My family loves blue cheese - my husband will even eat it right from the container! One night, I was looking for a new way to use ground beef and this is what I came up with. It's now our favorite winter comfort food. We like to serve it with Parmesan Cous Cous.

1 cup breadcrumbs
1/4 cup crumbled blue cheese
1 lb ground beef
1 egg (slightly beaten)
2 tablespoons chopped onions
1/2 teaspoon salt
1 dash pepper
blue cheese dressing

Steps:

  • Combine 1 cup bread crumbs and 1/4 cup crumbled blue cheese.
  • Add ground beef, egg, onion, salt and pepper.
  • Blend thoroughly.
  • Shape into a round loaf.
  • With a spoon, make a crater-like depression in top of loaf.
  • Fill depression with Blue Cheese Dressing.
  • If desired, sprinkle more crumbled blue cheese on top.
  • Bake at 350 for 1 hour.

1 teaspoon canola oil
1/2 cup shredded carrot
1/2 cup finely chopped onion
1 cup soft bread crumbs
1/2 pound bacon strips, cooked and crumbled
2 large eggs, lightly beaten
4 teaspoons Worcestershire sauce
2 teaspoons garlic powder
2 teaspoons pepper
1 teaspoon salt
2 pounds ground beef
TOPPING:
3/4 cup crumbled blue cheese
2 tablespoons minced fresh sage
2 tablespoons minced fresh chives

Steps:

  • In a small skillet, heat oil over medium-high heat. Add carrot and onion; cook and stir until tender. Cool slightly. , In a large bowl, combine the bread crumbs, crumbled bacon, eggs, Worcestershire sauce, seasonings and carrot mixture. Add beef; mix lightly but thoroughly., Shape into an 8x4-in. loaf in an ungreased 13x9-in. baking dish. Bake, uncovered, at 350° for 1-1/4 to 1-1/2 hours or until a thermometer reads 160°. , In a small bowl, combine the topping ingredients; mix well. Pat onto meat loaf; let stand for 10 minutes before serving. Remove to a platter.

Moist, flavorful and absolutely one of the best meat loaf recipes yet! Using a large muffin pan allows the mini meat muffins to cook faster and makes portion sizing easier. I like to serve this with sweet potatoes or butternut squash. I think the mini meat loaves taste great the next day as they are easy to put away and re-heat. Try making a meat loaf sandwich out of them too.

1 ½ pounds lean ground beef
¾ cup crumbled blue cheese
½ cup diced onion
½ cup Italian bread crumbs
½ cup chopped fresh spinach
2 eggs
2 tablespoons Worcestershire sauce

Steps:

  • Preheat an oven to 375 degrees F (190 degrees C). Grease a large muffin pan with cooking spray.
  • Combine ground beef, blue cheese, onion, bread crumbs, spinach, eggs, and Worcestershire sauce in a large bowl until well blended. Divide meat mixture evenly into the prepared muffin pan.
  • Bake in the preheated oven until no longer pink in the center, about 30 minutes. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

Heavenly Meatloaf with Blue Cheese, Mushrooms, and Spinach image

A slightly different recipe using a combination of ingredients, this meatloaf tastes absolutely divine! Instead of the usual ketchup, tomato paste, and brown sugar, this meatloaf is more of an 'upscale' version of the traditional. Best served with mashed potatoes and asparagus. This is my own personal creation! I substitute ground deer meat occasionally instead of beef, only because I have a freezer full, and it's organic!

2 eggs
1 cup finely chopped fresh spinach
½ cup sliced fresh mushrooms
½ cup plain bread crumbs
½ small yellow onion, finely chopped
⅓ cup 2% milk
⅓ cup crumbled blue cheese
2 tablespoons reduced-sodium Worcestershire sauce
1 tablespoon minced garlic
¼ teaspoon cayenne pepper
1 pinch dried oregano
1 pinch dried basil
salt and ground black pepper to taste
1 ½ pounds extra-lean ground beef

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a loaf pan.
  • Mix eggs, spinach, mushrooms, bread crumbs, onion, milk, blue cheese, Worcestershire sauce, garlic, cayenne pepper, oregano, basil, salt, and black pepper together in a large bowl. Add ground beef and mix thoroughly with your hands; pack into prepared loaf pan.

8 slices white bread
1/4 cup milk
4 ounces blue cheese
1 egg, beaten
1 lb ground beef
1/2 lb ground pork
2 cups soft breadcrumbs
1/2 cup chopped onion
3 tablespoons parsley
3 tablespoons ketchup
1 tablespoon Worcestershire sauce
2 eggs, beaten
salt
pepper

Steps:

  • Break up 8 slices of bread.
  • Combine bread, milk, one egg and blue cheese.
  • Set aside.
  • Combine meat, soft bread crumbs, onion, parsley, ketchup, Worcestershire sauce, 2 eggs, salt and pepper.
  • Shape into 15x12" rectangle on wax paper.
  • Spread blue cheese mixture on top of meat.
  • Leave 1" margin on each side.
  • Roll from short side using wax paper to lift.
  • Press edges to seal.
  • Place seam side down in greased loaf pan.
  • Bake at 375 for 1 hour.

Steps:

  • FIRST WITH FOOD PROCESSOR OR A MINI CHOPPER WILL MAKE HOMEMADE BREAD CRUMBS. IN A LARGE MIXING BOWL ADD FIRST 4 INGREDIENTS AND MIX WITH WIRE WHISK UNTIL WELL BLENED. 2 tablespoons butter
1 medium onion, chopped
1 green pepper, chopped
1/2 cup chili sauce
3 tablespoons water
1 1/2 lbs ground beef
1/4 lb sweet Italian sausage
1/2 teaspoon salt
1/2 teaspoon sage
1/2 teaspoon Dijon mustard
1/4 teaspoon pepper
2 cups dry breadcrumbs
1 cup milk
2 eggs, beaten
3/4 cup crumbled blue cheese

Steps:

  • Heat the butter in a large skillet and add the onion and green pepper, saute' for 5 minutes.Add 1/4 cup of the chili sauce and water, cook for 4 minutes more.
  • Pour the mixture into a 9x5x3 inch loaf pan. Mix the remaining 1/4 cup chili sauce with the rest of the ingredients in a large bowl.
  • Mix well and add into the loaf pan on top of the onion and green pepper.Bake in a preheated oven @375 for about 1 1/2 hours.
