BARON'S BLACKBERRY COBBLER

Easy blackberry cobbler. My father-in-law grows huge blackberries and always has tons. I tried a number of recipes and none really hit the spot. So created this one and it worked so well that my fiance said it was the best she had ever had. Serve warm with heavy or whipped cream.

½ cup white sugar
2 tablespoons cornstarch
6 cups fresh blackberries
¼ cup melted butter
2 ½ cups all-purpose flour
1 ½ cups white sugar
1 tablespoon baking powder
1 teaspoon salt
2 cups milk
1 tablespoon vanilla extract
¼ cup melted butter

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Lightly oil a 9x13-inch baking dish. Whisk 1/2 cup sugar with the cornstarch in a small bowl; set aside.
  • Place the blackberries into a mixing bowl, and drizzle with 1/4 cup of melted butter. Sprinkle with the cornstarch mixture, and toss to evenly coat. Spread the berries into the prepared baking dish. In a separate bowl, whisk together the flour, 1 1/2 cup sugar, baking powder, and salt until evenly blended. Stir in the milk, vanilla extract, and 1/4 cup melted butter until combined but still slightly lumpy. Pour the batter over the berries.
  • Bake in the preheated oven until the berries are tender and the crust is golden brown, 55 minutes to an hour.

This is the easiest dessert to make. If you pop it in the oven before you serve your meal, you will have a hot cobbler to plop a scoop of vanilla ice cream on for dessert.

2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon salt
1 cup white sugar
⅓ cup softened butter
1 cup milk
2 cups fresh blackberries
1 cup white sugar
2 cups boiling water

Steps:

  • Preheat an oven to 350 degrees F (175 degrees C). Whisk the flour, baking powder, and salt together in a mixing bowl.
  • Cream 1 cup of sugar with the softened butter until light and fluffy. Mix in the flour mixture alternately with the milk until no large lumps remain. Pour into a 9x13-inch baking dish. Arrange the berries over the batter, and sprinkle with the remaining 1 cup of sugar. Pour the boiling water over top.
  • Bake in the preheated oven until the batter has firmed and the berries are soft, about 50 minutes.

3 cups fresh or frozen blackberries
1 cup sugar
1/4 teaspoon ground cinnamon
3 tablespoons cornstarch
1 cup cold water
1 tablespoon butter
BISCUIT TOPPING:
1-1/2 cups all-purpose flour
1 tablespoon sugar
1-1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 cup cold butter, cubed
1/2 cup 2% milk
Whipped topping or vanilla ice cream, optional

Steps:

  • In a large saucepan, combine the blackberries, sugar and cinnamon. Cook and stir until mixture comes to a boil. Combine cornstarch and water until smooth; stir into fruit mixture. Bring to a boil; cook and stir for 2 minutes or until thickened. Pour into a greased 8-in. square baking dish. Dot with butter., For topping, in a small bowl, combine the flour, sugar, baking powder and salt. Cut in butter until mixture resembles coarse crumbs. Stir in milk just until moistened. Drop by tablespoonfuls onto hot berry mixture., Bake, uncovered, at 350° for 30-35 minutes or until filling is bubbly and topping is golden brown. Serve warm, with whipped topping or ice cream if desired.

1 cup all-purpose flour
½ teaspoon salt
½ cup butter at room temperature
3 tablespoons ice water
4 cups blackberries
1 ¼ cups white sugar
6 tablespoons all-purpose flour
¾ cup water
½ cup cold butter, diced

Steps:

  • Preheat an oven to 400 degrees F (200 degrees C).
  • Whisk 1 cup of flour with the salt in a mixing bowl. Mix in the softened butter until the mixture resembles cornmeal. Stir in the ice water until a dough forms. Refrigerate until ready to use.
  • Place the berries in a mixing bowl, and sprinkle with 1 1/4 cups sugar and 6 tablespoons of flour. Stir in the water until moistened, and scrape into a 2-quart baking dish. Roll the dough on a floured work surface to 1/4-inch thick, and cut into 3/4-inch strips. Place onto the berries in a crisscross pattern. Scatter the diced butter over top.
  • Bake in the preheated oven until the berries are tender and the crust is golden brown, about 30 minutes.
