BAKED ACORN SQUASH

This is a very easy and yummy vegetable side dish to make!!

Number Of Ingredients 5

2 acorn squash, halved and seeded
salt and pepper to taste
¼ cup butter, diced
6 tablespoons firmly packed brown sugar
½ teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place squash in a shallow baking pan, cut side down.
  • Bake in preheated oven for 30 minutes, or until tender.
  • Turn cut side up; season with salt and pepper, dot with butter and sprinkle with brown sugar and cinnamon.
  • Bake for 20 minutes more.

This simple baked butternut squash is easy to make, delicious to eat, and looks beautiful on the plate.

Number Of Ingredients 4

1 butternut squash, halved lengthwise and seeded
water
1 tablespoon butter, divided
salt and ground black pepper to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place squash, cut sides down, in a 9x13 baking dish. Pour water into dish around squash halves.
  • Bake in the preheated oven until tender and easily pierced with a fork, about 1 1/2 hours. Carefully remove the skin with a fork; it should be very easy to remove. Top squash halves with butter and season with salt and pepper to taste.

Number Of Ingredients 10

1 lb fresh summer yellow squash
1/2 stick unsalted butter, cut into 1/2 inch pieces
1/2 cup shredded American cheese
3 teaspoons sugar
1/2 cup mayonnaise
1/2 teaspoon salt (a bit less)
Ground black pepper, 12 rounds from grinder
1 Egg
1/2 to 2/3 sleeve Keebler club crackers crushed
1/2 stick unsalted butter

Steps:

  • Heat oven to 350 degrees. Trim and discard ends of squash, cut lengthwise into fourths and crosswise into 1/2 inch pieces. Place squash in a saucepan, cover with water, add a big pinch of salt, bring to a brisk simmer and cook until tender, about 10 minutes. Drain thoroughly. Place saucepan with squash back on stove (with burner turned off) and allow any excess moisture to evaporate (about 1 minute). Stir in 1/2 stick unsalted butter and American cheese (about 8 slices). Mix sugar, mayonnaise, salt and black pepper together and stir into squash mixture. Beat egg into squash mixture and place in a buttered oven proof baking dish (8 X 8 ). For topping: Mix 1/2 stick melted butter with the crushed club crackers together. Sprinkle cracker topping evenly over casserole and bake until squash mixture is firm and top is browned, about 30 0- 35 minutes.

KATHYJO'S BAKED BANANA SQUASH

I love yellow squash, of any kind. My mother used to make it for me and I just fell in love with that vegetable. Wish my own children liked it as well as me, so once in a while I will make one for me. I gave up trying to get them to try it, they will like it!!! It didn't work.. all the more for me!

1 small banana squash -cut in half or quarters
1/2 stick butter
1/2 tsp cinnamon-ground

Steps:

  • 1. Take your pieces of squash and wash them. Place in sprayed pan with the inside facing up. With fork, make small punctures over the inside of squash
  • 2. Melt butter and brush it over the squash flesh, and sprinkle the cinnamon over the butter.
  • 3. Place in oven at 350 degrees and bake, for about 40 minutes. Baste it several times with more butter.
  • 4. Test the squash with a fork or knife inserted and if it goes through and is all soft, then it is done. The outside layer of squash will be soft too. If not, bake a few more minutes until it is. I like mine to just begin to get a nice crust on the top.
  • 5. Take out of oven and let it cool a bit. It has a nice sweet flavor to it and the butter with cinnamon just makes it better. Delicious!!

1 1/4 to 1 1/2 pounds yellow squash
1/2 stick unsalted butter, cut into 1/2 inch pieces
1/2 cup shredded or diced American cheese (use Kraft American singles with milk - 8 slices - 2/3 ounce slices)
3 teaspoons sugar
1/2 cup mayonnaise (Hellmanns)
1/4 teaspoon salt
Ground black pepper - 12 grinds from pepper grinder
1 extra large egg
1/2 stick unsalted butter
2/3 sleeve Keebler club crackers crushed

Steps:

  • Heat oven to 350 degrees. Trim and discard ends of squash, cut lengthwise into fourths and crosswise into 1/2 inch pieces. Place squash into a large saucepan, cover with water, add a big pinch of salt, bring to a brisk simmer and cook until tender, about 10 minutes. Drain thoroughly. Place saucepan with squash back on stove (with burner turned off/or very low) and allow any excess moisture to evaporate (about one minute). Stir in 1/2 stick butter and American cheese. Mix sugar, mayonnaise, salt and black pepper together and stir into squash mixture. Beat egg and then stir into squash mixture and place in greased oven proof baking dish (8X8). Use unsalted butter for greasing. For topping, mix 1/2 stick unsalted melted butter and crushed club crackers together. Sprinkle cracker topping evenly over casserole and bake until squash mixture is firm and the top is browned, about 30 - 35 minutes.

1 acorn squash
4 tablespoons butter
1 tablespoon brown sugar
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
1 pinch ground cloves
1 pinch salt

Steps:

  • Preheat oven to 350 degrees F.
  • Grease a baking sheet and a baking dish.
  • Halve the squash lengthwise and clean.
  • Transfer the squash, cut side down, to the baking sheet, and bake the squash until it is tender, about 45 minutes.
  • Don't turn off the oven.
  • While the squash cooks, melt the butter, and stir in the remaining ingredients.
  • Keep the mixture warm until it is needed.
  • Arrange the squash, cut sides up, in the baking dish.
  • Spoon the butter and seasonings equally over the sections.
  • Bake the squash another 15 minutes, until it is very soft.
  • Serve the squash hot.
