4 slices bacon, cut into 1-inch pieces
1 onion, chopped
3 russet potatoes, scrubbed, chopped into 3/4-inch cubes
¼ cup water
2 green onions, sliced
2 cloves garlic, minced
½ teaspoon smoked paprika
kosher salt and freshly ground pepper to taste
4 eggs
1 cup shredded Cheddar cheese

Steps:

  • Place bacon in a large skillet and cook over medium-high heat, turning occasionally, until crispy, 5 to 8 minutes. Drain on paper towels; reserve most of the bacon fat in skillet.
  • Reduce heat to medium. Cook and stir onions until starting to soften, about 5 minutes. Add potatoes; toss to coat evenly in bacon fat. Pour in water and cover skillet with a large lid. Cook, checking occasionally, until potatoes are tender, about 20 minutes. Add green onions, garlic, and paprika. Season with salt and pepper.
  • Make 4 wells in the potato mixture using a wooden spoon, revealing the bottom of the skillet. Crack an egg into each well; season with salt and pepper. Sprinkle cooked bacon and Cheddar cheese over the entire skillet. Replace lid; cook until egg whites are set and yolks are still runny, about 5 minutes.

2 medium red potatoes or 1 large brown potato, peeled and cut into cubes
2 teaspoons olive oil
2 teaspoons cumin
fresh ground black pepper, to taste
1/2 cup green pepper, diced
1/2 cup onion, diced
1/2 cup mushroom, diced
1 roma tomato, diced
2 tablespoons cheddar cheese, shredded
2 eggs

Steps:

  • Preheat oven to 350°F.
  • Combine potato cubes with cumin and black pepper.
  • Drizzle olive oil over potatoes, and mix well.
  • Place on a baking pan and bake for 30 minutes, until browned and crispy.
  • When potatoes are about halfway through baking, spray a saucepan with nonstick cooking spray and saute the green pepper, onion, and mushrooms.
  • Remove from heat, add tomato, and set aside.
  • Prepare the eggs any way you like (I like them over-medium).
  • When potatoes are done, mix well with veggies.
  • Sprinkle with cheese.
  • Place eggs on top and enjoy!

1 (20 ounce) bag Simply Potatoes Diced Potatoes with Onion
1 large red pepper, chopped

Steps:

  • 1. To a large skillet, add Italian sausage and season with chili powder and cumin. Brown sausage over medium-high heat. Drain sausage and remove from skillet, keeping warm and reserving 2 tablespoons fat.
  • 2. Return skillet to heat and add Simply Potatoes Diced Potatoes with Onions and red pepper. Cook until potatoes are browned and peppers are softened.
  • 3. Return sausage to skillet and mix with potatoes and onions.

5-Ingredient Fix Contest Entry. You say you don't want to make a large, traditional St. Patrick's Day meal this year, but you still long for the great taste? Here is a "Simply" wonderful way to still experience the Holiday without the hassle. It makes a terrific brunch item. It is so quick and easy, and the best part is that you can make it for breakfast, lunch or dinner. I've made this dish for all 3 meals (but not in the same day, of course). *NOTE: You could also throw in some beaten eggs and shredded cheese for a super simple breakfast omelet, frittata or quiche (see photos) that the whole family would love. And if you did happen to make a full-blown corned beef and cabbage dinner, use the leftovers (following steps #4, #5 and #7) for a simple and quick meal. Endless possibilities with this recipe.

1 (20 ounce) package Simply Potatoes Diced Potatoes with Onion
4 cups prepackaged coleslaw mix (shredded, bagged)
1 (12 ounce) canned corned beef, diced (or 2 - 7 oz cans)
3 tablespoons vegetable oil (for frying)
1 teaspoon salt

Steps:

  • Pour the potatoes into a dutch oven or (large sauce pan) and fill with just enough cold water to cover the potatoes by 2". Add the salt to the water and stir.
  • Bring to a boil over medium high heat. When water begins to boil, turn the heat down and simmer the potatoes (covered, stirring occasionally) for approx 5-6 minutes.
  • Now add the shredded coleslaw mix to the pot, return to a simmer, and continue (covered, stirring occasionally) for another 6-8 minutes.
  • Meanwhile, dice up the can(s) of corned beef, (roughly the same size as the potatoes).
  • Place the vegetable oil in a large skillet.
  • Drain potato and coleslaw when they are cooked thru.
  • Heat oil in skillet over medium heat and add in the diced corned beef. Fry for approx 3 minutes, then toss in your potato and slaw mixture. Fry for approx 5 minutes (stirring occasionally) until meat and veggies are crisped to your liking. Season to taste. It's as simple as that. You have your meal without the time and work. You may also choose to add some beaten eggs and shredded cheese to this recipe and make it into a breakfast omelet, frittata or quiche (see photos). The possibilities are endless. Enjoy!

1 (20 ounce) bag Simply Potatoes Diced Potatoes with Onion
1 cup Italian sausage or 1 cup turkey sausage
3 eggs
2 tablespoons scallions
1/2 cup shredded extra-sharp cheddar cheese

Steps:

  • Lightly cover the bottom of a 12-inch non-stick skillet with vegetable oil. Heat vegetable oil over medium heat until hot.
  • Take Simply Potatoes DICED POTATOES Cook for 8 to 12 minutes. Skillet should remain covered while cooking. Add meat.
  • In a medium size bowl Mix Eggs, 1/4°C cheese and Scallions together.
  • Then seperating potato and meat mixture to one side of the pan pour in egg mixture keeping separate. Scramble eggs mixture and mix into potato and meat mixture. Season with salt and pepper. Top with remaining 1/4c. cheese. Cover for 1 minute and serve.
