BONNIE'S MEXICAN SALSA
It's chunky and it's delicious. It only takes about 10 minutes to prepare because it is made with ingredients you would normally have on hand in the pantry or the fridge. We like it fresh made, or you can let it sit in the fridge and let the flavors marry, and it is even better. Everyone seems to love it. We serve it with Doritos or warm Restaurant style chips. Enjoy!

Steps:
- This recipe will make around two cups of fresh salsa. I make it in the container I am storing it in. Cleanup is easier.
- Put all the ingredients in the container in the order given. Mix gently. Taste to see if it has enough salt. I serve it with restaurant chips or Doritos. Everyone seems to love it. So I make a lot when I make it.
- We think it is good to eat made fresh, or if you let it chill in the fridge and marry the flavors, it is even better. Enjoy!
BONNIE'S FRESH SPANISH SALSA
This is the way I make salsa for my family. It is made with all fresh ingredients and is delicious with a variety of foods. It is low calorie and a healthy addition to your meal planning. I hope this recipe pleases your palate! Enjoy! The photos are my own and so is this humble recipe.

- 1. Use all fresh ingredients for the best results. In a medium mixing bowl, add the fresh diced tomatoes and diced onion and minced garlic. We like our salsa with a little juice. This will depend on how juicy your tomatoes are. If you want it drier, remove the excess and set aside in case you decide you want it wetter.
- 2. Add the rest of the ingredients, fine diced jalapeno and Anaheim peppers that have been seeded and the white membrane removed. Add 3 tablespoons of Marsala wine, 1/4 cup chopped cilantro or more to taste, juice of one lime and the pulp, Kosher salt and pepper to taste. Mix well and chill for at least 3 hours before serving.
- 3. Serve with your favorite chips or Latin food. This salsa is great on nachos or with eggs, too. Here is how it looks! Enjoy!
FRESH HOMEMADE SALSA
Another salsa recipe called for a fresh jalapeno (I think), but I had green chiles in a can on hand. This salsa tastes great, so I'm sticking with it!

- Combine tomatoes, red onion, yellow onion, green chilies, lime juice, cilantro, garlic, cumin, and salt in a food processor. Pulse processor until mixture is combined, yet remains chunky. Transfer to a bowl, cover with plastic wrap, and refrigerate at least 1 hour.

BONNIE'S MEDITERRANEAN SALSA
This is a great flavorful dip that looks pretty too. Serve in clear glass bowl, and garnish with whole cilantro leaves. Serve with pita chips or toasted baguette slices. Don't forget to keep in mind you need at least 2 hrs. in the fridge, to let flavors meld.

FRESH MEXICAN SALSA
When I visit my best friend in CA, there is a restaurant we always have to go to and I love their salsa. She got the recipe for me so thought I would share with all.

Steps:
- Char the tomatoes over a gas grill or under the flame of a hot broiler for 2 minutes to char the skin, turning them until the peel blisters. Slip off the peel, and the flesh should still be firm. Remove the green stem core and cut the tomatoes in half vertically. Use a teaspoon to scoop out the seeds and discard.
- In the food processor, drop in the garlic, cilantro, green onions and jalapenos into the bowl of the food processor to chop for just a few seconds.
- Add all the remaining ingredients from the recipe, tomatoes, Serrano chili, the chopped green chilies and lime juice. The texture is somewhere between a chow-chow relish and a textured puree. You want to see tiny bits of all the vegetables throughout the salsa. Salt and pepper to taste.
- Place in fridge for approximately one hour.
