A wonderful twist to egg salad - add cooked crumbled bacon and serve on a croissant with lettuce and tomato. Really good!

6 hard-boiled eggs, chopped
1/3 cup celery, diced fine
1/3 cup mayonnaise
1/4 teaspoon salt
1/8 teaspoon black pepper
1/3 cup crumbled cooked bacon
4 split plain croissants
lettuce leaf
sliced tomatoes

Steps:

  • Mix together eggs, celery, mayonnaise and salt and pepper.
  • Fold in bacon.
  • Place 1/2 cup egg salad on each croissant half.
  • Top with lettuce and tomato and replace top half of croissant.

Jazz up your egg salad with a little BLT. Two classics combine resulting in the ultimate sandwich for grown-ups. For a lower-carb version, ditch the bread and serve in lettuce leaves.

12 eggs
¾ cup reduced-fat mayonnaise
⅓ cup shredded Cheddar cheese
2 green onions, chopped
2 teaspoons yellow mustard
½ teaspoon ground black pepper
4 strips cooked bacon, crumbled
6 grape tomatoes, halved
6 lettuce leaves
12 slices bread

Steps:

  • Place eggs in a large pot and cover with an inch of water. Bring to a boil over medium-high heat, cover, and remove from heat. Let sit for 10 minutes. Drain and run under cold water to stop the cooking. Peel the eggs and chop.
  • Combine eggs with mayonnaise, Cheddar cheese, green onions, mustard, and pepper in a large bowl. Stir gently until evenly mixed. Fold in bacon and tomatoes.
  • Layer egg salad and lettuce between 2 slices of bread to make each sandwich.

9 hardboiled egg, peeled
1/4 cup chopped green onion (4 medium)
1/4 teaspoon salt
1/4 teaspoon fresh coarse ground black pepper
1/2 cup ranch dressing
6 plain croissants, split
3 cups torn lettuce

Steps:

  • Cut each egg in half.
  • Remove yolk; place in large bowl. Mash yolks with fork.
  • Stir in onions, salt, pepper and ranch dressing.
  • Chop egg whites; stir into yolk mixture.
  • To make each sandwich, top bottom half of 1 croissant with about 1/2 cup lettuce and 1/2 cup egg mixture. Cover with top half of croissant. Repeat for remaining sandwiches.

  • Place the eggs in an even layer in a large pot. Cover with water. Bring to a boil over medium-high heat, then cover and turn off heat. Let sit for 10-12 minutes. Drain in a colander and run cool water over the eggs. This helps stop the cooking and also cools them down a bit for using in your sandwiches.
  • Peel the hard-boiled eggs and chop. Add the eggs to a medium-size bowl then add the mayonnaise, dill weed, salt and pepper and stir to combine.
  • Meanwhile, cook your bacon. I like to fry mine in a pan over medium heat. It takes about 8-10 minutes on the first side, until it’s cooked and getting crispy, then flip and cook another 2-4 minutes. At least for my thick-cut bacon; regular bacon will cook faster - just keep an eye on it. You can also make your bacon in the oven if you prefer. Once cooked, drain on paper towels to absorb the extra grease.
  • Toast your bread, if desired. I like it untested for regular egg salad sandwiches but I prefer it toasted for these sandwiches.
