Bob Evans® Mediterranean Pasta Salad image

Full of Mediterranean flavors, this pasta salad includes a medley of bacon, mozzarella, tomatoes, olives, and sun-dried tomatoes.

1 (2.1 ounce) package Bob Evans® Express pre-cooked bacon
8 ounces bow tie pasta
½ cup sun-dried tomato salad dressing (can also use Italian or Greek style dressing)
8 ounces fresh mozzarella, cut into small cubes
1 cup cherry tomatoes, cut in half
⅓ cup kalamata olives, chopped
4 piece (blank)s sun dried tomatoes in oil, drained and chopped

Steps:

  • Microwave bacon according to package directions. Cool slightly and then chop. Meanwhile cook pasta according to package directions and drain. In a large serving bowl, combine all ingredients and stir well. Serve warm.
