LETTUCE WEDGES WITH BLUE CHEESE DRESSING
Steps:
- In a medium mixing bowl, combine the lemon juice, mayonnaise, buttermilk, sour cream, garlic powder and onion powder. Whisk the mixture together until smooth. Add the cheese and mix just until blended. Chill in an airtight container in the refrigerator at least 2 hours before serving.
- Core and quarter each head of lettuce. Serve a generous dollop of dressing over each lettuce wedge and top with the bacon and tomato. Season with pepper.

- Mash yogurt with blue cheese, lemon juice, a pinch of salt, and a grinding or two of pepper. Taste and adjust the seasoning, adding more lemon juice if necessary.
- Place each wedge of iceberg lettuce on a plate, drizzle with dressing and sprinkle with nuts if using.

ICEBERG WEDGE
Steps:
- Remove outer leaves of lettuce and wash thoroughly in cold water. Drain and pat dry with paper towels then split into wedges and arrange on plates. Scatter grape tomato halves over and around the lettuce.
- Make dressing by combining mayonnaise and sour cream in a large mixing bowl. Squeeze in fresh lemon juice, fold in blue cheese and chives and season with salt and pepper. Pour dressing over wedge and grape tomatoes. Drizzle with a little extra-virgin olive oil and top with chives.

This recipe comes from either Bon Appetit or Gourmet magazine. I've had it so long I can't remember!! It makes a pretty presentation for a dinner party or it's just plain delicious at your family supper table.

- Core the lettuce, wash, and set aside to drain well. Cream the cheese, milk and spices with an electric mixer. Stuff the core of the head of lettuce with the cheese mixture, wrap in plastic wrap and refrigerate, preferably overnight. To serve, cut in six wedges, lay on a salad plate, garnish with grape tomatoes, cuke slices, purple onion, etc. and drizzle with your favorite dressing.

- Make the dressing in a medium-sized bowl by combining the buttermilk, soured cream, mayonnaise, lemon juice and 50g of the blue cheese. Season and stir through the chives. Chill until ready to serve.
- When ready to serve, pour half the dressing over the lettuce wedges and crumble over the remaining blue cheese and a scattering of walnuts. Serve the rest of the dressing on the side.

- Real Talk: You can use any kind of lettuce that’s able to hold some weight and can be cut to be handheld, like butter or iceberg—even kale or chard if that’s what you have on hand. Also: Thick-cut bacon is particularly awesome here; just make sure it gets extra-crispy before serving.
- Cook bacon in a medium saucepan over medium-low heat, turning often, until brown and crisp and fat is rendered, 8–10 minutes. Transfer to paper towels and let cool (reserve rendered fat for another use, or discard, though that’d be sad). Chop bacon and set aside.
- Using a fork, mix yogurt, garlic, lemon juice, honey, and half of blue cheese in a medium bowl, mashing away to break up cheese. Season with salt and pepper. Spoon 1–2 tsp. yogurt mixture into centers of lettuce leaves, then top with evenly with bacon and remaining cheese. Season with salt and pepper. Transfer lettuce leaves to a fancy serving platter you thought you’d never use and top with chives. Squeeze lemon wedges over and serve.
