1 head garlic
1 tablespoon olive oil
kosher salt & freshly ground black pepper
5 cups cold water
salt
2 cups regular grits
4 tablespoons unsalted butter
8 ounces crumbled blue cheese
1 large dashes Tabasco sauce
2 eggs, beaten
1/4 cup heavy cream

CREAMY CHEDDAR GRITS

Creamy Cheddar Grits image

Provided by Ina Garten

Categories     side-dish

Time 1h

Yield 6 servings

Number Of Ingredients 8

2 teaspoons kosher salt
1 cup fine quick-cooking grits (not instant)
1 1/4 cups half-and-half
2 tablespoons unsalted butter
1 1/2 cups grated aged sharp Cheddar cheese (4 ounces)
1/2 cup chopped scallions, white and green parts (4 scallions)
1/2 teaspoon freshly ground black pepper
Grated Cheddar and chopped scallions, for garnish

Steps:

  • Bring 4 cups of water to a boil in a heavy 4-quart saucepan. Add the salt, then slowly add the grits in a thin, steady stream, stirring constantly with a wooden spoon. Reduce the heat to low and simmer, stirring occasionally, until the grits thicken, about 5 to 7 minutes.
  • Add the half-and-half and butter to the grits and stir. The mixture will seem thin but it will thicken as it cooks. Bring to a simmer, stirring occasionally. Cover the pot, reduce the heat to low, and cook, stirring occasionally for 45 minutes, until very smooth and creamy. Off the heat, stir in the Cheddar, scallions, and pepper. Season to taste and serve hot with a sprinkle of grated cheese and scallions.

  • In a medium saucepan over medium-high heat, bring water and half and half to a boil {watch it carefully as dairy has a tendency to bubble over when boiled.} Add salt.
  • Slowly whisk in grits. Reduce heat to medium low and continue to whisk continuously until substantially thickened, about 3-4 minutes.
  • Add blue cheese, liquid smoke and butter and continue to whisk until smooth and thickened to desired consistency. {I like my grits on the thicker side, but if you prefer a runnier texture you can add more liquid to achieve that.}

  • Combine the grits and water in a 3-quart saucepan and heat over medium-high heat. Whisk until the grits have a moment to become suspended in the water rather than sinking to the bottom of the pot – about 3 to 5 minutes.
  • Once the grits come to the boil, reduce the heat to very low and season with salt. Cook, covered but stirring regularly (every 5 to 10 minutes), for 30 to 40 minutes. If the grits become too dry, whisk in a little more warm water and continue to cook. When fully cooked, the grits should be tender and creamy.
  • Stir in the cheese, heavy cream and butter and season to taste with salt and lots of freshly ground black pepper. Let the grits cool to an edible temperature. Sprinkle chives on top and serve.
