- Spread half of mashed potatoes into bottom of a greased 2 1/2 qt.greased casserole.
- Top with half of hot dogs and half of sauerkraut.
- Repeat layers.

HOT DOGS, SAUERKRAUT, AND POTATOES
This isn't an actual recipe, but it's a description of a meal my mother used to fix many years ago. She made it to use up leftover hot dogs. Recently I saw a similar one on "Zaar but it didn't have the potatoes. The amounts listed are only approximate because I was required to list something.

Steps:
- Boil peeled potatoes (cut in quarters) until tender but not mushy. Drain, and add to the pan the amount of sauerkraut for the number of people you've planned to feed. Also add hot dogs cut into 1 inch pieces. Heat everything, but watch carefully to avoid burning. Add butter if desired. We always ate this with mustard for the sauerkraut and hot dogs.
- The next day my mother would heat leftovers in a frying pan, letting the sauerkraut get brown.

A delicious dish--great for a fast supper, which I am listing in my new cookbook of fast eats. Great with saltine crackers, pretzels, or potato chips. You can kick this up a notch with dried chilies.

- Put kraut in saucepan and heat to boiling.
- Add hot dogs sliced 1/4-inch thick. Heat till all boils.
- You can add dried chilies if wanted. Serve with crackers, pretzels, potato chips, or use this for a side dish.

This is so simple to make but tastes so good! My mom made this for us when we were younger and still a favorite of mine. Smoked sausage could also be used but I prefer the hot dogs. Serve this over mashed potatoes for total comfort food.

- Empty the bag of fresh sauerkraut into a deep pan. Add water and hot dogs. Top this off with the tube of refrigerator bisquits. Bring to a boil. Reduce heat to medium and cover. Cook for about 15 minutes. Bisquits are now fluffy like dumplings. Serve with mashed potatoes. Enjoy!

- Drain sauerkraut and add to skillet. Lay the hot dogs on top of the sauerkraut, cover and cook until hot dogs are plump and juicy approximately 20 minutes. Gently flip hot dogs while cooking.
- Put bag of frozen potatoes in the microwave and cook according to package directions. Be very careful when taking package out of microwave as it is very hot.
- Empty package of potatoes into your mixer bowl or a large bowl if using hand mixer. Add butter and milk and mix until creamy. More milk and butter can be added but I do not add salt. Place potatoes in medium pot to warm thru. Serve with sauerkraut on top of potatoes or on the side with the hot dogs.
