BREAD MACHINE PIZZA DOUGH
This bread machine pizza dough will make pizza night your favorite meal of the week! Perfectly crispy, chewy, yet pillowy soft this homemade pizza dough beats anything you'll ever get at the store. Plus, it's super simple!

- Add all ingredients to the bread machine's baking pan in the order listed (4 cups flour, 1 3/4 cups water, 1 tbsp salt, 1 tbsp sugar, 1 tbsp dried active yeast, 4 tbsp oil). Close the lid and turn the bread maker to the "leavened dough" cycle which typically runs for 1 hour 30 minutes. After about 20 minutes of the cycle check on the dough to make sure that all flour is incorporated and you have a smooth soft ball. If the dough looks too runny, add a little more flour, one table spoon at a time, until the dough comes into a soft ball. Do not add too much flour or the pizza will be doughy and dense.
- Preheat oven: Meanwhile, place the baking rack in the top 1/3rd of the oven, then put the baking stone or steel on top. Preheat the oven to 550F or as high as your oven will allow for 1 hour before baking.
- Divide and Shape balls: Once the dough cycle is complete turn the dough out onto floured surface and divide into 4 equal pieces, use a kitchen scale if you prefer to be precise.Shape each piece into a taught ball. To do so, flatten the ball into a patty, then fold it in half, then in half again. Continue folding in half until it is too hard to fold it in half again. Now tuck all ends under until you have a smooth, taught ball. Set aside, smooth side up to rest on floured surface for about 15 - 20 minutes, spacing them about 4 inches. Lightly sprinkle with flour and cover with a tea towel to prevent a crust from forming. (See Note 1)
- Prepare the toppings: depending on your preference prepare the toppings & sauce for the pizza.
- Stretch: flour your work surface well, then add 1 dough ball while keeping the remainder of the pizza balls covered. Now, gently press in the middle of the pizza with the flat part of your fingers working around a circle from the inside towards the outer edges to stretch the ball into a 10" - 12" without deflating 1 inch of the outer edge. Tip: Avoid using a rolling pin to roll the pizza dough, while a simpler and quicker method this will deflate the dough, and the pizza will not be as airy and light as it would be if you stretch the pizza.Transfer the pizza dough onto parchment paper (my preferred method), pizza pan (I use this one, but you can use any) or a wooden or metal pizza peel generously sprinkled with semolina.
- Add toppings: add about 1/4 cup of pizza sauce and spread it around evenly, staying off the edges. Then add about 1 1/3 cups of grated mozzarella cheese (full fat) followed by toppings of choice. If using a wooden pizza peel to transfer the pizza make sure to shake the pizza on the peel back and forth every so often as you're adding toppings to make sure the pizza does not stick to the pizza peel.
- Bake: slide the pizza onto the hot stone/steel and bake for about 7 minutes per pizza, or until the edges of the pizza are well browned and the cheese in the middle bubbles, keeping a close eye to make sure that it does not burn. Note the bake time and set the timer for the second pizza for that time. Using a timer is very helpful at preventing the pizza from burning.If baking inside a pizza pan with no pizza stone/steel bake for about 13 minutes or until the edges are well browned and the cheese is bubbly in the middle.
- Remove from the oven: my favorite way to get the pizza out of the oven is to use a metal pizza peel, it slides under the parchment or pizza easily and is easy to clean and maintain.Transfer to a wooden board, cut into wedges and serve immediately.

- Add crust ingredients (in the order listed) to the bread pan of your bread machine. Process according the manufacturer's instructions for the dough setting. (Don't be afraid to open the lid to check on it. The dough should come together to a nice, soft and slightly tacky ball after a little knead time. If the dough looks too moist, add more flour a teaspoon at a time. If it looks too dry, add warm water a bit at a time.)
- When the dough is done, remove it from the bread machine.
- Mix all ingredients well with a dough hook for 5-7 minutes, until a nice elastic ball forms. Cover and place in a warm place to rise until doubled (1 hour). Punch the dough down to deflate it and then let it rise, covered, a second time, until you are ready to make your pizza.
- Preheat oven to 375F. Generously dust your pizza stone with cornmeal (or grease your pizza pan.
- Roll out into a 14 inch circle. Place dough on your baking stone, prick the dough with a fork so that it doesn't bubble and brush lightly with olive oil. Cover and let rise 20 min.
- Place in the oven and par-bake for 4- 5 minutes.
- Remove from oven. Add sauce and toppings.
- Bake for 10-15 minutes, until cheese is melted and crust is golden.

- In a large bowl, dissolve sugar in warm water. Sprinkle yeast over the top, and let stand for about 10 minutes, until foamy.
- Stir the olive oil and salt into the yeast mixture, then mix in the whole wheat flour and 1 cup of the all-purpose flour until dough starts to come together. Tip dough out onto a surface floured with the remaining all-purpose flour, and knead until all of the flour has been absorbed, and the ball of dough becomes smooth, about 10 minutes. Place dough in an oiled bowl, and turn to coat the surface. Cover loosely with a towel, and let stand in a warm place until doubled in size, about 1 hour.
- When the dough is doubled, tip the dough out onto a lightly floured surface, and divide into 2 pieces for 2 thin crust, or leave whole to make one thick crust. Form into a tight ball. Let rise for about 45 minutes, until doubled.
- Preheat the oven to 425 degrees F (220 degrees C). Roll a ball of dough with a rolling pin until it will not stretch any further. Then, drape it over both of your fists, and gently pull the edges outward, while rotating the crust. When the circle has reached the desired size, place on a well oiled pizza pan. Top pizza with your favorite toppings, such as sauce, cheese, meats, or vegetables.
- Bake for 16 to 20 minutes (depending on thickness) in the preheated oven, until the crust is crisp and golden at the edges, and cheese is melted on the top.

- 1. Place all ingredients in bread machine in order listed. Start dough cycle.
- 2. When cycle is done, add a few tablespoons of olive oil to a glass bowl. Remove dough to bowl and turn to coat.
- 3. If using immediately, stretch out onto your pan or stone with oiled hands to desired level of thickness. Let dough rest for 15 minutes.
- 4. Poke several holes throughout the surface with a fork. Top as desired and bake in a 400 degree oven for 18-20 minutes. If a crispier crust is desired, bake crust by itself for 5 minutes. Remove and add toppings and then bake for the remaining time.
- 5. If all or part of the dough is going to be used within the next 24-36 hours, leave in bowl making sure dough is coated with oil. Cover bowl with plastic wrap and refrigerate. Let dough return to room temperature before using, approximately 15-20 minutes.
- 6. If dough is to be frozen, wrap tightly in plastic wrap. If possible, vacuum seal, otherwise wrap plastic wrapped dough in foil and place in freezer. Dough will need to thaw 4-6 hours before use.
BREAD MACHINE PIZZA DOUGH WHITE WHOLE WHEAT
The original recipe that was given to me called for all white whole wheat flour. I found that to be too heavy and switched out 1 1/2 cups with bread flour. The result is a delicious dough that yields a thin-medium just a little bit chewy crust. Freezes very well, too.

- Add water to bread machine.
- Add 1/4 cup olive oil.
- Add bread flour and one cup of the white whole wheat flour.
- Sprinkle garlic powder and italian herbs over top of flour in bread machine.
- Add remaining white whole wheat flour.
- Run bread machine on dough setting.
- When dough is finished, removed to a floured board. Cut into six pieces and shape each piece into a ball. Coat each ball with olive oil and slip into a sandwich bag.
- Let dough rest in the refrigerator overnight or at least 12 hours.
- When you are ready to make pizza, remove desired amount of dough from refrigerator and let sit for one hour. Keep covered with a damp cloth to prevent drying out.
- Stretch dough out very thin before topping as you wish.
BREAD MACHINE WHOLE WHEAT PIZZA DOUGH
Steps:
- Unplug your bread machine and remove the bread pan.
- Place the water, olive oil and then the rest of the ingredients into the bread pan. You can make a little indent on top of the flour in order to avoid the yeast falling into the water (until the machine starts). Do not combine the salt with the yeast (as the salt can kill the yeast). Place the yeast & salt in separate parts of the bread pan.
- Place the bread pan (with ingredients) into the bread machine and then plug in the machine.
- Put your machine on the Dough setting and press the start button. In our Sunbeam bread machine, the kneading & rising on the dough setting takes about approximately 1:30 hours.
- When your bread machine has finished, unplug the machine & pour the dough onto a cutting board. Wear oven mitts (as the bread pan/bread machine may be hot). Sprinkle some flour on the cutting board (before you pour the dough) in order to avoid the dough sticking to the cutting board.
- Preheat oven to 400 degrees.
- Shape the pizza dough into a round pizza shape. Don't press down on the edges of the pizza. You want a little rim around the pizza. The higher edges will help to contain the sauce and cheese as the pizza bakes.
- The pizza dough can be used to create one large pizza or two small/medium pizzas.
- Please read the tips section for extra information on how to make this dough successfully.
- Place the pizza-shaped dough on a non-stick baking sheet or pizza pan.
- Spread a thin layer of tomato sauce (or pizza sauce) on the pizza dough.
- Sprinkle on a layer of shredded cheese (i.e. Mozzarella cheese).
- Optional - Add some already cooked toppings (i.e. fried sausages or fried vegetables). These toppings should be pre-cooked because the pizza baking process may not cook them properly or safely.
- Bake pizza in the oven at 400 degrees for 18-22 minutes or until crust is golden brown. Baking time will vary due to the amount & variety of toppings and size & depth of the pizza dough. Check the pizza frequently after 15 minutes to ensure that it has been baked to perfection!
- Wear oven mitts to remove pizza from the oven.
- Place finished pizza on cutting board and cut into pizza slices. Enjoy!
