CHICKEN CORDON BLEU CASSEROLE
You can make a delicious baked Chicken Cordon Bleu casserole. It's so much easier than making traditional Chicken Cordon Bleu!

Steps:
- Preheat oven to 350 degrees.
- Spray a 9 X 13-inch casserole dish with non-stick spray.
- Combine soup and milk in the dish.
- Place the chicken into the dish.
- Sprinkle salt and pepper on the chicken breasts.
- Put a slice of ham on top of each chicken breast.
- Top with cheese slices.
- Bake uncovered at 350 degrees for 40 to 45 minutes.
- Melt the butter in a small saucepan over medium heat.
- Add half of the milk and whisk until well blended.
- Add the remaining milk, Dijon mustard, and Parmesan cheese.
- Cook for about 3 minutes, whisking constantly, until the mixture starts to thicken.
- Remove the sauce from the heat.
- Season with salt and pepper to taste.

- Preheat oven to 350° F. Grease a 9x13-inch baking dish; set aside.
- In a small bowl, combine melted butter and breadcrumbs. Set aside.
- In a large pot of salted boiling water, cook pasta according to package instructions for 1 minutes less than al dente. Drain.
- In a large bowl, whisk together condensed soup, milk, Dijon mustard, salt and pepper. Fold in cooked pasta, chicken, and ham.
- Transfer pasta mixture to prepared dish. Top with Swiss cheese and sprinkle with the buttered breadcrumbs.
- Cover and bake for 20 minutes.
- Remove cover and bake for an additional 10-15 minutes, or until top is golden brown and dish is heated through.

Steps:
- 1. Cook the raw vegetables in the microwave until tender or saute in butter until tender.
- 2. Cut the Velveeta into small cubes. Place in a microwavable bowl with the 2 cans of Rotel tomatoes and set aside. Cook the cheese and the Rotel in the microwave for about 5 mins.
- 3. Continue to cook in 5 min intervals until it is melted and combined by stirring with the Rotel tomatoes.
- 4. Stir in the cooked vegetables, cooked chicken, water chestnuts, and black olives. Stir until all is mixed. Add the peas and toss gently. Mix with the melted cheese mixture.
- 5. Place the cooked vermicelli into a 9x13 casserole that has been coated with cooking spray.
- 6. Top with the chicken and cheese mixture.
- 7. Bake at 350 degrees for 30 mins.
- 8. Remove from the oven and sprinkle with shredded cheddar cheese. Return to the oven until bubbly.

I've been making this dish for years and I still get compliments every time I make it. It makes enough to feed a crowd and since it's just my husband and me, I mostly take it to our church dinners and family gatherings.

- Preheat oven to 350 degrees. In a medium sized bowl blend together the sour cream, chicken soup, mushroom soup, chicken broth, Lemon vest and lemon juice,

- 3. Dice onion, pepper and celery. Then saute in butter.
