Steps:
- Preheat the oven to 350°F
- Traditionally, this is baked in a 12" round pan. You may use a 9"x13" pan.
- Grease the sides and bottom of the pan and set aside.
- Combine the wet ingredients (yogurt, Kasseri cheese, Kefalotyri cheese, oil, eggs, and lemon juice).
- In another bowl, sift together the cornmeal with the flour, baking soda, baking powder, sugar, and salt.
- Add the wet ingredients to the dry and mix until it is a soft, batter-like dough.
- Spread the batter in the pan and smooth with the spatula.
- Sprinkle with the Feta cheese and scatter the pieces of butter evenly over the top of the batter.
- Bake for 40 minutes, or until it is a deep golden brown. If it gets too brown before the 40 minutes are up, cover with aluminum foil and continue baking.
- Allow to cool 15 minutes before serving.

- Combine sugar, water, lemon juice, and cinnamon in a medium-sized saucepan, and bring to a boil. Simmer for 20 minutes.
- Remove from heat and add honey. Return syrup to low heat and simmer for 2 minutes. Remove from heat.
- Preheat oven to 375*.
- Sift all dry ingredients into a large bowl. Combine the honey, orange juice, warm water, and warm oil. Stir into dry mixture, beating until smooth.
- Fold in orange peel and currants. Pour batter into a well-greased 7x7 by 2-inch pan and bake for 25 minutes, or until golden.
- Leave in pan to cool, then pour warm Basic Sweet Syrup over it or sprinkle with confectioner's sugar. Cut into squares and serve immediately.
- Note: Syrup can be stored in the refrigerator for 1 month. To use, bring to room temperature.

- Heat oven to 180C/fan 160C/gas 4. Pour cold water over the bread and set aside to soak.
- Meanwhile, fry the onions in the butter, stirring regularly for 10 mins until they are soft and starting to colour. Add the garlic and beef and stir well, crushing the mince into fine grains until it changes colour. Stir in the curry paste, herbs, spices, chutney, sultanas and 2 of the bay leaves with 1 tsp salt and plenty of ground black pepper.
- Cover and simmer for 10 mins. Squeeze the water from the bread, then beat into the meat mixture until well blended. Tip into an oval ovenproof dish (23 x 33cm and about 5-6cm deep). Press the mixture down well and smooth the top. You can make this and chill 1 day ahead.
- For the topping, beat the milk and eggs with seasoning, then pour over the meat. Top with the remaining bay leaves and bake for 35-40 mins until the topping is set and starting to turn golden.

Steps:
- Cake: Cream butter and then cream in sugar with 6 beaten egg yolks.
- Add the muffin mix, milk, baking powder, salt and extract. Stir well by hand ( not with mixer ). Beat egg whites stiff and fold into mixture. Place mixture in a greased 10 x 14 inch pan.
- Bake on a 350F oven about 40 minutes or tested done. Remove from oven and cool in pan until warm.
- Cut into squares or diamonds.
- Pour on hot syrup.
- Sprinkle with almonds.Garnish with maraschino cherries.
- Note: make syrup while cake is baking.
- Bring all syrup ingredients to a boil and boil until a thickened syrup.( maybe about 20 minutes or less )
