STEAK WITH WHISKY-BRAISED ONIONS AND MUSTARD SAUCE

4 onions, peeled
50ml whisky
600ml beef stock
100g salted butter
1 garlic clove, crushed
A few pine sprigs, washed and patted dry
1-2 tbsp olive oil
Sea salt and freshly ground black pepper
400g rump steak, 5cm thick
150g long-stem broccoli
2 tbsp Scottish grainy mustard
½ tsp English mustard
2 tbsp salted butter
25ml whisky
75ml double cream

Steps:

  • Place the whole onions in a pan with the whisky and beef stock. Cover and bring to the boil then reduce the heat slightly and simmer for 40 minutes. Use a slotted spoon to lift the onions out of their cooking liquor and set aside to cool a little. Reserve the liquor.
  • Meanwhile, place the butter, garlic and pine sprigs into a separate pan and place over a low heat to melt the butter. Preheat a griddle pan over a high heat.
  • Cut the onions in half horizontally, then drizzle over the oil and season well. Cook on the griddle pan or on the BBQ, flat-side down, for a couple of minutes until charred. Lift onto a plate and set aside.
  • Season the steak all over, then brush with some of the melted pine butter. Cook on the hot griddle pan for 2 minutes, then brush with more butter, flip over and cook for another 2 minutes.
  • Add the long-stem broccoli to the pan for the last 2 minutes of cooking, again brushing with pine butter. Lift the steak onto a board and rest for 4 minutes.
  • To make the sauce, put both types of mustard in a pan with 1 tablespoon of the butter and 200ml of the reserved onion cooking liquor. Pour in the whisky, then flambé to burn off the alcohol, tipping the pan gently and carefully to ignite. Place over a medium heat and simmer until the liquid has reduced by half, then stir in the cream and season well. Whisk in the remaining 1 tablespoon of butter to finish.
  • Slice the steak into 3cm thick slices and place on a platter with the broccoli, then spoon over the sauce. Pull the onions into petals and dot around before serving.

10 cups sliced Vidalia or other sweet onions (about 5 onions)
1/4 cup chicken broth
1/2 teaspoon salt

1/8 teaspoon ground mace
1/2 cup heavy whipping cream

Steps:

  • In a Dutch oven, melt butter over medium heat; stir in honey until blended. Add onions, broth and seasonings. Bring to a boil. Reduce heat; simmer, covered, 15-18 minutes or until onions are tender., Cook, uncovered, over medium-high heat 15-20 minutes or until liquid is almost evaporated, stirring occasionally. Stir in cream; cook 3-5 minutes longer or until sauce is thickened.

2 tablespoons olive oil
2 tablespoons butter
4 large onions, cut in slices about 2-inch thick
1 teaspoon salt (or to taste)
1/2 teaspoon finely ground black pepper (or to taste)
1/4 cup beef broth
1/4 cup Bourbon

Steps:

  • Combine oil and butter in a heavy saucepan.
  • Heat together over high heat until butter is melted.
  • Add onions and cook for about 2 minutes.
  • Add salt, pepper, and broth.
  • Cover, reduce heat, and simmer about 10 minutes.
  • Add Bourbon and cook until the sauce is slightly reduced.

4 large sweet onions, sliced
2 Tbsp butter
1 c amber ale or amber beer
salt & pepper

Steps:

  • 1. Heat a large skillet over medium-high heat and add the butter. Let the butter melt and then turn temperature down to medium-low heat.
  • 2. Add onions and let cook for about 10 minutes, stirring occasionally, until tender and translucent. Season with a little salt & pepper.
  • 3. Slowly add the beer and cover the skillet. Let simmer for about 10 minutes.
  • 4. Remove cover from skillet and cook an additional 5 minutes to allow some of the beer to evaporate.

3 tablespoons unsalted butter
3 tablespoons sugar
1 teaspoon coarse salt
1/4 teaspoon freshly ground pepper

Steps:

  • Peel the onions, and trim roots, leaving enough to keep onion intact. Cut them lengthwise in halves or quarters, depending on their size.
  • Place in a large skillet with butter, sugar, salt, pepper, and enough water to come halfway up sides of onions. Bring to a boil over medium-high heat, reduce to medium-low, and cook, covered, until the onions are tender, about 20 minutes. Uncover, raise the heat to medium, and cook, stirring occasionally until caramelized, 30 to 40 minutes.

The very large quantity of onions adds sweetness, and also helps make the sauce velvety soft. Serve it over potatoes, noodles or polenta.

1 tablespoon kosher salt, more as needed
1 teaspoon black pepper, more for garnish
6 bay leaves
2 teaspoons sweet paprika, more for garnish
4 pounds boneless beef stew meat, cut into 1 1/2-inch chunks
1 tablespoon unsalted butter
1 tablespoon extra-virgin olive oil, more as needed
4 Spanish or very large yellow onions, thinly sliced
6 sprigs fresh thyme
4 sprigs fresh parsley, plus chopped parsley, for garnish
1 tablespoon tomato paste
1 teaspoon ground coriander
1/4 teaspoon ground cinnamon
1 tablespoon all-purpose flour
2 cups beef or chicken stock, preferably homemade
1 cup beer, preferably Belgian-style or brown ale
Flaky sea salt, for garnish
Dijon-style mustard, preferably extra-hot, for serving

Steps:

  • In a large bowl, combine salt, pepper, bay leaves and paprika. Toss meat to coat, then cover, refrigerate and marinate at least 2 hours or overnight.
  • Heat oven to 325 degrees. In a large (8-quart) Dutch oven or other heavy pot, heat butter and oil over medium-high until shimmering. Working in batches, brown beef on two sides until dark and crusty, transferring to a bowl when browned (reserve bay leaves). As you cook, add more oil and adjust heat if necessary to prevent burning.
  • When all the meat is browned, add onions to the empty pot and return the heat to medium-high if you lowered it. Cook, stirring and scraping up the brown coating on the bottom of the pan as the onions release their liquid.
  • Continue cooking until onions are deeply golden brown and soft, 20 to 30 minutes, stirring occasionally.
  • Meanwhile, make a bouquet garni by tying thyme, parsley and reserved bay leaves together with kitchen string (or just throw them in the pot and warn your guests not to eat them).
  • Push the onions to the sides, then add tomato paste, coriander and cinnamon to the bottom of the pan. Cook, stirring, 1 minute, until paste is darkened and fragrant. Stir in flour, cook another minute, then add stock, beer, 1 cup water and bouquet garni. Return beef and any juices in the bowl to the pot, bring to a simmer, then cover and transfer to oven. Cook until beef is tender, about 2 1/2 to 3 hours, turning it over halfway through.
  • If the sauce seems thin, remove the meat with a slotted spoon; cover with foil to keep warm. Return pot with liquid to stove and simmer until thickened to taste, 5 to 10 minutes. Return the meat to pot and stir to heat through. Serve from the pot or a platter. Garnish with chopped parsley, flaky sea salt, pepper and paprika. Serve with mustard on the side.

I made up these sauteed onions one night to top a beef and Swiss sandwich; they're perfect on burgers, steaks and the like and a little swished around in some fried potatoes doesn't hurt, either. Please use a good whiskey, something like Maker's Mark is excellent, and don't be afraid to add more whiskey if you like! Also, this recipe doesn't make a large quantity; the onions are best when eaten immediately.

2 tablespoons good-quality whiskey
1/2 teaspoon dried thyme

  • Add thyme, then stir in the whiskey and Worcestershire Sauce.

4 thick generous slices beef shin, about 700g/1lb 9oz
plain flour, for dusting
2 tbsp sunflower oil
3 medium onions, halved and thinly sliced
2 tsp caster sugar
6 garlic cloves, sliced
700ml beef stock (made with 2 cubes)
3 tbsp Worcestershire sauce
4 large flat mushrooms, thickly sliced
chopped parsley, to serve

Steps:

  • Dust the beef in flour, then set aside. Heat the oil in a large pan. Add the onions and fry for 5 mins. Add the sugar and cook for 5-10 mins, stirring frequently, until the onions are caramelised. Stir in the garlic for the final few mins.
  • Pour in the stock and stir in the Worcestershire sauce. Add the beef and mushrooms, then season, adding plenty of black pepper. Cover and cook gently for 2 hrs until the meat is tender. Can be chilled for up to 3 days. To freeze, cool and store in freezer bags. Thaw and reheat in a pan. Serve scattered with parsley.
