Quick and easy pico de gallo that is a great app or addition to dinner. Huge hit in my house!

6 roma (plum) tomatoes, diced
½ red onion, minced
3 tablespoons chopped fresh cilantro
½ jalapeno pepper, seeded and minced
½ lime, juiced
1 clove garlic, minced
1 pinch garlic powder
1 pinch ground cumin, or to taste
salt and ground black pepper to taste

Steps:

  • Stir the tomatoes, onion, cilantro, jalapeno pepper, lime juice, garlic, garlic powder, cumin, salt, and pepper together in a bowl. Refrigerate at least 3 hours before serving.

This can be used over meat, fish or chicken but I absolutely LOVE to drizzle a little over white rice. It's great over salad too.

1 cup green bell pepper
1 cup red bell pepper
1/2 cup onion
1 cup tomatoes
1/4 cup white wine vinegar
2 tablespoons olive oil

Steps:

  • Dice peppers, onions, and tomatoes.
  • Mix all of the ingredients in a bowl.
  • Let mixture sit for a while to bring out the flavors. (I prefer the vinaigrette a little on the colder side so I refrigerate it).
  • ** Side note: If you're going to add salt do it just before serving (salt will cause the tomatoes to dehydrate.) Enjoy!

Note: all diced ingredients = ¼ inch
1 cup of diced green and red bell peppers.
½ cup diced onions
1 cup diced ripe tomatoes.
¼ cup white wine vinegar.
2 tbs of olive oil

Steps:

  • In a bowl, mix green and red peppers, onions, tomatoes, vinegar and olive oil. Hint: add salt to the salsa right before serving it. Salt dehydrates the tomatoes in the mixture if let for long time.

  • Combine all the ingredients in a large bowl.
  • Stir well and serve either at room temperature or cold.
  • Flavors intensify upon standing.
