BAKED SWEET POTATOES WITH MAPLE JALAPENO SOUR CREAM

Steps:

• Preheat oven to 450 degrees with a rack positioned in the center.
• Rub sweet potatoes with oil and salt. Bake directly on rack until soft when pierced, 40-45 minutes.
• Combine sour cream, maple syrup, jalapeno, lime juice, salt and Tabasco; and chill until ready to serve.
• Serve potatoes with sour cream mixture, bacon bits and scallions.

• Preheat oven to 450 degrees; line a baking sheet with aluminum foil. With a fork, pierce sweet potatoes all over; arrange on sheet. Bake until tender, 45 to 50 minutes.

• Bake the sweet taters on the grill till soft.Abought 45-65 minutes. Wile taters are baking.In a large mixing bowl. Combine all other ingredients. With a wire wisk.Mix every thing to gether. Mix very well..
• When sweet taters are baked and soft.Split them and top with mixture and serve warm.

MICHAEL'S GRANNY'S SOUR CREAM TATERS

Steps:

• Mix the package of Original Ranch mix into the sour cream. (If this is made a day ahead, it gets even better!).
• Wash the potatoes, and cut them into halves if they are very large new potatoes.
• Boil the potatoes in salted water, until soft (about 10-15 minutes).
• When potatoes are soft, drain them in a colander.
• Put the potatoes back in the pot after draining, add the butter, the evaporated milk, salt and pepper to your taste, and stir together.
• Add in the sour cream mixture, and the chopped green onions.
• Cover and let sit for 10-15 minutes.
• Heat over a medium-low heat for about 3 minutes, stirring often, until all is hot again.
• Serve.
