BROCCOLI BACON FRITTERS
OK I have done all the cauliflower recipes, time to give broccoli a chance. So I added bacon served with applesauce, what a great meal!

Steps:
- 1. When broccoli still warm add flour and parm and mash. Add rest of ingredients and mix.
- 2. Heat vegtable oil in frying pan. I used icecream scoop to measure and place patties in heated oil. (If I use for side dish, I would use 2 heaping tablespoons) Fry til golden brown, about 3-5 min per side. I fryed in batches placing patties on paper bag to catch oil. Served with applesauce, or make your favorite dipping sauce.
BACON FRIED BROCCOLI RICE
Frozen broccoli rice is a great alternative for regular rice. Fried in bacon grease for taste and topped with crispy bacon bits for crunch makes this a great side dish.

Steps:
- Cook bacon in a large skillet over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Remove bacon to a paper towel-lined plate, and leave 2 tablespoons bacon grease in the skillet. Crumble bacon when cool enough to touch.
- Add onions to the skillet and cook over medium-high heat until soft and translucent, 3 to 4 minutes. Add broccoli rice and fry until tender, stirring frequently, about 5 minutes. Mix in beaten eggs and stir until well combined. Cook until eggs are completely scrambled into broccoli rice mixture. Turn off heat and stir in soy sauce.
- Add crumbled bacon just before serving and stir to incorporate. Top with green onions.

- Place broccoli in a steamer basket; place in a small saucepan over 1 in. of water. Bring to a boil; cover and steam for 3-4 minutes or until crisp-tender. Coarsely chop broccoli and set aside., In a large bowl, combine the eggs, egg whites, cheese, flour, salt, garlic powder and pepper. Stir in broccoli., Heat 1 tablespoon oil in a large nonstick skillet over medium heat. Drop batter by 2 heaping tablespoonfuls into oil; press lightly to flatten. Cook in batches for 3-4 minutes on each side or until golden brown, using remaining oil as needed. Drain on paper towels. Serve with salsa if desired.

Despite sounding weird, these are actually very tasty! They can be used as a side dish, or as a main meal with a salad and fresh bread. This makes approx 16 small fritters at 1/2 point each if you are following a weight watchers plan. Cooking time will depend on size of pan used. I have put the points for each ingredient beside it in brackets.

Steps:
- Steam the broccoli until crisp tender.
- Add this to the onion and garlic in a food processor and pulse to chop (DO NOT PUREE) or chop the broccoli by hand.
- Transfer to a bowl and add the flour, salt, milk and oil.
- Add egg and sweet chilli sauce and mix thoroughly.
- Cook in spoonfuls in a non stick frypan with a light coating of cooking spray, until golden, turning to brown each side.

- Place the broccoli florets into a food processor and blitz until they turn into small pieces. Transfer to a large bowl.
- Add the crushed garlic, onion flakes, chopped bacon, parmesan cheese and tasty cheese to the bowl with the broccoli and add the self raising flour before stirring well to combine.
- Beat the eggs in a small bowl lightly with a fork and add salt and pepper to taste. Add the eggs along with 1/4 cup of water to the bowl with the broccoli mixture and stir. Gradually add the extra water and stir until you have a thick batter - please note you may not need all of the water/or need extra depending on the water content of the broccoli you have used.
- Heat a tablespoon of olive oil in a large frying pan over a medium to high heat and use a 1/4 measuring cup to scoop up the batter and place the fritter mixture into your pan. Use a spoon to gently spread the mixture into a circle between 1/2cm - 1cm thick. You should be able to fit approximately six fritters (or even more depending on the size of your pan) into your frying pan.
