BRANDY BAKED APPLES
This is a slight adaptation of a wonderful recipe from the chef Simon Rimmer. Baked apples are a lovely desert in the chilly weather, but the addition of exotic fruit and brandy lends them a bit of summer! Quantities are for 2 and prep time does not include soaking the fruit.

Steps:
- Soak the dried fruit in the brandy (or rum if you're using that) overnight.
- Preheat oven to 300°F and core the cooking apples, leaving them whole and unpeeled.
- Mix the sugar, butter and allspice in to the fruit and brandy mixture then stuff the cavity of the apples with it.
- Put the apples in a dish, cover with foil and bake for 40 minutes, then remove the foil and bake for a further 10 minutes or until apples are soft.
- Serve with heavy cream or ice cream.

- Combine sugar and water in a large saucepan. Bring to a boil; cook and stir until sugar is dissolved. Remove from the heat., Place apples in a large glass or plastic container; add the sugar mixture, brandy, cloves and cinnamon stick. Cover and let stand at room temperature for at least two weeks, stirring once a week., Strain brandy mixture; discard apples and spices. Pour into glass bottles. Place an additional three cloves and one cinnamon stick in each bottle.

WORLDS BEST SWEET BAKED APPLES
This recipe is used every holiday for my family and it is tried and true. It makes all 20-30 people happy every year. Its a very sweet baked apple recipe that compliments ham and pork dishes very well. If you are going to use it for a large group just multiply the ingredients times howmany aples you use. It will work out just fine.

Steps:
- Preheat the oven to 350 degrees.
- Fill a large bowl full of cold water and put 1 1/2 tbsp of lemon juice in the water.
- Cut the apples in half and remove the cores leaving a medium sized pocket in the apple halfs. Place the apples in the water, preferably with the white sides down.
- Mix the sugar and powdered ingredients in a mixing bowl.
- Combine the walnuts with the coconut in a seperate bowl.
- Add the 2 tsp of lemon juice to the apple juice in another seperate cup.
- Put the butter in a small pot and put on medium-low heat and melt.
- Once melted add the powdered ingredients and stir well on low heat slowly simmering it. Keep an eye on it so it doesnt burn.
- At this point remove the apples from the water. Pat them dry and place them in a semi deep baking tray.
- The butter mixture should now start to thicken. At this point slowly add a little of the apple juice/lemon juice mixture. Let it thicken and add more. Continue like this till you combine all the juice to the butter powder mixture.
- Now add the walnuts and coconut mix and stir all together well. Remove from heat.
- Now fill each apple with equal amounts of the golden raisins.
- At this point take the mix and spoon an equal amount into each apple half filling the pockets till all the mixture is used.
- Now lightly sprinkle the oatmeal over the tops of all the apples.
- Now lightly drizzle the honey and the maple syrup over the apples and lightly sprinkle some brown sugar over the apples.
- Now bake the apples for approximetly 35- 40 minutes or until the mixture begins to turn crispy.
- Keep an eye on the apples and baste them occasionally with the 1 cup of apple juice to keep them moist and from drying out.
- The cook time depends on the chefs preference (softer apples, stiffer apples).

BAKED APPLES IN BUTTER BRANDY SAUCE

- 1. Preheat the oven to 400 degrees F
- 2. Place apples in a shallow baking dish. Mix together all spices & brown sugar. Pack the mixture into the cores of the apples, piling left over mixture on top of apples. Place 1 Tbl. of butter on top of each apple. Pour the brandy into the dish, drizzling a little over the tops of the apples. Cover the dish with aluminum foil.
- 3. Bake for 1 hour or until apples can be sliced with a spoon. Serve in a bowl with ice cream and some of the sauce spooned over it.
BRANDY OR JACK DANIELS BAKED APPLES
This makes a quick easy dish that adults can enjoy. Choose sweet apples and use good booze, it makes a difference. When finished if not souced , you will love this!

- Core six apples and place in oven proof glass container. Try to find one that is slightly bigger than the apples. Mix together remaining stuff then spoon it down each apple hole. Cover with foil .Put in a pre-heated 350 degree oven and bake for 45 minutes to an hour , Make sure they are done .Put in a serving dish and if there are any juices pour over the apples that have been cut open and enjoy. It can be served with Ice cream or anything else you think looks good.
