FRUIT NUT BARS
2 cups unbleached flour
1/2 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/4 teaspoon nutmeg
1/4 teaspoon allspice
1 teaspoon cinnamon
1 cup chopped pecans
1 cup cranberries or raisins or mix them
2 ripe bananas mashed with a fork
6 ounces pear baby food
2 egg whites slightly beaten
1/4 cup molasses
RUM ICING
2 tablespoons butter
2 ounces cream cheese
1/2 cup powdered sugar
1 teaspoon rum extract

Steps:

  • 1. In a large mixing bowl, mix the dry ingredients together: flour, sugar, baking soda, baking powder, cinnamon, nutmeg, allspice and salt, and add the fruits and nuts. Mix gently to combine.
  • 2. In a medium mixing bowl, mix the wet ingredients: mashed bananas, pears, egg whites and molasses, beat with a hand mixer until smooth.
  • 3. Preheat your oven to 350 degrees. The batter should look like this. It will be thick. Use a 9 X 12 X 2 inch pyrex baking dish. Spray it with butter flavored Pam kitchen spray. Pour the batter evenly in the baking dish.
  • 4. Bake in the pre-heated oven for about 30 minutes. Test with a toothpick to see if it is done. It will look like this photo.
  • 5. Remove from the oven and place on a rack and cover with a sheet of wax paper.
  • 6. Rum Icing Recipe: Bring the butter and cream cheese to room temperature while waiting for the cake to cool. With an electric mixer and a small mixing bowl, beat the cream cheese, rum extract and the butter until well mixed, and then add the powdered sugar and beat until smooth. If it is too thick, add a half teaspoon of water and mix well. Spoon the mixture into a small plastic ziplock bag, close it and get the air out, and then snip the corner of the bag.
  • 7. Pour the icing on the cake and frost.
  • 8. This cake can be served with or without icing. We like ours warm with the rum icing on it. The rum icing melts slightly, like the icing on sweet rolls, or if you prefer, cool completely for a firmer icing. This is what it looks like iced.
  • 9. Cut into bars and serve with a nice glass of cold milk. This recipe is a good gift for friends and family, accompanied by the recipe.
  • 10. This is a closeup of the fruit nut bars. Store in a container with a tight-fitting lid.

12 ounces chocolate chips
12 ounces butterscotch chips
1 (18 ounce) jar peanut butter
1 -16 ounce dry roasted peanuts
1 cup butter
1/4 cup vanilla pudding mix (dry)
1/2 cup milk
2 lbs powdered sugar
1 teaspoon maple flavoring

Steps:

  • Melt together chocolate and butterscotch chips with peanut butter.
  • Spread half mixture in jellyroll pan.
  • Refrigerate.
  • To other half, add peanuts; set aside.
  • In saucepan combine, butter, pudding and milk. Boil 1 minute.
  • Remove from heat. Add powder sugar and flavoring. Beat and then spread over first layer.
  • Cool in refrigerator. Spread remainder of chocolate-peanut butter mixture on top. Keep refrigerated. Can be frozen.

1 cup butter, softened
1 cup packed brown sugar
2 cups Gold Medal™ all-purpose flour
2 eggs
1/2 cup packed brown sugar
1/2 cup dark corn syrup
1 tablespoon rum or 1 teaspoon rum extract
2 cups pecan halves
1/2 cup powdered sugar
1 tablespoon butter, softened
2 teaspoons rum or 1/2 teaspoon rum extract plus 2 teaspoons water

Steps:

  • Heat oven to 375°F. Grease bottom and sides of 13x9-inch pan with shortening or cooking spray (do not use dark pan).
  • In medium bowl, beat 1 cup butter and 1 cup brown sugar with electric mixer on low speed until creamy. Stir in flour. Press evenly in pan.
  • Bake 12 to 14 minutes or until edges are golden brown and center springs back when touched lightly.
  • Meanwhile, in medium bowl, mix all filling ingredients except pecans. Stir in pecans. Pour over crust, spreading pecans evenly.
  • Bake 12 to 15 minutes or until filling is set. Cool completely, about 1 hour.
  • In small bowl, mix icing ingredients (add additional rum or water, 1/2 teaspoon at a time, if icing is too thick to drizzle). Drizzle icing over bars. For bars, cut into 8 rows by 4 rows.

2 cups (12 ounces) chocolate chips
2 cups (12 ounces) butterscotch chips
1 jar (18 ounces) creamy peanut butter
1 jar (24 ounces) dry roasted peanuts
1 package (2 pounds) confectioners' sugar
1 teaspoon vanilla extract or maple flavoring
1 cup butter, cubed
1/2 cup milk
1/4 cup cook-and-serve vanilla pudding mix

Steps:

  • In a large saucepan, melt chocolate and butterscotch chips with peanut butter over low heat. Spread half in a greased 15x10x1-in. pan; chill until firm. Stir in peanuts into remaining melted mixture and set aside. Place sugar and vanilla or maple flavoring in a large bowl; set aside. In a small saucepan, combine butter, milk and pudding mix; bring to a boil and boil for 1 minute. Add to bowl and beat until smooth; spread over chilled layer in pan. Chill until firm. Cover with reserved peanut/chocolate mixture. Refrigerate until serving. Cut into bars.
