- Heat waffle iron; grease with vegetable oil or shortening.
- Stir ingredients until blended. Pour onto center of hot waffle iron. Close lid of waffle iron.
- Bake about 5 minutes or until steaming stops. Carefully remove waffle.

BLUEBERRY WAFFLES

Steps:
- Heat waffle iron. Drain Blueberries, reserving liquid; rinse blueberries and set aside. Stir muffin mix (dry from muffin mix), water, oil and egg yolks in medium bowl just until blended.
- Beat egg whites in small bowl with electric mixer on high speed until soft peaks form. Fold blueberries and egg whites into batter. Pour batter from cup or pitcher onto center of hot waffle iron.
- Bake until steaming stops. Carefully remove waffle with fork. Heat reserved blueberry liquid and syrup. Serve syrup with waffles.

- Preheat a regular waffle iron according to manufacturer's instructions.
- Beat milk, egg, sugar, and vanilla together in a large mixing bowl until completely combined. Add baking mix and beat until incorporated; some lumps are okay as long as they are no bigger than a pea. Transfer batter to a liquid measure.
- Spray the top and bottom of the preheated waffle iron with cooking spray. Slowly pour in enough batter to cover the bottom of the iron, being careful not to let if overflow.
- Close the lid and cook until waffle is golden brown and the iron stops steaming, about 5 minutes. Repeat to cook remaining waffles.

BLUEBERRY WAFFLES
These are my 2 blueberry lovin' guys most favorite waffle. They will even eat them with blueberry syrup! I always double this and if there are any left they go in the freezer. DBF Rick will eat these like a cookie and likes them hot and crispy with a scoop of ice cream on top!

- Sift together dry ingredients.

BLUEBERRY WAFFLES WITH FAST BLUEBERRY SAUCE
I am fortunate to have four blueberry bushes in my back yard, and they supply me with fresh blueberries all summer long. This is one of the recipes that I use to help use up the massive amount of berries that I pick each summer.

- In a medium bowl, whisk together egg yolks and milk. Stir in flour, baking powder and salt. Stir in butter, and set mixture aside for about 30 minutes.
- Preheat a lightly greased waffle iron.
- Fold egg whites and 2/3 cup blueberries into the mixture. Scoop portions of the mixture into the prepared waffle iron, and cook until golden brown.
- To prepare the sauce, in a medium saucepan over medium heat, mix 1 1/2 cups blueberries, honey and 1/4 cup orange juice. Bring to a boil. Mix remaining orange juice and cornstarch in a small bowl, and stir into the blueberry mixture. Stir constantly until thickened. Serve warm over waffles.
