Number Of Ingredients 11

6 eggs
1/4 cup fat free shredded cheddar
4 turkey sausages (chopped up)
1/2 red onion
1/4 cup cherry tomatoes (sliced in half)
1/4 cup mushrooms
1/2 bell pepper
1/2 tsp pepper
1/2 tsp garlic salt
1/2 tsp oregano
red pepper flakes to taste

Steps:

  • Crack 6 eggs into a bowl and stir (like you're making scrambled eggs).
  • Add all other ingredients.
  • Transfer to casserole dish.
  • Bake at 350* for about 35 minutes or until eggs are cooked through.

This easy brekafast casserole is made in the Instnat Pot. It's the perfect Weight Watchers brekfast casserole becuase it's low in points, flavorful, and keeps you full and focused all morning long!

6 eggs
6 pieces center cut bacon, cooked and crumbled
1 cup fat-free cheddar cheese, shredded
1/2 red onion, diced
1/2 bell peppers, diced
1 teaspoon salt
1 teaspoon black pepper
1/2 teaspoon garlic powder
1 cup water

Steps:

  • In a large bowl, whisk together eggs, salt, black pepper, and garlic powder until well combined.
  • Mix in bacon, cheese, onion, and peppers until well covered.
  • Pour into already sprayed casserole dish (I use a small ceramic dish that is safe for oven use)
  • Pour 1 cup water into the bottom of the Instant Pot liner
  • Create an aluminum foil sling, or use a trivet in the bottom of the liner. Place bowl into the Instant Pot.
  • Place lid on Instant Pot and set to seal.
  • Choose the manual setting and set to 13 minutes.
  • When cooking cycle has completed, allow to NPR (natural pressure release) for 2 minutes. Release remaining pressure and using silicone mitts remove the bowl from the Instant Pot liner.
  • Serve.

I believe I found this recipe on Boot Camp Buddies, but I don't really remember. This recipe is 5 points per serving. This needs to sit in the refrigerator overnight before baking - time is not included in preparation time.

2 cups frozen hash browns (diced)
1 cup reduced-fat sharp cheddar cheese, shredded
8 ounces lean ham
1/3 cup onion, chopped
1/3 cup green pepper, chopped
2 cups egg substitute

Steps:

  • Spray a 9x9-inch baking dish with cooking spray.
  • Layer first five ingredients.
  • Beat egg substitute and season with salt and pepper.
  • Pour over layered ingredients.
  • Cover and let stand overnight in the refrigerator.
  • Bake at 350 degrees (put into a cold oven directly from the refrigerator) for 60 minutes until center is firm.

3/4 cup shredded low-fat cheddar cheese
3 ounces Canadian bacon, chopped
1/2 cup green onion, sliced
4 whole eggs, beaten
12 ounces evaporated nonfat milk
salt & pepper

Steps:

  • Preheat oven to 350°F.
  • Spray a 8x8-inch pan with nonstick cooking spray.
  • Arrange potatoes at the bottom of the dish.
  • Sprinkle with cheese, Canadian bacon and green onions.
  • In large mixing bowl, combine eggs, milk, salt & pepper; pour over potato mixture in dish.
  • Bake uncovered in a 350°F oven for 40 minutes or until center appears set.
  • Let stand 5 minutes before cutting.
