully remove foil and weights, then bake shell until deep golden all over, 15 to 20 minutes more. Put pie plate in a 4-sided sheet pan. Leave oven on.
  • While shell bakes, cook broccoli in a 3-quart pot of boiling salted water 4 minutes. Drain broccoli and rinse under cold water to stop cooking, then pat dry.
  • Mince and mash garlic to a paste with a generous pinch of salt.
  • Whisk together garlic paste, eggs, half-and-half, nutmeg, cayenne, and 1/4 teaspoon salt in a large bowl until smooth.
  • Pour filling into pie shell and add broccoli, then sprinkle with cheeses.
  • Bake quiche until custard is just set, 45 to 50 minutes. (Center will tremble slightly; filling will continue to set as it cools.) Cool at least 20 minutes.
  • Serve quiche warm or at room temperature.
