SPINACH BACON QUICHE

- Prep: Place a lined baking sheet in the oven and preheat it to 410°F. Lightly grease a deep dish 9 inch pie plate and fit the crust inside. Prick the bottom of the pastry with a fork a few times. Place in the fridge until ready to use.
- Cook filling: Cook the bacon in a large frying pan until browned. Add the onion and cook until softened, then add the spinach and cook until wilted and excess moisture has evaporated. (Gently pat dry with paper towels if your spinach released a lot of water and still feels very wet.)
- Make egg mix: Whisk together eggs, milk, flour, salt, nutmeg and pepper in a medium mixing bowl.
- Assemble: Place the spinach mix into the prepared crust. Sprinkle with the cheese. Pour the egg mix over it.
- Bake: Reduce oven temperature to 375F. Bake for 45-50 minutes or until the middle is set. If the top gets too brown, loosely cover with a piece of foil. Let stand for 10 minutes before slicing into wedges to serve.

A friend of mine made this, and I just had to have the recipe. And it is the best tasting quiche I have had in years. Never any complaints when I make it. Great for a fall/winter dinner with a cup of soup.

- Preheat the oven to 375 degrees F (190 degrees C).
- Place the bacon in a large, deep skillet, and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Drain the bacon slices on a paper towel-lined plate. Chop when cool.
- Fit the pie crust into a 9-inch pie dish, and set aside.
- In a bowl, whisk together the eggs, cream, salt, black pepper, Worcestershire sauce, and hot pepper sauce. Spread the spinach into the bottom of the pie crust; top with bacon, Cheddar cheese, and green onion. Pour the egg mixture over the filling, and sprinkle the quiche with Parmesan cheese.
- Bake in the preheated oven until the top is lightly puffed and browned, and a knife inserted into the center of the quiche comes out clean, 35 to 45 minutes.

- Preheat the oven to 375 degrees F.
- Combine the eggs, cream, salt, and pepper in a food processor or blender.
- Layer the spinach, bacon, and cheese in the bottom of the pie crust, then pour the egg mixture on top.

SPINACH BACON QUICHE
This ULTRA CREAMY Quiche is packed with flavor from the layers of bacon, spinach and cheese. This is not only delicious, but beautiful and makes a great breakfast, brunch or lunch.

- Pre-bake the pie crust: Heat the oven to 400˚F. Place parchment in the crust and fill it with dried beans. Bake for 12-15 minutes or until golden brown. Remove from oven and allow to cool to room temperature.Reduce oven temperature to 350˚F.Note: do not poke holes in the crust. This can allow the egg to leak through if the holes do not completely close during baking. Weighting the crust with beans should prevent the crust from bubbling up and so the holes are not needed.
- Make the custard: In a medium bowl, add the eggs, heavy cream, milk, salt and pepper. Beat with a hand mixer until completely combined.
- Roughly chop the spinach, then place half of it in the bottom of the pie crust. Layer half of the bacon and half of the cheese on top of the spinach, then repeat with the remaining spinach, bacon, and cheese.
- Pour the egg mixture over the quiche. Place the quiche on a baking sheet and bake for 45-55 minutes or until the center is just set.
- Let sit for 20 minutes and serve warm to room temperature. Enjoy!

HEARTY BACON-SPINACH QUICHE
This does not call for heavy cream like many other quiche recipes I've found. The original recipe is from www.marthastewart.com, which I've altered. I use 6 eggs, not 4 eggs as the recipe calls for. The cheeses I used instead of 1 cup cheddar: Norvegia (Norwegian mild white cheese), mozarella and parmesan. It also calls for 2 tablespoons chopped onion, but I substitute dried chives, powdered onion, and powdered garlic. We had it for dinner , but it would make a great brunch.

SAVORY SPINACH & BROCCOLI QUICHE
I make this recipe all the time for brunch. My family absolutely loves it! It's savory and simple to make. Notes: I like to use the Cabot brand extra sharp cheddar. Cabot Cheddar can be purchased at the specialty cheese section in most grocery stores. You can also buy it at Whole Foods & Trader Joes.

Steps:
- Preheat oven to 350°F.
- Steam chopped broccoli until tender and set aside.
- Melt butter in saute pan and add onion and garlic. Add salt and pepper then set aside.
- Beat eggs into a large mixing bowl. Add the onion & garlic mixture, then cheese, broccoli and spinach. Mix well with spoon.
- Pour mixture into a 9 inch pie dish with prepared pie crust and bake in oven for 35 minute
- Notes: Use a toothpick to check the middle of quiche after the set time. If it comes out wet, bake for another 3-5 minute.
