BLUE CHEESE MEATLOAF
My family loves blue cheese - my husband will even eat it right from the container! One night, I was looking for a new way to use ground beef and this is what I came up with. It's now our favorite winter comfort food. We like to serve it with Parmesan Cous Cous.

Steps:
- Combine 1 cup bread crumbs and 1/4 cup crumbled blue cheese.
- Add ground beef, egg, onion, salt and pepper.
- Blend thoroughly.
- Shape into a round loaf.
- With a spoon, make a crater-like depression in top of loaf.
- Fill depression with Blue Cheese Dressing.
- If desired, sprinkle more crumbled blue cheese on top.
- Bake at 350 for 1 hour.

- Preheat oven to 350°. In a large bowl, combine the first six ingredients. Add beef; mix lightly but thoroughly. Shape into an 8x4-in. loaf in a greased 11x7-in. baking dish., Bake 20 minutes. Spread wing sauce over top; sprinkle with cheese. Bake until a thermometer reads 160°, 20-30 minutes longer. Let stand 5 minutes before slicing.

- In a small skillet, heat oil over medium-high heat. Add carrot and onion; cook and stir until tender. Cool slightly. , In a large bowl, combine the bread crumbs, crumbled bacon, eggs, Worcestershire sauce, seasonings and carrot mixture. Add beef; mix lightly but thoroughly., Shape into an 8x4-in. loaf in an ungreased 13x9-in. baking dish. Bake, uncovered, at 350° for 1-1/4 to 1-1/2 hours or until a thermometer reads 160°. , In a small bowl, combine the topping ingredients; mix well. Pat onto meat loaf; let stand for 10 minutes before serving. Remove to a platter.

- Preheat oven to 375 and line a baking sheet with parchment paper
- Cook onion in 1 tbsp evoo until translucent and then add garlic - remove from heat and allow to cool
- In a large bowl, combine: pork, beef, egg, breadcrumbs, onion-garlic mixture, salt and pepper
- Mix everything together with your hands and divide into 4 equal portions; shape each portion into small loaves and place on the backing sheet
- use your fingers to create a small hallow down the middle of each loaf - fill with blue cheese and seal the meat loaf so the cheese is completely enclosed
- Meanwhile, in a small blow combine: ketchup, sugar, and a few splashes of Worcestershire sauce
- Spread the mixture over each meatloaf
- Bake for 22 min ** let the meatloaves sit for 5 min before serving

BUFFALO CHICKEN MEATLOAF

- For the sauce: Whisk together the ketchup and hot sauce in a small bowl and set aside.
- For the meatloaf: Preheat the oven to 350 degrees F. Grease a 9-by-5-by-3-inch loaf pan with cooking spray and set aside.
- Melt the butter in a medium saute pan over medium-high heat. Once melted, saute the celery and onion until softened, 3 to 5 minutes. Transfer the mixture, with the drippings, to a large bowl. Add the hot sauce to the bowl and stir to combine. Add the chicken, blue cheese, salt, pepper, eggs and 1 1/2 cups of the panko and mix until well combined.
- Press the mixture into the prepared loaf pan, pressing more in the center of the loaf to create a divot. This will allow the meatloaf to bake evenly and not create a mound after it is baked. Spread the sauce over the top of the meatloaf. Mix the Parmesan with 1/2 cup of the panko and sprinkle the mixture on top of the sauce. Bake until the center is set and the top is golden brown, 45 minutes to an hour. Let rest about 15 minutes before cutting to serve.
- Meanwhile, toast the remaining 1/4 cup panko in a dry pan until lightly golden and set aside.
- Garnish the meatloaf slices with the toasted panko and chopped celery leaves.

- FIRST WITH FOOD PROCESSOR OR A MINI CHOPPER WILL MAKE HOMEMADE BREAD CRUMBS. IN A LARGE MIXING BOWL ADD FIRST 4 INGREDIENTS AND MIX WITH WIRE WHISK UNTIL WELL BLENED. NEXT ADD GROUND BEEF, AND THE NEXT 4 INGRED- IENTS MIX WELL UNTIL EVERY-THING IS WELL BLENDED TOGETH- ER. NEXT ADD BLUE CHEESE CAREFULLY SO AS NOT TO OVER MIX, BLEND WELL. NOW IN TWO LOAF PANS GREASED, ADD MEAT MIXTURE TO LOAF PANS. PUT A SLIT INTO THE MIDDLE OF MEAT SO AS TO POUR THE ITALIAN DRESSING 1/2 IN ONE AND 1/2 INTO THE OTHER PAN. THEN ADD MAPLE SYRUP OVER EACH, 1/2 ON ONE 1/2 ON THE OTHER AS FOR A GLAZE. PREHEAT OVEN TO 350*F FOR 45 MINS. TO 1 HOUR OR UNTIL YOU SEE THE MEAT PULL AWAY FROM THE SIDES OF THE PANS. REMOVE FROM OVEN. LET STAND FOR AT LEAST 20 MINS. BEFORE SERVING FOR EASY CUTTING. MAKES 4 TO 8 SERVINGS. I SERVED THIS DISH WITH STEAMED ASPARAGUS AND HERBED ROASTED LITTLE RED POTATOES.

- Heat the butter in a large skillet and add the onion and green pepper, saute' for 5 minutes.Add 1/4 cup of the chili sauce and water, cook for 4 minutes more.
- Pour the mixture into a 9x5x3 inch loaf pan. Mix the remaining 1/4 cup chili sauce with the rest of the ingredients in a large bowl.
- Mix well and add into the loaf pan on top of the onion and green pepper.Bake in a preheated oven @375 for about 1 1/2 hours.

- Combine bread, milk, one egg and blue cheese.
- Set aside.
- Combine meat, soft bread crumbs, onion, parsley, ketchup, Worcestershire sauce, 2 eggs, salt and pepper.

BLUE CHEESE, SPINACH MEAT LOAF MUFFINS
Moist, flavorful and absolutely one of the best meat loaf recipes yet! Using a large muffin pan allows the mini meat muffins to cook faster and makes portion sizing easier. I like to serve this with sweet potatoes or butternut squash. I think the mini meat loaves taste great the next day as they are easy to put away and re-heat. Try making a meat loaf sandwich out of them too.
