BOONE'S DR. PEPPERCORNED BEEF
This is a Southern adaptation of an Irish favorite. Many substitutions have been made here to the standard recipe (most notably, the absence of cabbage), and many more adaptations are welcome. That's the nature of this springtime dish. This slow cooker recipe will yield a thin, dark, rich Dr. Pepper broth that will inject all 23 of its hidden flavors into the veggies and meat. The resulting broth is a lot like some of the brown-sugar recipes mentioned elsewhere, but the difference here is that you can substitute the Dr. Pepper out for Ginger Ale (for a tangier flavor), Coca-Cola (for the more conservative chef), Sunkist (soda version of the traditional Orange Juice Corned Beef recipe), or beer (limitless varieties of flavor here).

- Over medium-high heat, brown brisket on all sides in large, oiled skillet. Cut parsnips into 2 inch pieces, cut the sweet potatoes into quarters, and roughly chop the half onion. Place parsnips, onion and potatoes in the bottom of your slow cooker. Add the browned brisket on top of veggies. Combine ground peppercorns, rosemary, and thyme, then rub into beef. Pour Dr. Pepper and Dale's around the brisket, cover, and cook on HIGH for 2 hours (until simmering), then on LOW for 7-9 hours.
- Alternatively, if you want to sleep/work through the entire cooking process, just cook on HIGH for 5 to 6 hours, MEDIUM for 7-8 hours (if your slow cooker has this setting), or on LOW for 9 to 10 hours (Recommended!). Add/subtract time as necessary. You may also want to save parsnips to add with about 1 to 2 hours remaining because they will get mushy after a long time in the pot, but some people prefer to eat them like potatoes anyway, so this is really a matter of preference. They were delicious with all the juices cooked into them, and were still solid enough to be picked up by a knife.

BEEF BONE BROTH
"Bone broth" has become stylish as part of the Paleo diet, which enthusiastically recommends eating meat and bones. (The idea is to eat like our Paleolithic, pre-agricultural ancestors.) But cooks have known its wonderful qualities for centuries. This robust and savory beef broth - more than a stock, less than a soup - can be the basis for innumerable soups and stews, but it also makes a satisfying and nourishing snack on its own.

- Heat oven to 350 degrees. Place meat and bones in a roasting pan or on a large rimmed baking sheet. Drizzle with olive oil, turning to coat, then brush all over with tomato paste. Roast until browned, 30 to 35 minutes. They don't need to cook all the way through but to just develop some color.
- Put roasted meat and bones in a 12-quart stockpot and add vinegar and enough cold water to cover by 3 inches (about 6 quarts). Bring to a boil, then reduce to a low simmer, uncovered, for 2 to 3 hours. While simmering, occasionally skim fat and foam from the top using a ladle.
- Add all the remaining ingredients. Continue to simmer, uncovered, for a minimum of 3 hours. If using knucklebones, simmer overnight, 9 to 15 hours, so the knucklebones have sufficient time to break down.
- Remove meat and bones with a slotted spoon or tongs; reserve meat for another use (such as soup). Pour broth through a fine-mesh strainer into a large heatproof bowl. Once broth has cooled, store in the refrigerator in an airtight container.

SLOW COOKER CORNED BEEF
This slow cooker corned beef recipe is so easy, with basic ingredients, and it cooks on low for 7 hours. It is basic, but it is so very delicious. Hubby gave it 5 stars out of 5 and even my fussy 2-year-old ate it all. Hope you enjoy it! We ate this with roasted vegetables, and I topped mine with pickled mustard; my husband used gravy.

- Top meat with mustard pickles, chutney or relish.

TULUMBA (ALBANIAN VERSION)
This is a fried pastry that is traditionally eaten in the Balkans and some parts of the middle-east most notably Turkey. This version however is an old Albanian recipe and is used in Albanian speaking areas within the republic, Macedonia, southern Serbia, and Northern Greece. ENJOY!

- SYRUP:.
- Put the sugar, water and lemon juice into a saucepan, and after melting the sugar by stirring, allow it to boil until moderately thick.
- Set aside to cool.
- PASTRY:.
- Heat the margarine in a saucepan, add the water and salt and bring to the boil.
- Reduce heat and add the flour at once.
- Stir the mixture constantly with a wooden spoon and continue until mixture leaves the sides of the pan and forms a ball.
- This should take 6 minutes, then remove pan from heat and set aside to cool.
- When cool, add the eggs and knead for approximately 10 minutes.
- Using a pastry bag with a large nozzle or a serrated spoon, put 7-8 pastries in a pan containing the heated olive oil.
- Start frying the pastry over low heat, increase heat when pastry puffs up a bit and fry until golden.
- Remove fried pastry with a perforated spoon, draining away the oil, then put into the syrup.
- Strain off the syrup, place tulumba on serving plate and serve when cool.

KOCHUJANG SAUCE
This sauce is used in a few Korean dishes; most notably in Bi Bim Bap, but can also be used as a dip for vegetables, a flavouring for soups and stir-fry and as a marinade for grilled or barbecued tofu. I am new to Korean food, but we have a young Korean girl staying with us for 5 months, so I have been trying Korean recipes. She gave my Bi Bim Bap and 8 out of 10! A Korean friend of mine also tried my Kochujang Sauce and told me that my recipe was better than hers. I found this recipe on asiarecipe.com under the Korean sauces heading. Kochujang is a thick, miso-like paste made of soybean paste, red pepper powder and glutinous rice flour. Some brands are hotter than others.
