BLUE CHEESE ASPARAGUS ROLLUPS
These are lovely appetizers to serve and so easy to make and not too expensive ingredients. You may freeze them before baking just allow a little longer in the oven when baking from the frozen state. I have just made these again using square white sandwich bread. I needed 25 slices of bread, put a generous tbsp of the filling on each, cut them in two and ended up with 50 appies. If using the sandwich bread you will need few extra asparagus but most aaparagus are longer than the slice of bread so you get 1 1/2 from most spears

MARINATED ASPARAGUS WITH BLUE CHEESE
Asparagus marinated in vinaigrette and dotted with cheese makes an awesome side. We're blue cheese fans, but you might like Parmesan or feta. -Susan Vaith, Jacksonville, Florida

These roll-ups are simply divine. A friend shared the recipe after serving them at a church brunch, where they disappeared fast. They make a unique finger food, a side dish at supper or a lovely lunch served with soup.

ASPARAGUS WITH BLUE CHEESE SAUCE
MY SISTER introduced me to this recipe several years ago because she knows I love blue cheese. This dish is a simple way to dress up asparagus, giving it a tangy taste altogether different from the usual cheese sauce. I make it every spring when we have fresh homegrown asparagus. -Leona Luecking West Burlington, Iowa

ASPARAGUS ROLLUPS
A do-ahead appetizer. You can 'wow' them with this one. I found this at Southern Living and this is the recipe as written. I like to use about half of the amount of blue cheese called for and I just use a 'swipe' on the bread.. not 2 tablespoons full.
