Borage Jelly image

For growers of borage add flowers to herbal vinegar as a dye and for a slight cucumber flavour.This is wonderful on cucumber tea sandwiches.

Yield 7 half pint jars

Number Of Ingredients 5

6 cups borage leaves (and flowers)
1 tablespoon mint leaf (optional)
2 tablespoons lemons
1 (1 3/4 ounce) package dry pectin
5 cups sugar

Steps:

  • Soak 6 cups of borage leaves and mint leave if using and flowers parts in a 4 cups of cold water overnight, drain and strain, pressing the liquid out of the leaves and flowers gently.
  • Measure 4 cups of the liquid, add the lemon juice, and pectin.
  • Put into a deep jelly kettle and bring to a rolling boil, then add sugar and stir to mix well.
  • Stir and boil hard for 1 1/2 minutes, or until mixture sheets from a wooden spoon, skim, pour into hot clean 1/2 pint jelly jars. Seal the a water bath accordingly.

1 medium cucumber, peeled, seeded and chopped
1 small onion, chopped
1 cup mayonnaise
1/2 cup sour cream
1/4 cup young borage leaves (2 to 3 inches)
2 tablespoons cider vinegar
1 tablespoon sugar
1 teaspoon salt
1/2 teaspoon garlic powder
1/4 teaspoon ground mustard
1/4 teaspoon paprika
Mixed salad greens
Borage flowers, sepals removed, optional

Steps:

  • Place the first 11 ingredients in a blender or food processor. Cover and process until smooth, about 30 seconds. Drizzle over salad greens. Garnish with borage flowers if desired. Serve immediately. Refrigerate leftover dressing.

The leaves of the borage has hints of cucumber and the beautiful starflowers have hints of honey. This will lift up your spirits because it helps with depression and anxiety

6 cups borage leaves, fresh picked after due is gone (and flowers)
1 cucumber, juiced and pulp discarded
1 ounce fresh ginger, juiced equaling 2 tablespoons juice
2 tablespoons lemons
1 (1 3/4 ounce) package dry pectin
5 cups sugar

Steps:

  • Soak 6 cups of borage leaves and mint leave if using and flowers parts in a 3 cups of cold water overnight in the refrigerator, drain and strain, pressing the liquid out of the leaves and flowers gently.
  • Measure 3 cups of the liquid, 1 cup cucumber juice and the 2 tablespoons fresh ginger juice, lemon juice, and pectin.
  • Put into a deep jelly kettle and bring to a rolling boil, then add sugar and stir to mix well.
  • Stir and boil hard for 1 1/2 minutes, or until mixture sheets from a wooden spoon, skim, pour into hot clean 1/2 pint jelly jars. Seal the a water bath accordingly.
  • Makes approximately 6-7 1/2 pints jars.

I started making my basic Borage Jelly Recipe #381762 this year and decided to use one home grown cucumber to bring out the cucumber flavor of the borage. Nice for wedding shower brunch on finger sandwiches. Use as a sweetener add to hot tea serve hot or cool tea and add ice to serve cooled.

Steps:

  • Slice the cucumbers thinly.
  • Salt lightly and set aside in a colander for 30 minutes, then rinse and pat dry with paper towels.
  • Mix the remaining ingredients, add the cucumbers to the mixture, and toss lightly.
  • Garnish with borage blossoms.

1 cucumber - halved, seeded, and sliced
6 borage leaves
12 fresh borage flowers

Steps:

  • Combine olive oil, lime juice, salt, and pepper in a bowl and stir together. Add sliced cucumber, cover, and refrigerate for 1 hour.
  • Sprinkle with borage leaves and borage flowers just before serving, as the flowers wilt quickly.
