ASIAN BEEF AND CAULIFLOWER STEW

Steps:
- In a skillet, heat oil over medium-high. Brown meat on all sides. Add broth; cover and simmer until beef is tender, about 1 hour. Add cauliflower, green pepper, soy sauce, garlic, and ginger root if desired. Cover and simmer until the vegetables are tender, about 5-7 minutes. Combine cornstarch, sugar and water. Stir into meat mixture. Bring to a boil, stirring constantly; cook 2 minutes or until thickened. Stir in green onions. Serve on rice.

GOBI MANCHURIAN
This is one of my favorite gobi (cauliflower) recipes, and available at many Indian restaurants. A spicy Asian dish that's sure to leave your family wanting more! Occasionally, I even love to bake the cauliflower to lower the calories. Keep in mind, baking will take away from the crispiness of fried cauliflower.

Steps:
- Heat oil in a large pot over medium heat.
- Mix flour, cornmeal, water, black pepper, and salt together in a bowl to make a thick batter. Toss in cauliflower florets and mix until coated.
- Deep fry cauliflower a few florets at a time until golden brown, about 3 minutes. Transfer to a paper towel-lined plate.
- Mix 1/4 cup vegetable stock with cornmeal in a bowl. Add soy sauce, ketchup, chile-garlic sauce, and salt.
- Heat oil in a wok or frying pan over high heat. Add onions, chile pepper, garlic, and ginger and stir-fry for a few seconds. Add cornmeal mixture and cook 1 to 2 minutes. Add remaining vegetable stock and cook until very thick, about 10 minutes. Remove sauce from heat.
- Spoon sauce over fried cauliflower and toss slightly. Garnish with green onions and serve.

Steps:
- Combine first 4 ingredients and pepper to taste in a small bowl; stir well with a whisk and set aside.
- Heat a large oiled non-stick skillet over high heat.
- Add meat and saute 3 minutes or until browned.
- Remove from skillet and set aside.
- Add cauliflower and broth; cover, reduce heat and simmer 3 minutes.
- Return meat to skillet; stir in yogurt mixture.
- Add snow peas and bring to a boil; cook 2 minutes, stirring gently.
- Toss with pasta before serving.
- Garnish with toasted almonds, if desired.
- Good served cold as a luncheon salad.

- Heat the oil in a big pan or wok with a lid, then add the ginger and spices. Swirl everything around for a few secs until the spices are aromatic. BEEF BOMBAY CURRY
This recipe comes from a Dutch language curry cookbook I picked up somewhere along the way. The key is to start off with nice beefsteak, the tenderest cut that you can afford.

- Heat the oil in a large frying pan.
- Add the onions and cook till they soften.
- In a small bowl or coffee cup, combine the turmeric, cumin, coriander, and chilipowder.
- Add these spices and the garlic, chilipeppers and ginger to the onions, and mix well.
- Cook for another minute.
- Add the cubed beef and cook until it is well browned and completed covered by the spice mixture.
- Add the salt and the tomatoes.
- Allow to cook at a slow simmer, covered, until the beef is cooked through and tender.
- This make take 1 to 1 1/2 hours, depending on the tenderness of the original beef.
- Add the coconut milk and stir well.
- Simmer uncovered for 5 minutes, or until sauce slightly thickens.
- Serve with rice.

- Heat the oil in a medium skillet over medium heat. Stir in the cumin seeds, garlic, and ginger paste. Cook about 1 minute until garlic is lightly browned. Add the potatoes. - Pull off the green leaves surrounding the cauliflower. Then cut the bottom off & break the cauliflower into large pieces. Rinse & then place in a bowl to be used later.
- Heat the olive oil in either a sauce pan or pressure cooker. Cook the beef in the oil until all the sides are brown.
- Add enough water in the pot to cover the beef. At this point put everything into the pot except the cauliflower and cover with a lid. If using a sauce pan simmer the beef for 40 minutes, stirring occasionally. If you are using a pressure cooker, let the beef cook for 15 minutes (after the cooker begins to hiss).
- Dip the cauliflower into the sauce to cover all the sides. Once that is done leave it in the pot & recover with a lid. Simmer for another 15 minutes or until the cauliflower is done. If using a pressure cooker, cover & cook for additional 5-7 minutes (after the cooker begins to hiss).

Steps:
- Place cauliflower in a steamer basket over boiling water.
- Cover pan and steam 5-7 minutes or until just tender.
- Drain.
- Rinse under cold water.
- Drain well and transfer to a 9x13 inch baking dish.
- Combine 1-1/4 Tbs.
- melted butter with flour in a heavy saucepan over medium low heat. Whisk about 3 minutes, or until bubbly.
- Gradually whisk in milk.
- Add bay leaf and nutmeg and whisk often until mixture simmers.
- Cover partially and simmer 3-4 minutes, stirring often, until thickened.
- Remove from heat. Stir in mustard, Worcestershire and salt and pepper to taste. Discard bay leaf.
- Pour sauce over cauliflower and stir until well coated.
- (Can be prepared 1 day ahead. Cover and chill.)
- Preheat oven to 3500F.
- Sprinkle breadcrumbs over cauliflower.
- Drizzle with remaining butter.
- Bake 35-40 minutes, until cauliflower is heated through, sauce bubbles at edges and breadcrumbs are golden.
