Warm Blue Cheese Dip with Garlic and Bacon image

Even people that don't like blue cheese love this wonderful hot dip. It can be served with vegetables, but I find that people like it best with French bread.

Ingredients

7 slices bacon
2 cloves garlic, peeled and minced
1 (8 ounce) package cream cheese, softened
¼ cup half-and-half
4 ounces blue cheese, crumbled
2 tablespoons chopped fresh chives

Steps:

Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Remove bacon from skillet, drain on paper towels and crumble.
Place garlic in hot bacon grease. Cook and stir until soft, about 1 minute. Remove from heat.
Preheat oven to 350 degrees F (175 degrees C). Place cream cheese and half-and-half in a medium bowl. Beat with an electric mixer until blended. Stir in bacon, garlic, blue cheese and chives. Transfer mixture to a medium baking dish.
Bake covered in the preheated oven 30 minutes, or until lightly browned.

Ingredients

1 (8-ounce) tub whipped cream cheese
3/4 cup crumbled Danish blue cheese
3/4 cup sour cream
2 tablespoons mayonnaise
1 teaspoon prepared horseradish
2 tablespoons minced onion
1 tablespoon Italian seasoning
Dash of hot pepper sauce
6 slices peppered bacon, cooked until crisp and crumbled
Apple wedges, cut up raw vegetables, and/or Wheat Thins

Steps:

1. Put the cream cheese, blue cheese, sour cream, mayonnaise, horseradish, onion, Italian seasoning, and pepper sauce in a food processor. Pulse until very smooth. Add the bacon and pulse until just blended.
2. Transfer to a bowl, cover, and refrigerate until the flavors are well integrated, at least one hour or overnight.
3. Serve with apples, vegetables, and/or Wheat Thins.

In a large bowl, use a hand-mixer to combine the cream cheese and mayonnaise until smooth. Add in half of the blue cheese and all of the garlic powder, and continue to beat until combined.
Fold in the bacon, green onions or chives, and remaining blue cheese crumbles. Once evenly distributed, transfer the dip to the prepared baking dish.
Bake until golden brown on top, about 15-18 minutes. Top with additional green onions or chives and serve warm with bread, crackers, chips, and/or vegetables for dipping.
