I was enjoying a salad with strawberries and blue cheese when the idea hit me to stuff the strawberries and serve them as an appetizer. It worked out great, and the flavors blend so nicely. -Diane Nemitz, Ludington, Michigan

1/2 cup balsamic vinegar
3 ounces fat-free cream cheese
1/2 cup crumbled blue cheese
16 large fresh strawberries
3 tablespoons finely chopped pecans, toasted

Steps:

  • Place vinegar in a small saucepan. Bring to a boil; cook until liquid is reduced by half. Cool to room temperature. , Meanwhile, in a small bowl, beat cream cheese until smooth. Beat in blue cheese. Remove stems and scoop out centers from strawberries; fill each with about 2 teaspoons cheese mixture. Sprinkle pecans over filling, pressing lightly. Chill until serving. Drizzle with balsamic vinegar. ,

This recipe is from Diane Nemit, and shared in Taste of Home. I've fallen in love with blue cheese, and wanted to save and share! I have made a minor adjustment in the ingredients, but it is still basically the same.

1/2 c balsamic vinegar
3 oz cream cheese, softened
2 oz blue cheese, crumbled
16 strawberries, fresh
3 Tbsp pecans, toasted and finely chopped

Steps:

  • 1. Pour 1/2 cup balsamic vinegar into a small saucepan. Bring to a boil; cook until reduced by half. Cool to room temperature.
  • 2. In a small bowl, beat the cream cheese until smooth. Beat in the crumbled blue cheese.
  • 3. Remove the stems and scoop out the centers from the strawberries. Fill each berry with about 2 tsp cheese mixture. Sprinkle the chopped pecans over the filling, pressing firmly. Chill until serving.
  • 4. Drizzle with the balsamic vinegar before serving.
