There is nothing more addictive than tender asparagus spears wrapped in salty, crispy prosciutto. It only takes 4 ingredients and 30 minutes for this simple and delicious appetizer!

1 pound asparagus ((look for thicker stems that are about 1-ounce each))
4 ounces prosciutto
2 tablespoons olive oil
freshly ground black pepper
Lemon zest (or lemon wedges, for garnish, optional)
shredded Parmesan cheese (for garnish, optional)

Steps:

  • Preheat oven to 400 degrees. Line a baking sheet with parchment paper or a silicone mat for easy cleanup.
  • Remove the woody, tough ends from the asparagus. To do this, grab a handful of stems (5-6 at a time) and start to fold near the bottom of the stem. Each stem should break at the spot where it starts to toughen.
  • Cut each piece of prosciutto into quarters (you should have about 16 pieces). Working with one asparagus stem at a time, wrap a piece of prosciutto around the middle of the stem. Place on prepared baking sheet and repeat with remaining prosciutto and asparagus.
  • Brush the wrapped stems lightly with olive oil, concentrating most on the flowery tops which dry out easily. Sprinkle with pepper to taste (I like 1/2 teaspoon).
  • Bake until the asparagus stems are tender and the prosciutto is crisp, about 20 minutes. Serve warm or at room temperature.

1 pound asparagus (about 19 stalks), trimmed
1 tablespoon olive oil
Salt and freshly ground black pepper
6 to 8 paper-thin slices prosciutto, halved lengthwise

Steps:

  • Preheat the oven to 400 degrees F.
  • Snap the dry stem ends off of each asparagus and place on a heavy baking sheet. Drizzle with olive oil, sprinkle with salt and pepper, and toss. Roast until the asparagus is tender, about 15 minutes. Cool completely.
  • Wrap each asparagus with 1 piece (about 1/2 a slice) of prosciutto, exposing tips. Arrange on a platter and serve at room temperature.

16 spears fresh asparagus, trimmed
16 slices prosciutto

Steps:

  • Preheat the oven to 450 degrees F (220 degrees C). Line a baking sheet with aluminum foil, and coat with olive oil.
  • Wrap one slice of prosciutto around each asparagus spear, starting at the bottom, and spiraling up to the tip. Place the wrapped spears on the prepared baking sheet.
  • Bake for 5 minutes in the preheated oven. Remove, and shake the pan back and forth to roll the spears over. Return to the oven for another 5 minutes, or until asparagus is tender, and prosciutto is crisp. Serve immediately.

1 pound asparagus, preferably thick spears
3 to 3 1/2 ounces sliced prosciutto
1 to 2 tablespoons olive oil
Ground black pepper
Lemon zest, optional
Freshly grated Parmesan cheese, optional

Steps:

  • Heat the oven to 400°F: Line a large sheet pan with parchment paper and set aside.
  • Prepare the asparagus: Rinse and pat dry the asparagus. Snap off the tough ends of the asparagus. Set asparagus spears aside. (Reserve the snapped ends for another meal, if you like.)
  • Wrap the asparagus with prosciutto: Cut prosciutto slices in half down their length. Wrap each spear of asparagus with one strip of sliced prosciutto. Tug the prosciutto a little as you wrap it around the asparagus to give it tension. This helps to ensure that the prosciutto wraps around the asparagus tightly. Lay the wrapped asparagus spears on the lined sheet pan.
  • Drizzle the asparagus with 1 to 2 tablespoons of olive oil: Sprinkle a pinch of black pepper on top.
  • Bake the asparagus for 8 to 10 minutes: When done, the asparagus will be bright green and easily pierced with a fork, and the prosciutto will be crisped around the edges.

1 cup balsamic vinegar
Salt
12 asparagus spears
12 thin slices prosciutto
Extra-virgin olive oil, to serve
Freshly ground black pepper
Fleur de sel

Steps:

  • Pour the vinegar into a small pot and bring it to a boil over high heat. Turn the heat to medium low and reduce the vinegar by about 1/4, or until it is thick. Let cool.
  • Put a pot of salted water over high heat. Trim the asparagus spears to that they are all the same length. Peel the bottom half of the spears with a vegetable peeler. Tie the asparagus together into a bundle using kitchen string. When the water is boiling, lower the asparagus into the pot and cook until just tender, about 3 minutes. Plunge the asparagus into a bowl of ice water to stop the cooking. When it is completely cold, remove the spears and lay them out onto a rack to dry.
  • Roll a slice of prosciutto around each asparagus spear. Arrange them on a platter and drizzle over some olive oil. Sprinkle with some pepper and salt. Finally, dribble on some of the reduced balsamic vinegar. Serve immediately.

A cook on the internet, Trish, posted this recipe a few years ago. It is elegant, yet easy, side dish, sure to get rave reviews! It goes with almost any entree. Definitely company worthy. Good recipe for parties or family dinners. Enjoy!

1 bundle of 12 fresh, young asparagus spears trimmed, snap off the large end. only use tender young asparagus, or it will be woody.
1 8 ounce package of cream cheese and chives at room temperature.
1/2 pound package of prosciutto. if you prefer a less salty alternative, use black forest ham or any good quality deli ham, or you can use bacon like i did in my photo.
green onion strings for tying ribbons around the bundles if desired.

Steps:

  • 1. Pre-heat oven to 450 degrees. Line a baking sheet with tin foil and spray with olive oil Pam.
  • 2. Tip: Instead of cutting the large end off with a knife, bend the asparagus and it will snap off and leave just the tender part of the asparagus. Don't throw away the ends . Save them frozen in a ziplock for soup. If you cook them until tender, they make a wonderful soup. Blanch the asparagus for 1 minute, then plunge into an ice water bath. This helps the asparagus to stay beautifully green.
  • 3. Drain the asparagus on a tea towel.
  • 4. Use bacon, prosciutto, or thin deli ham. I used whipped cream cheese and chives, or it is also good with plain whipped cream cheese. Whipped cream cheese is easier to handle than the solid brick of cream cheese.
  • 5. I used bacon for my wrapped asparagus. Separate the bacon slices and place between paper towels, and microwave the slices for only one minute. Remove and let cool. This warms the bacon, partially cooks it, and makes it easier to handle. It is also lower in calories.
  • 6. Use three asparagus to a bundle. With a knife add about 1 tablespoon of cream cheese and chives to the center of each asparagus bundle and wrap with a strip of prosciutto or deli ham. Tie with a green onion bow if you wish.
  • 7. Here is how they look wrapped with whipped cream cheese in the middle. Spray both the foil-lined baking sheet, as well as tops of finished bundles with Pam olive oil kitchen spray. (This keeps them from drying out)
  • 8. Bake 15 minutes or until asparagus is tender and bacon or prosciutto is nicely browned. I used cracked black pepper to sprinkle on the fresh cooked bundles. Enjoy! These lovely spears came from our garden!

1 lb asparagus, about 20 roasted (you can use Roasted Asparagus With Garlic and Fresh Thyme, Roasted Asparagus With Lavender, Lemon and Garlic or your favorite)
1/4 lb cheese, 20 pieces (use your favorite used simi firm cow milk cheese with truffle)

Steps:

  • Place prosciutto on a working surface, place 1 piece of cheese on each slice then lay spears on cheese.
  • Roll each up and place on a platter.
  • Finger food that is wonderful!

1 pound fresh asparagus
¼ pound prosciutto
toothpicks
1 lemon, juiced
2 tablespoons extra-virgin olive oil, or to taste

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Spray a baking dish with cooking spray.
  • Bend asparagus spears and snap off tough ends. Wrap 3 to 4 spears with a slice of prosciutto and secure with a toothpick. Place bundles in the prepared baking dish. Drizzle some lemon juice and olive oil over the top.
  • Bake in the preheated oven until asparagus is crisp-tender, 18 to 20 minutes. Turn on the broiler and broil until prosciutto is crisp, 2 to 3 minutes. Drizzle with more lemon juice after broiling.
