1 cup dry bread crumbs
¼ cup grated Parmesan cheese
2 teaspoons Italian-style seasoning
1 cup milk
1 pound skinless, boneless turkey breast meat - cut into strips
¼ cup olive oil

Steps:

  • In shallow bowl, combine bread crumbs, Parmesan cheese and Italian seasoning. Pour milk into another shallow bowl. Dip turkey in milk, then in crumb mixture.
  • Heat olive oil in a large skillet over medium heat. Cook turkey for 8 to 10 minutes or until golden brown, and juices run clear.

I came up with this thinking of a different way to serve the turkey breast. The sour cream seals in the moisture and no one would ever guess that it's in there. A great new way to try turkey. This is my husband's new favorite turkey dish.

1 cup Italian seasoned dry bread crumbs
¼ cup grated Parmesan cheese
4 turkey breast cutlets, 1/4 inch thick
½ cup fat free sour cream
1 tablespoon extra virgin olive oil

Steps:

  • Mix the bread crumbs and cheese in a shallow dish. Spread both sides of turkey with sour cream and press into the bread crumb mixture to coat.
  • Heat the oil in a skillet over medium heat. Place turkey in the skillet and cook 5 to 7 minutes on each side, until lightly browned and cooked through.

1 package (17.6 ounces) turkey breast cutlets
1/4 cup all-purpose flour
1/8 teaspoon salt
1/8 teaspoon pepper
1 large egg
2 tablespoons water
1 cup soft bread crumbs
1/2 cup grated Parmesan cheese
1/4 cup butter, cubed
Minced fresh parsley

Steps:

  • Flatten turkey to 1/4-in. thickness. In a shallow bowl, combine the flour, salt and pepper. In another bowl, beat egg and water. In a third shallow bowl, combine bread crumbs and cheese. , Dredge turkey in flour mixture, then dip in egg mixture and coat with crumbs. Let stand for 5 minutes. , Melt butter in a large skillet over medium-high heat; cook turkey for 2-3 minutes on each side or until meat is no longer pink and coating is golden brown. Sprinkle with parsley.

Sliced Turkey Breasts With Herbs image

8 sliced turkey breast tenderloin steaks, about 1 1/2 pounds total
Salt and freshly ground pepper to taste
2 tablespoons olive oil
2 tablespoons butter
4 whole garlic cloves unpeeled
1 large bay leaf
4 sprigs fresh thyme or 1 teaspoon dried
1/3 cup dry white wine
1/3 cup fresh chicken broth or canned
2 tablespoons finely chopped parsley

Steps:

  • Place each turkey breast steak between sheets of clear plastic wrap and pound lightly and evenly with a meat pounder or flat mallet to make the slices about 1/4-inch thick.
  • Sprinkle the sliced turkey with salt and pepper.
  • Heat the olive oil and 1 tablespoon of the butter in a skillet large enough to hold the turkey in one layer, or use two smaller pans. Add the sliced turkey and the garlic, bay leaf and thyme. Cook over medium-high heat for about 5 minutes, turning the pieces until lightly browned on both sides. Do not overcook.
  • Remove the turkey slices to a warm platter. Leave the garlic, bay leaf and thyme in the pan. Add the wine to the skillet and cook over high heat, stirring to dissolve the brown particles that cling to the bottom and sides of the skillet. Cook until it is reduced by half. Add the chicken broth and boil briskly until reduced by half.
  • Swirl in the remaining butter and the parsley. Add the turkey slices and any juices that have accumulated around it, and reheat the turkey through. Remove bay leaf, and serve with the garlic cloves and the sauce.

2 eggs
1 cup Italian style breadcrumbs
2 tablespoons olive oil
2 tablespoons butter or 2 tablespoons margarine
lemon wedge

Steps:

  • Season turkey with salt and pepper. Mix eggs in a shallow dish. Place bread crumbs in another shallow dish.
  • Dip both sides of turkey in egg and then into crumbs.
  • Heat 2 tablespoons oil and 2 tablespoons butter in a large skillet over medium high heat. Add slices, not crowding, and cook until golden brown on bottom, about 3-5 minutes.Turn and cook other side until golden, about 2 minutes.
  • Remove to plate and repeat with remaining slices, adding more butter and oil as needed. Serve with lemon.
