4 chicken thighs, skinless and boneless
6 tablespoons real butter melted in medium skillet
3/4 pound of sliced fresh mushrooms
3 green onions chopped fine
1 tablespoon lemon juice
1 tablespoon worcestershire sauce
1 teaspoon kosher salt
black coarse pepper to taste
2 tablespoons chopped parsley
1 teaspoon minced garlic
2 teaspoons dry mustard
2 tablespoons olive oil to fry chicken

Steps:

  • 1. I served this dish with a couple of cups of steamed rice that was seasoned with 2 teaspoons of chicken soup base and cooked in the rice cooker. I started the rice first because it takes longer cook than the chicken.
  • 2. If you get your ingredients together for the sauce, and set them aside, then get the chicken cooking, steam your broccoli and get your rice cooker going with the rice, then it only takes about 7 minutes to make the sauce. You want to have everything done before you put the sauce ingredients in the skillet. Then it all comes together like magic. :) This really is a very easy recipe if you prep first.
  • 3. COOK THE CHICKEN Trim the fat and remove skin from the chicken. Boneless thighs works in this recipe, but you could use bone in if you have them. I did.
  • 4. Heat a large skillet over medium heat. Season both sides of skinless thighs with kosher salt and coarse black pepper and place the chicken in a large skillet with 2 tablespoons of oil.
  • 5. Fry seasoned thighs until golden brown on one side.
  • 6. Turn the thighs, and then cover with a glass lid over the chicken. Once the underside browns, turn the heat to very low and keep the lid on.
  • 7. MAKE THE SAUCE Melt 6 tablespoons butter in the medium skillet over lowest heat.
  • 8. Saute the mushrooms, green onions, garlic, lemon juice, Worcestershire sauce, dry mustard, salt and parsley in the 6 tablespoons of butter in the medium skillet. Saute 7 to 10 minutes. It will thicken slightly on its own.
  • 9. SERVE IMMEDIATELY! Ladle rice on the plate, place a chicken thigh on top, and spoon sauce over the cooked chicken. I served the chicken with broccoli and sliced tomatoes on the side. Here is how it looks! Enjoy!

Four 6-ounce filet mignon steaks
Kosher salt and freshly ground black pepper
1 tablespoon olive oil
1 tablespoon salted butter
2 cloves garlic, minced
1 shallot, chopped
1/4 cup brandy
1/4 cup beef broth
1/4 cup heavy cream
1 tablespoon Dijon mustard
1 teaspoon Worcestershire sauce
Chopped fresh parsley, for garnish
Chopped fresh chives, for garnish

Steps:

  • Flatten the steaks with a meat mallet so they are about 1 1/2 inches thick. Season the steaks with salt and pepper on both sides.
  • Heat the olive oil and butter in a large sauté pan over medium-high heat. When the oil is hot and the butter has melted, add the steaks and sear until well browned, 3 to 4 minutes per side. Set the steaks aside on a plate.
  • To the same pan, add the garlic and shallot and cook, scraping the bottom of the pan to loosen any of the flavorsome steak residue into the mixture, for about 1 minute. Remove the pan from the heat and carefully add the brandy. (If the pan ignites, stand back and allow the flame to disappear, which it will in a few seconds.) Return the pan to the heat and bring to a simmer, scraping the bottom of the pan again. Simmer until the brandy is almost totally reduced, about 2 minutes. Add the broth, cream, mustard and Worcestershire sauce and stir to combine, then cook for a minute to thicken.
  • Plate up the steak and pour over the sauce. Garnish with the parsley and chives and serve immediately.

2 tender steaks, your choice for grilling
1/2 cup real butter
2 teaspoons dry mustard
3/4 pound sliced fresh mushrooms
1 1/2 cup sliced green onions
1 tablespoon lemon juice
1 tablespoon wocestershire sauce
1 teaspoon salt
1/4 cup chopped parsley

Steps:

  • 1. Grill steaks seasoned with salt and coarse ground black pepper to your preference, and serve with the Steak Diane sauce poured over the top of the steak.
  • 2. PREPARE THE STEAK DIANE SAUCE: Saute the mushrooms, green onions, lemon juice, worcestershire sauce, dry mustard, salt and parsley in the 1/2 cup butter in a small skillet. Saute about 10 minutes, and immediately pour over grilled steaks before serving. Enjoy!

4 (250 -300 g) filet of beef, medallions
50 g butter
2 tablespoons Worcestershire sauce
1 1/2 tablespoons finely chopped shallots
2 garlic cloves, crushed
250 g button mushrooms, sliced (throwing in seasonal wild mushrooms along with the button adds more falvour.)
3 teaspoons Dijon mustard
1 tablespoon lemon juice
3/4 teaspoon beef stock granules
125 ml double cream
25 ml half cream
3 tablespoons brandy
1 tablespoon fresh thyme leave
1 tablespoon of chopped parsley
1 tablespoon chives
pepper (to season)

Steps:

  • For the Steaks.
  • Heat a small amount of oil in a pan until the pan is quite hot. Season steaks on both sides with salt and pepper. Place in pan sear 2-3 minutes each side. For medium rare cook for a further 2-3 mins on each side.
  • Of course longer cooking times apply for more well done meat and it does depend on how thick the meat is.
  • For the Sauce.
  • Melt butter in a pan and saute the shallots and garlic until soft add Worcestershire and mushrooms continue to cook over medium heat until mushrooms start to soften.
  • Add the mustard, lemon juice, beef stock and brandy, stir to combine, cook for 2-3 minutes add both the creams and thyme. You want to cook until sauce reduces slightly and thickens. if the sauce becomes to thick just add a little more of the half fat cream.
  • Finally add chopped parsley and chives.
  • Now you can either be cooking the steaks at the same time as making the sauce or it is fine to leave on a low heat while you cook the steaks just stir occasionally.

  • Add the meat and any accumulated juices to the saucepan and turn to coat. Simmer until heated through, about 1 minute. Transfer the meat to plates, spoon the sauce on top and serve.
