1 heaping cup peeled, sliced apples
1 Tablespoon lemon juice
2 Tablespoons butter
1/2 teaspoon cinnamon
1/2 teaspoon vanilla
A pinch of nutmeg
2 Tablespoons brown sugar (or 2 Tablespoons real maple syrup ,,, or a mix of the two)
2 Tablespoons bourbon (or whiskey)

Steps:

  • As you peel and slice the apples, toss them with the lemon juice in a bowl.
  • In a medium saucepan over medium heat, melt the butter, then add the apples with lemon juice. "Fry" the apples for several minutes in the butter, stirring frequently, for 5 - 10 minutes or until they begin to get tender.
  • Stir in the remaining ingredients. Cook for about 5 - 10 minutes longer. Store in a covered glass jar or airtight container in the fridge. Serve warm over French toast, pancakes, cake, ice cream ... anything that goes well with apples ... or just eat them with a spoon.

1 cup bourbon whiskey
3 cups sugar
3 ounces liquid pectin

Steps:

  • Combine apple cider, bourbon and sugar in saucepan.
  • Bring to a boil, stirring constantly.
  • Stir in pectin, stirring briskly.
  • Return to boil, boil 1 minute. Test for gel. Skim off foam.
  • Pour into jars, seal and process 10 minutes in waterbath or according to instructions with pectin.

4 pounds apples, (mixed varieties (I used equal parts Fuji, Gala, and Granny Smith))
¼ cup lemon juice
½ cup water
3 cups granulated white sugar
1 cinnamon stick
5 whole cloves
1 teaspoon ground ginger
¼ teaspoon salt
1/2 to 1 cup raw sugar, (to taste)
¼ cup bourbon

Steps:

  • Prepare jars and lids as per proper canning procedures.
  • Combine the water and lemon juice together in a large bowl. Peel and dice the apples, tossing the pieces into the water-lemon bath as you work to keep them from browning.
  • Add the granulated sugar to the apple mixture, and stir in the cinnamon, cloves, and ginger. Cover and let the fruit macerate for at least 30 minutes on the counter or in the fridge overnight.
  • Transfer the apple-sugar mixture to a large, non reactive pan, making sure to scrape all that luscious syrup out of the bowl. Bring the mixture to a bowl over medium heat, and reduce for 15-30 minutes. The mixture should be very thick with little liquid remaining. Carefully taste test - If too tart, add raw sugar to taste, starting with a half cup and increasing to 1 cup if needed.
  • Stir in the salt and the bourbon, and boil on high for 3-5 minutes. Test for gel set and remove from heat.
  • Transfer the apple jam to the prepared jars, leaving 1/4th inch headspace. Apply the lids and rings and process in a water bath for 10 minutes. Remove the jars to a folded kitchen towel and let them cool undisturbed overnight. Check for seals and store in a cool dark place. If any have not sealed, store in the fridge and eat first.

1/3 cup(s) orange juice
2/3 cup(s) bourbon

Steps:

  • Soften gelatin in 1/3 cup water. Heat remaining ingredients to boiling. Add softened gelatin, and the sugar, stir to dissolve. Stir in orange juice and bourbon and pour into jelly glasses. Serve with poultry , ham and vegetables. Makes 2 jars.

1/4 teaspoon plus 1/8 teaspoon pepper, divided
1 boneless rolled pork loin roast (about 3 pounds)
1 jar (12 ounces) apple jelly
4 teaspoons Dijon mustard
3 teaspoons lemon juice, divided

Steps:

  • Rub 1 teaspoon salt and 1/4 teaspoon pepper over roast. Place on a rack in a shallow roasting pan. Bake, uncovered, at 350° for 30 minutes. , Meanwhile, in a small saucepan, melt jelly over low heat. Whisk in mustard and 1 teaspoon lemon juice. Brush roast lightly with jelly mixture. , Bake 30-40 minutes longer or until a thermometer reads 145°, basting once with jelly mixture. Let roast stand for 10 minutes before slicing., Stir drippings in pan to loosen browned bits. Pour into a measuring cup; skim fat. Stir the remaining jelly mixture, lemon juice, salt and pepper into drippings; heat through. Serve with the roast.

3 ½ pounds apples, cored and diced
3 cups water
7 ½ cups white sugar
½ teaspoon butter
1 (2 ounce) package powdered fruit pectin

Steps:

  • Place apples in a large pot; cover with water. Bring to a boil; reduce heat, cover, and simmer until apples are slightly tender, about 5 minutes. Crush cooked apples and simmer for 5 more minutes.
  • Transfer crushed apples to a sieve or cheesecloth. Let drip into a bowl until all liquid has drained, pressing gently to release all the juice. Measure 5 cups apple juice, adding water if necessary to have exact amount. Stir sugar into juice; add butter to reduce foaming.
  • Bring juice mixture to a rolling boil, stirring constantly. Stir in pectin; boil for exactly 1 minute to dissolve pectin, stirring constantly. Remove from heat. Skim off excess foam with a metal spoon.
  • Sterilize the jars and lids in boiling water for at least 5 minutes. Ladle apple jam into the hot, sterilized jars, filling the jars to within 1/8 inch of the top. Run a knife or a thin spatula around the insides of the jars after they have been filled to remove any air bubbles. Wipe the rims of the jars with a moist paper towel to remove any food residue. Top with lids, and screw on rings.
  • Place a rack in the bottom of a large stockpot and fill halfway with water. Bring to a boil and lower jars into the boiling water using a holder. Leave a 2-inch space between the jars. Pour in more boiling water if necessary to bring the water level to at least 1 inch above the tops of the jars. Bring the water to a rolling boil, cover the pot, and process for 5 minutes.
  • Remove the jars from the stockpot and place onto a cloth-covered or wood surface, several inches apart, until cool. Once cool, press the top of each lid with a finger, ensuring that the seal is tight (lid does not move up or down at all). Let stand at room temperature for 24 hours. Store in a cool, dark area. Refrigerate opened jellies for up to 3 weeks.
