Beef burgers get a big flavor boost here from Cajun seasoning, while the classic trinity of Creole cuisine (onions, bell peppers, and celery) makes an appearance as well. Our burger blend of choice is 80% lean ground beef-it has the perfect ratio of juiciness to flavor.

1 1/2 pounds 80% lean ground beef
2 teaspoons Cajun seasoning
3 scallions, sliced (white and green parts)
1/2 cup mayonnaise
2 teaspoons Dijon mustard
1 teaspoon hot sauce
1/4 cup loosely packed fresh flat-leaf parsley leaves, chopped
1 celery stalk, finely chopped (about 1/2 cup)
1 medium yellow onion, sliced into 1/4-inch rounds
1 medium green bell pepper, sliced into 1/4-inch rings
1 tablespoon vegetable oil
4 sesame seed hamburger buns, split

Steps:

  • SET UP: Prepare a grill or grill pan and heat to medium-high heat.
  • FORM THE PATTIES: Gently mix the ground beef, Cajun seasoning, and scallions. Form into four 1/2-inch-thick patties.
  • MIX THE REMOULADE: Combine the mayonnaise, mustard, hot sauce, parsley, and celery in a small bowl. Refrigerate until needed.
  • GRILL EVERYTHING: Grill the patties, flipping once, to desired doneness, about 4 minutes per side for medium. Brush the onion and green pepper with the oil and grill the vegetables until lightly charred and tender, about 5 minutes total.
  • SERVE: Toast the buns on the grill for a minute or so. Put a patty on the bottom bun and top with remoulade. Add some onion and bell pepper, then add the top bun.

1 1/2 teaspoons garlic salt
1/4 teaspoon dried basil leaves, crushed

4 onion rolls, halved and lightly toasted

Steps:

  • In medium bowl, combine all ingredients except rolls.
  • Shape into 4 patties.
  • Grill or broil to desired doneness.
  • Serve on rolls and top, if desired, with grilled onions.

1/4 cup mayonnaise
1 green onion, thinly sliced
1-1/2 teaspoons Creole mustard
1/2 teaspoon minced garlic
1/2 teaspoon grated lime zest
1/2 teaspoon lime juice
1/4 teaspoon pepper
1/8 teaspoon salt
Dash hot pepper sauce
Dash Worcestershire sauce
BURGERS:
1/4 cup each finely chopped onion, celery and carrot
2 tablespoons minced fresh parsley
1 tablespoon butter
1 tablespoon Cajun seasoning
1/4 teaspoon salt
1/4 teaspoon hot pepper sauce
1 pound lean ground beef (90% lean)
4 onion rolls, split

Steps:

  • In a small bowl, combine the first 10 ingredients until blended; chill until serving. , In a large skillet, saute the onion, celery, carrot and parsley in butter for 6-8 minutes or until tender; cool slightly. , In a large bowl, combine the vegetable mixture, Cajun seasoning, salt and pepper sauce. Crumble beef over mixture and mix well. Shape into four patties. , Grill burgers, covered, over medium heat or broil 4 in. from the heat for 5-7 minutes on each side or until a thermometer reads 160° and juices run clear. Grill rolls, cut side down, over medium heat for 30-60 seconds or until toasted. Serve burgers on rolls with sauce.

3 tablespoons ground cumin
3 tablespoons dried oregano
1 tablespoon garlic powder

2 ½ pounds extra lean ground beef
4 cloves roasted garlic, chopped
1 pinch garlic pepper
1 pinch lemon pepper
1 pinch Cajun seasoning
4 slices sweet onion, 1/2 inch thick
4 large Hawaiian sweet rolls
4 slices American cheese
4 slices smoked Edam cheese
4 green leaf lettuce leaves
3 roma (plum) tomatoes, sliced
8 dill pickle slices
1 teaspoon Creole mustard
1 tablespoon creamy salad dressing, e.g. Miracle Whip ™
1 tablespoon ketchup

Steps:

  • Preheat an outdoor grill for high heat.
  • Mix together the ground beef and roasted garlic. Form the mixture into four balls, and flatten into patties about 3/4 inch thick. Sprinkle the patties with garlic pepper, lemon salt, and Cajun seasoning.
  • Lightly oil the grilling surface. Place onions on the grill, and toast on both sides. Place beef patties on the grill, and set the onions on top of them. Grill for about 5 minutes on each side, or to desired doneness. If you're lucky (or trashy) enough to still have a coffee can of grease on your stove, brush both sides of the Hawaiian rolls, then toast them on the grill.
  • To assemble, place the patties on buns, and top with slices of American and Edam cheese, lettuce, tomato, pickles, and your choice of condiments such as ketchup, Creole mustard, and salad dressing. These listed are some of mine.

2 1/2 lbs ground beef
1/2 lb pork sausage (homemade)
1 teaspoon Worcestershire sauce
1 tablespoon steak sauce (optional)
2 tablespoons catsup (or BBQ sauce)
3 -4 dashes louisiana hot sauce
3 -4 drops liquid crab boil concentrate
1 teaspoon garlic powder
2 teaspoons creole seasoning
1 medium onion (minced)
1/2 medium bell pepper (minced)
1/4 cup water
2 large eggs

Steps:

  • Remove sausage from the casing & combine both meats in a bowl. Add the remaining ingredients & mix well. Let the mixture rest in the refrigerator for at least 1 hr for seasonings to "work".
  • Form hamburger patties as usual & make them about 3/4" larger than the bun. The burgers will shrink, so doing this will give you a "bun-fitting" hamburger patty.
  • Cook hamburgers on high heat on ea side for about 1 minute. Then finish them on a med low heat till done (An internal temp of 160F is recommended by the USDA).
  • When done, spray them on both sides w/a water mist & sprinkle a little salt on them. Serve immediately.
  • If not serving immediately, put the patties in a pan w/only enough water to cover the bottom. Keep them covered so they don't dry out. Doing all of this will give you a slightly moister hamburger patty.

BORN ON THE BAYOU CAJUN HAMBURGERS

This is adaptation of meal served to me deep down in the Louisiana Bayou. It was fantastic as it was, but I thought I'd develop it to speak more to my families palate. This Dish is a Blackened Beef Burger (make it Bison if you like), made with a thick & spicy gravy to adorn the meat, Mashed, or Red Taters and Peas that I generaly serve with it. This dish is like nothin you've ever tried, and if you like a bit-o-spice, you'll love it!

1 1/2 lbs lean ground beef
1 egg
1 large onion
2 crushed garlic cloves
1 teaspoon Dijon mustard
1 teaspoon Worcestershire sauce
1 teaspoon black pepper
1/2 teaspoon ground cayenne pepper
1/2 teaspoon paprika
1 teaspoon oregano
2 tablespoons olive oil
1 1/2 cups beef stock, heated
1 tablespoon cornstarch
3 tablespoons cold water

Steps:

  • Chop and saute onion in a little oil until cooked, Remove from heat to allow to cool a bit.
  • In a bowl combine ground beef, egg, onion, garlic, mustard & Worcestershire sauce. Season with salt and mix very well, several minutes.
  • Shape into 4 large patties. Set aside (preferably in fridge).
  • Preheat large Iron skillet, or similar, over medium heat. When hot, pour in oil, add spice mixture and cook and stir one minute. This will release some irritation aromas unless your kitchen is well ventlated. If not, its almost enjoyable, dont sweat it!
  • Ad Hamburgers and cook 8 minutes each side, or till done. Turn patties over 3 or so times during cooking. Remove burgers from skillet and keep hot. In same skillet add beef stock and boil 3 to 4 minutes.
  • Dissolve cornstarch in cold water and stir into sauce and cook 1 more minute. Pour sauce over burgers and servr with New potatos and a Veg.
  • Good Eats, You'll love it!
