MAKE-AHEAD BREAKFAST MUFFINS RECIPE

Steps:
- Combine hard-boiled eggs with all other ingredients, except for english muffins. Leave in sealed container in the fridge overnight.
- In the morning, heap egg mixture onto english muffin haves and broil in the oven for 4-6 minutes, just until the tops start to turn brown and cheese gets bubbly. Serve immediately.
- The egg mixture also makes a divine egg salad if you serve it cold!

My husband loves these, they are nice for a brunch with the girlfriends or a quick warm treat that can be reheated all morning!

Steps:
- Cut bread into 20 1/4-inch slices. Arrange slices on a baking stone.
- Cook Bacon and crumble.
- Chop onion, bell pepper, mushrooms & Sun Dried Tomatoes and put in small bowl. Add 1/8 c of cheese and bacon.
- In another bowl, crack eggs and add whipping cream and whisk. Spray Pam on frying pan and heat on medium for 1 minute.
- Add chopped ingredients to egg mixture and whisk again. Add to pan. Cook "making scrambled eggs".
- Divide egg mixture (after cooked) evenly among bread slices. Divide 2 cups of cheese evenly over the 20 pieces.
- Bake 15-18 minutes or until golden brown. Serve hot.

Steps:
- Thaw broccoli in microwave oven or at room temperature, drain well on paper towels.
- Place muffins on baking sheet, broil turning once, until lightly toasted.
- Remove and turn cut side up.
- Top each with slice of ham and tomato, top with broccoli.
- Sprinkle with cheese.
- Broil for 3 minutes or until cheese is melted and bubbly.
BREAKFAST MELT
Here's a wonderful, inexpensive breakfast that will stick to your ribs! This has something for everyone! It takes no time to fix and the whole family will love it! Note**I am terrible about not looking for sizes on foods,so I'm guestimating the amount of sausage. I just see the Jimmy Dean package of sausage and go! So you may have some leftover sausage, I believe, though it's either 1/2-3/4 lb.

Steps:
- Take sausage and form 4 large patties. Cook sausage and put aside.
- Crack eggs into skillet, make sure to break the yolks. Cook and then put aside.
- Butter one side of each slice of bread. Put a slice of bread in skillet, butter down, then place the ingredients as follows: cheese, sausage, egg, cheese and the other slice of bread, buttered side up. Cook and flip and cook until cheese is melted.

BREAKFAST GRILLED CHEESE MELT

Steps:
- Preheat a griddle or skillet to medium low heat.
- Take two slices of bread and spread 1/2 Tablespoon of the Chipotle Aioli Mayo on each piece.
- Place two pieces (or one, depending on how big your sour dough bread slices are) of provolone cheese, and pepper jack cheese, and place two slices, on each piece of sauced bread.
- Place a scoop of scrambled eggs and two slices of bacon on one of the slices. Top with green bell pepper and salt and pepper.
- Place your other slice of bread with cheese on sauce, on top, completing the sandwich.
- Spray your griddle or skillet with a butter or oil based spray, and place your sandwich on top.
- Grill each side for about 2-3 minutes, or until golden brown and the cheese begins to melt.
- Flip and do the same on the other side.
- Remove from the heat, once both sides are cooked, cut into triangles, and dig in.
