Italian Beef Stew image

A rustic Italian Beef Stew Recipe in red wine gravy, with mushrooms, fire roasted tomatoes carrots and potatoes. Italy in a pot!

Provided by Florentina

Categories     Main Dishes

Time 2h45m

Number Of Ingredients 18

3 1 /2 lb chuck roast beef (cut into 1 inch cubes)
3 tbsp olive oil
10 cloves garlic
1 medium onion (diced)
2 1/2 c red wine
3 - 4 c water
15 oz fire roasted tomatoes (-diced)
4 cloves whole
1 bunch thyme
1 leaf bay
1 sprig sprig
1 large carrot (-diced)
1 bunch small rainbow carrots ((tops discarded))
4 golden potatoes (diced (gnocchi or polenta))
8 oz portobella or wild mushrooms
1 bunch scallions or spring onions
2 tsp sea salt + more to taste
3 tbsp flour (all purpose)

Steps:

  • Preheat your oven to 350"F
  • In a large cast iron dutch oven add a lug of olive oil and sear the garlic cloves until golden all over. Transfer to a plate.
  • Add the onion to the pan and saute until it starts to caramelize, about 15 minutes.
  • Then add the beef cubes to the pot with the onions and sprinkle with the flour over the top. Toss to coat well all over and cook for a few minutes.
  • Add the thyme, rosemary, bay leaf and cloves to the pot together with the red wine.
  • Bring everything to a gentle simmer and add the garlic cloves back to the pot. Cook for 10 minutes until the wine has reduced a little.
  • Stir in the fire roasted tomatoes, sea salt and the water. Cover with a tight lid and transfer to the preheated oven for 2 hours.
  • After 2 hours have passed, carefully add chopped carrots, rainbow carrots, potatoes and mushrooms to the stew, give it a gentle stir, cover and cook another 25 to 30 minutes until the potatoes and carrots are cooked through and the meat falls apart when stabbed with a fork.
  • Meanwhile clean the scallions and cut them in half. Drizzle with a little bit of olive oil and a pinch of sea salt. Toss to coat and pan sear them in a cast iron skillet until nice golden charr marks form. About 3 minutes.
  • Ladle the beef stew into bowls, sprinkle with the parsley and a nice drizzle of extra virgin olive oil. Divide the scallions between bowls and serve hot with lots of crusty garlic bruschetta to soak up all the gravy.

BRAISED ITALIAN BEEF STEW

Braised Italian Beef Stew image

This is another one that might take a little while to prepare, but the work and wait are WELL worth the effort! If you can't find a 5 lb. boneless beef chuck roast, 2 smaller ones will work just fine!

Provided by SkinnyMinnie

Categories     Stew

Time 3h15m

Yield 6 serving(s)

Number Of Ingredients 12

5 lbs boneless beef chuck roast (shoulder and blade will work too)
1 1/2 teaspoons salt
1 teaspoon fresh ground black pepper
2 tablespoons olive oil
2 celery ribs, chopped
2 carrots, chopped
1 medium onion, chopped
6 large garlic cloves, minced (about 2 Tbsp)
2 cups red wine or 2 cups beef broth
1 (28 ounce) can crushed tomatoes
2 teaspoons thyme
1 bay leaf

Steps:

  • Sprinkle beef with salt and pepper.
  • Place it in a wide, deep baking pan (like a turkey roaster).
  • Preheat the broiler, and put the rack 4" from the heat, or enough room to allow for the pan.
  • Put the meat under the broiler and leave the door ajar so the element stays lit.
  • Broil for about 15 min, or until a deep brown.
  • Turn it over, and broil for 5 min more.
  • As the meat cooks, heat the olive oil in a skillet over medium heat.
  • Add the onion, celery, and carrot.
  • Increase the heat to high and cook, stirring occasionally, for about 5 min, or until softened. If the vegetables begin to burn or stick, turn the heat down.
  • Add the garlic to the softened vegetables.
  • Reduce the heat to medium low and cook, stirring occasionally for another 3-4 minute.
  • Scrape the softened vegetables into the pan with the browned meat.
  • Add the wine (or beef broth), tomatoes, thyme, and bay leaf.
  • Heat oven to 300ºF.
  • Cover the pan with foil, and crimp it tightly.
  • Bake for 3 hours.
  • Remove the pan from the oven, and remove the meat to a serving platter.
  • Remove and discard the bay leaf from the sauce.
  • Put the sauce into a blender (or use a hand held immersion blender) to blend the liquid and vegetables into a smooth sauce.
  • Cover the meat with the sauce and serve.
  • Serve with mashed potatoes. Leftovers freeze well.
  • **NOTE: For a GREAT leftover dish. Shred the leftover roast in a skillet with the leftover sauce (like BBQ pork/beef) with two forks. It is easier to do when the roast is warmed. Serve this over the pasta of your choice, we like fettuccine.

  • Easy Thick Italian Beef Stew. If you’re craving something comforting, you can’t beat this Italian beef stew. It has all the fixings- big hunks of tender beef, potatoes, and carrots combined with an ultra-savory brown sauce.
  • Ciambotta. Ciambotta is an Italian take on the French dish, ratatouille. You’ll find all the same ingredients but in a more accessible presentation. Instead of spending hours slicing veggies on a mandolin and arranging them in artful layers, you can just chop everything up in one big batch.
  • Osso Buco. Osso buco is an Italian classic representing everything I love about this country’s cuisine. It’s so utterly rich, with tender meat that instantly falls apart as soon as you slide your fork into it.
  • Peposo. This hearty stew hails from the Tuscan countryside, but don’t classify it as peasant food. It’s an uber-rich recipe with just 5 ingredients but is delicious enough to be served in a Michelin-star restaurant.
  • Slow Braised Italian Beef Stew. This slow-braised Italian beef stew is the perfect antidote to a gray, rainy day. It’s bursting with so many cozy, fragrant flavors in every bite that act like an automatic pick-me-up.
