This is Russian dish that was developed many years ago during the times when money was very scarce. I modified this recipe almost 50 years ago and it is a very easy to make and tasty dish.

Steps:
- In a large saucepan, add noodles and 3 cups of water.
- Bring to a boil and cook for about 3 minutes.
- Drain well and set aside.
- Preheat oven to 400 degrees F.
- Prepare a 8" x 8" oven-proof casserole dish by rubbing inside with a vegetable oil or margarine.
- In a mixing bowl, mix together eggs, whipping cream, baking powder, salt and sugar.
- Add noodles and stir to mix well.
- Pour noodle mixture into prepared casserole dish.
- Bake in preheated 400 F oven for 25 to 30 minutes or until top is golden brown.
- Serve with melted margarine or butter.
- You can eat the Lapshevnik cold as it is good as a quick snack.
UNCLE BILL'S GREEN SPLIT PEA WITH HAMBONE SOUP

Steps:
- Rinse peas well in cold water and add to a large cooking pot.
- Measure 8 cups of water and add to cooking pot.
- Bring to boil, remove from heat, cover and let sit for 1 hour.
- Return to stove and bring back to boil.
- Add ham bone, carrots, onions, celery, bay leaf, beef bouillon, salt, peppercorns and dried thyme.
- Reduce heat to simmer, cover and cook for about 1 to 1 1/2 hours, stirring occasionally.
- Remove ham bone and cut off any remaining ham, cut into bite size pieces and return to soup.
- Discard ham bone.
- If there are big pieces of ham in the soup, remove, cut into bite size pieces and return to soup.
- Remove bay leaf and discard.
- Adjust seasonings to taste.
- If you desire a smooth soup, then puree' in batches in a food processor or blender.
- Or eat the soup without puree'ing.
- If soup is too thick, add more water to your desired consistency.
- Beef broth or chicken broth may be added, just reduce the water by the amounts used.
- Smoked ham hocks are excellent to use instead of a ham bone.
- If there is not enough ham on the ham bone, then add additional ham of your choice.
- You may also use about 1/4 teaspoon of Liquid Hickory Smoke, to get a smokey flavor.
- You may also use whole peas, but it will take a bit longer to cook these peas so that they are tender.

- In a food processor or blender, add balsamic vinegar, lemon juice, musard, Worcestershire sauce, garlic cloves, shallot, pepper, water and process until smooth.
- With processor on low speed, add olive oil slowly in a steady stream and process for 30 seconds.
- Add liquid honey and process to blend for 30 seconds.
- Store dressing in a container with a lid in the refrigerator.
- Stir or shake dressing before using.

UNCLE BILL'S TURKEY DRESSING
An excellent vegetarian style dressing for poultry. I have been making this recipe for over 35 years.

Steps:
- Purchase an 8 ounce sliced loaf of day old bread, such as homemade, sour dough or Italian bread.
- Cut into 1/2" cubes and place on cookie sheets to dry for at least 1 day or dry in a 250 F oven for about 30 minutes.
- I prefer to buy bread rather than purchasing bread cubes or bread crumbs.
- In a large frying pan, add butter or margarine, onions, green and red peppers, celery and saute' for about 10 minutes; DO NOT BROWN.
- Add chicken soup base and stir well.
- Saute' for 5 minutes longer on medium-high heat.
- In a large mixing bowl, add beaten eggs and milk and mix well.
- Add dried bread cubes and mix well to coat.
- Add mushrooms and mix again.
- In a small bowl, mix together poultry seasoning, ginger, salt, parsley, dill weed, granulated garlic powder, black pepper and mix well to combine.
- Sprinkle mixture over dressing and mix well.
- Add crushed soda crackers and mix well.
- Dressing should be only slightly moist when squeezed and should just hold together.
- If dressing is still too moist, add more crushed cracker crumbs until the desired texture is achieved.
- Adjust spices to taste.
- You may wish to add some dried sage if desired.
- Line the cavity with cheese cloth leaving enough cloth so that it protrudes outside the cavity. Stuff dressing loosely, DO NOT PRESS TIGHTLY, as it will not cook properly.
- You can also wrap the dressing in double aluminum foil and bake in the oven along with your turkey or separately at 400 F for about 1 1/2 hours.
- When the turkey is cooked, pull out the cheese cloth with the dressing. Leaves the cavity clean and you do not need to dig the dressing out.
- NOTE: I prefer to cook the dressing in double aluminum foil in the oven.
