WARM BLUE CHEESE DIP WITH GARLIC AND BACON
Even people that don't like blue cheese love this wonderful hot dip. It can be served with vegetables, but I find that people like it best with French bread.

Steps:
- Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Remove bacon from skillet, drain on paper towels and crumble.
- Place garlic in hot bacon grease. Cook and stir until soft, about 1 minute. Remove from heat.
- Preheat oven to 350 degrees F (175 degrees C). Place cream cheese and half-and-half in a medium bowl. Beat with an electric mixer until blended. Stir in bacon, garlic, blue cheese and chives. Transfer mixture to a medium baking dish.
- Bake covered in the preheated oven 30 minutes, or until lightly browned.

Steps:
- Preheat oven to 350 degrees.
- Bake walnuts in single layer in an shallow pan for 6-8 minutes or until toasted and fragrant., stirring after 3 minutes.
- Cook bacon in skillet over medium high heat, stirring often, 10 minutes or until crisp. Remove bacon, and drain on paper towels, reserving 1 tbsp drippings in skillet. Add minced garlic to hot drippings and saute for 1 minute.
- Beat cream cheese at medium speed with an electric mixer until smooth. Add half-and-half, beating until combined. Stir in bacon, garlic, blue cheese, and chives. Spoon mixture into 1 quart baking dish.
- Bake at 350 degrees for 20 minutes or until golden and bubbly. Sprinkle with walnuts.
- Serve with assorted crackers.

- 1. Put the cream cheese, blue cheese, sour cream, mayonnaise, horseradish, onion, Italian seasoning, and pepper sauce in a food processor. Pulse until very smooth. Add the bacon and pulse until just blended.
- 2. Transfer to a bowl, cover, and refrigerate until the flavors are well integrated, at least one hour or overnight.
- 3. Serve with apples, vegetables, and/or Wheat Thins.

Using a slotted spoon, remove to paper towels; drain, reserving 1/2 teaspoon drippings., Saute garlic in reserved drippings for 1 minute; transfer to a small bowl. - 2. Lay the slices of bacon on the rack and place in the oven. Cook until crisp and done; remove and reserve about 1 teaspoon of the bacon drippings from skillet. Crumble the bacon.
