Boston Baked Beans image

A wonderful old-fashioned baked bean flavor. This recipe has served by family for 29 years and originally came from my mother-in-law. It tastes great served with fresh cornbread or biscuits and honey. Although you need to allow time for soaking and simmering the beans, this recipe is still quite easy.

2 cups navy beans
½ pound bacon
1 onion, finely diced
3 tablespoons molasses
2 teaspoons salt
¼ teaspoon ground black pepper
¼ teaspoon dry mustard
½ cup ketchup
1 tablespoon Worcestershire sauce
¼ cup brown sugar

Steps:

  • Soak beans overnight in cold water. Simmer the beans in the same water until tender, approximately 1 to 2 hours. Drain and reserve the liquid.
  • Preheat oven to 325 degrees F (165 degrees C).
  • Arrange the beans in a 2 quart bean pot or casserole dish by placing a portion of the beans in the bottom of dish, and layering them with bacon and onion.
  • In a saucepan, combine molasses, salt, pepper, dry mustard, ketchup, Worcestershire sauce and brown sugar. Bring the mixture to a boil and pour over beans. Pour in just enough of the reserved bean water to cover the beans. Cover the dish with a lid or aluminum foil.
  • Bake for 3 to 4 hours in the preheated oven, until beans are tender. Remove the lid about halfway through cooking, and add more liquid if necessary to prevent the beans from getting too dry.

A copycat recipe that is really easy to make. I've also made these in the crockpot, on low for about 4 hours.

1/4 c dry chopped onions
1/4 c hot water
1 24-oz jar(s) great northern beans, rinsed and drained
1 28-oz can(s) pork and beans (campbell's)
1 c ketchup (hunts)
1/2 c barbecue sauce (open pit hickory flavored)
3 slice boiled ham, finely chopped

Steps:

  • 1. Add dry onions to water for 5 minutes.
  • 2. While onions are softening, empty jar of northern beans into a 4-quart baking dish or pan. Add pork and beans to northern beans. Stir in onion, ketchup, barbecue sauce and ham.
  • 3. Bake, uncovered at 350ºF about 30 to 35 minutes or until piping hot. Stir 2 to 3 times during baking.
  • 4. Refrigerate covered, to use in 1 week. Freeze to use in 4 months.

3 cups dried pea beans (other dry white beans can be subsituted)
1/2 lb salt pork
1/3 cup molasses
2 teaspoons salt
1 teaspoon dry mustard

Steps:

  • Soak the beans overnight in water.
  • In the morning drain beans well and pick through discarding bad beans.
  • Put in large pot and cover beans with water and boil beans until the skins split when you blow on them (30- 60 minutes after water boils).
  • Drain.
  • Divide salt pork into two pieces.
  • Slash salt pork pieces deeply several times and place in the bottom of a large bean pot or casserole.
  • Pour in the drained beans.
  • Mix together remaining ingredients (molasses, salt and mustard).
  • Add mixture to beans with enough hot water to cover.
  • Cover and bake at 300-degrees F for 6-8 hours, checking often and adding water as needed.
