Sugar and spice and everything nice! Bake a sweet loaf with blueberries and oats too.

2/3 cup packed brown sugar
3/4 cup milk
1/2 cup vegetable oil
2 eggs
2 1/4 cups Gold Medal™ all-purpose flour
1 cup quick-cooking or old-fashioned oats
3 teaspoons baking powder
1 teaspoon ground cinnamon
1/4 teaspoon salt
1 cup fresh or Cascadian Farm® organic frozen blueberries (thawed and drained)

Steps:

  • Heat oven to 350°F. Grease bottom only of 8- or 9-inch loaf pan.
  • In large bowl, mix brown sugar, milk, oil and eggs with spoon. Stir in remaining ingredients except blueberries; beat 30 seconds. Fold in blueberries. Pour into pan. Sprinkle with additional oats if desired.
  • Bake 45 to 55 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes. Loosen sides of loaf from pan; remove from pan to wire rack. Cool completely, about 2 hours, before slicing. Wrap tightly and store at room temperature up to 4 days, or refrigerate up to 10 days.

2 cups all-purpose flour
1 cup quick oats
1/2 cup sugar
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
6 tablespoons softened butter
2 slightly beaten eggs
1 cup milk
1/4 cup light corn syrup
1 cup blueberries

Steps:

  • Heat oven to 350.
  • Grease a nd flour a 9x5x3" loafpan.
  • In a large mixing bowl,combine the first 7 ingredients.
  • Cut in butter,blend until mixute resembles coarse meal.
  • Mix the milk,eggs& corn syrup,combining well.
  • Add to first mixture.
  • Stir just until it is all moistened.
  • Add in berries.
  • Pour the batter in the loafpan.
  • Bake 1 hour,10 minutes or until toothpick in center comes out clean.
  • When done,let bread cool for at least 10 minutes before removing.
  • Let cool on wire rack.

2 cups all-purpose flour
1 cup quick-cooking rolled oats
3/4 cup sugar
2 teaspoons baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
1 1/4 cups skim milk
1/3 cup oil
2 teaspoons vanilla
1 teaspoon grated lemon, rind of
2 eggs, slightly beaten
1 cup blueberries

Steps:

  • Heat oven to 350 degrees. Grease bottom only of 9x5 inch loaf pan.
  • Lightly spoon flour into measuring cup; level off. In large bowl, combine flour, rolled oats, sugar, baking powder, baking soda and salt; mix well.
  • In small bowl, combine milk, oil, vanilla, lemon peel and eggs; blend well. Add to dry ingredients; stir just until dry ingredients are moistened.
  • Gently fold in blueberries. Pour into greased pan.
  • Bake at 350 for 50 to 60 minutes or until toothpick inserted in center comes out clean. Cool 10 minutes; remove from pan. Cool completely. Wrap tightly and store in refrigerator.

  • Preheat the oven to 375°F. Spray a 9×5-inch loaf pan with baking spray or canola oil and line with parchment paper, or lightly butter the pan and dust with a spoonful of flour.
  • In a large mixing bowl, whisk the flour, sugar, baking powder, and salt. In a separate bowl, use a fork to mix together the yogurt, eggs, melted butter, and vanilla, then fold into the dry ingredients. Mix in the oats then gently fold in the blueberries, reserving a few to dot the top of the batter. The batter should be thick and a little sticky.
  • Scrape the mixture into the loaf pan. Bake for 45-55 minutes or until golden brown and when a toothpick inserted into the bread comes out clean. Remove from the oven and cool in the pan for 10 minutes, then transfer to a wire rack to continue cooling. Serve warm or at room temperature. The bread will be more firm after it has cooled completely.
