BREAD MACHINE BREADSTICKS (SOFT & CHEWY)

Steps:
- Place the water, olive oil and then the rest of the ingredients into the bread pan. You can make a little indent on top of the flour in order to avoid the yeast falling into the water (until the machine starts). Do not combine the salt with the yeast (as the salt can kill the yeast). Place the yeast & salt in separate parts of the bread pan.
- Place the bread pan (with ingredients) into your unplugged bread machine and then plug in the machine.
- Put your machine on the Dough setting and press the start button. In our Sunbeam bread machine, the kneading & rising on the dough setting takes about approximately 1:30 hours.
- When your bread machine has finished, unplug the machine & pour the dough onto a cutting board. Wear oven mitts when handling the bread pan as it may be hot. However, first sprinkle some flour on the cutting board (before you pour the dough) in order to help prevent the dough from sticking to the cutting board.
- Preheat oven to 400 degrees F.
- Shape the breadstick dough by either cutting into thin strips or rolling into thin tubes. See the tips section below for more information on how to shape your breadsticks.
- Place the dough breadsticks onto a nonstick baking sheet. Cover them loosely with plastic wrap, wet thin towel, etc. to keep dust off & to prevent the dough from drying out. Let the dough rise for 30 minutes on the baking sheet. The dough should roughly double in width during this time.
- After the dough has risen and before you put the baking sheet in the oven, use a small pastry bush to coat the top of each dough breadstick with a thin layer of olive oil. Then sprinkle some large salt crystals (i.e. sea salt or coarse kosher salt) on top of each dough breadstick.
- Place the baking sheet in the oven for 12-15 minutes.
- Remove from the oven when finished and let the breadsticks cool for 1 or 2 minutes on a cooling rack.
- For best results, serve & eat while the breadsticks are still slightly warm.

Steps:
- Add ingredients into your bread machine in the order given, excluding the egg white and water (glaze ingredients).
- Start machine on dough cycle.
- When the dough is ready turn out onto your countertop. You shouldn't need much flour.
- Cut dough into pieces the size of an egg and roll and stretch with your hands into 6 to 8 inch ropes. Place on an ungreased baking sheet.
- Cover with a tea towel and let rise 20 minutes.
- Mix the egg white and Tbsp water to make a glaze and brush over the breadsticks after they are risen. Add kosher salt, sesame seeds, or other toppings if you like.
- Bake at 400 degrees for 12 to 15 minutes until golden brown.
- Time includes the 2 hour dough cycle.
BREAD MACHINE BREADSTICKS

- Add the wet and dry ingredients in the bread machine pan in the order recommended by your bread machine manufacturer.
- Close the lid and start the "Dough" cycle.
- Once "Dough" cycle completes, remove the dough on a lightly floured surface and knead for a few seconds.
- Roll the dough into about a 12 by 12 inch square.
- Cut it into 16 strips using a pizza cutter.
- Lift each strip and pinch it along the length from the bottom side and then roll with your palms into a smooth and even stick.
- Arrange all the rolled dough sticks in a baking tray about an inch apart.
- Cover the tray with another tray or plastic wrap and place in a warm place to rise.
- After about 60 minutes the dough sticks will be double in volume and done through their second rise.
- Preheat the oven to 350 °F with the rack at the middle level.
- Bake the breadsticks (uncovered) in the preheated oven at 350 °F for about 15-18 minutes or until they turn golden brown.
- Remove the tray from the oven.
- Melt the butter and mix the 'topping ingredients'*
- Apply the topping mixture with the help of a basting brush.

BREADSTICKS FOR DIPS (BREAD MACHINE)
My family loves dips - hot, cold - doesn't matter. I came up with this breadstick recipe especially for that reason. We especially like to use these for dipping in hummus. I add about 1 tsp. cumin and 1/4-1/2 tsp. seseme oil when making them for hummus to mimic the flavors in the dip. I brush mine with olive oil and sprinkle seseme seeds on top as well. Play with adding seasoning as this is a pretty fail-proof recipe. Hope you enjoy.

- Preheat the oven to 450 degrees F (230 degrees C). Line baking pans with parchment paper.
- Dissolve yeast and honey in warm water in the bowl of a stand mixer. Let sit until creamy, about 10 minutes.
- Stir flour, Parmesan cheese, olive oil, 1 teaspoon Italian seasoning, and salt into the yeast mixture. Beat until smooth and the dough pulls away from the sides of the bowl. Let rest, about 5 minutes.
- Turn dough onto a lightly floured surface and pinch off about 3 tablespoons. Roll into a log shape. Place on the prepared baking sheet. Repeat with remaining dough.
- Bake in the preheated oven until just golden brown, 13 to 15 minutes.
- While breadsticks are baking, mix butter, garlic salt, and remaining Italian seasoning together.
- Brush butter mixture onto the breadsticks and continue to bake until golden brown, about 3 minutes more.

Steps:
- Dissolve 1 1/2 teaspoons sugar and yeast in 1/2 cup warm water in a bowl. Let stand until yeast softens and begins to form a creamy foam, about 5 minutes.
- Beat flour, oil, egg, salt, remaining sugar, and remaining warm water into yeast mixture until smooth, adding more flour if needed to form a soft dough. Turn dough onto a floured work surface; knead until smooth and elastic, 6 to 8 minutes.
- Place dough in a greased bowl, turning once to cover completely with oil. Cover bowl with a damp towel and place in a warm area until dough is doubled in size, about 40 minutes.
- Grease a baking sheet.
- Punch dough down and turn onto a floured work surface. Divide dough into 18 pieces and shape each into a 6-inch rope. Arrange dough pieces on the prepared baking sheet about 2 inches apart; cover with a towel or plastic wrap and let rise until doubled in size, about 25 minutes.
- Preheat oven to 400 degrees F (200 degrees C). Remove cover from dough.
- Bake in the preheated oven until golden brown, 10 to 12 minutes.
- Whisk butter and garlic salt together in a bowl; brush over each breadstick. Sprinkle Parmesan cheese over each.
