2 cups milk
1 cup flaked coconut
4 eggs
1 teaspoon vanilla extract
½ cup all-purpose flour
6 tablespoons margarine
¾ cup white sugar
¼ teaspoon ground nutmeg

Steps:

  • Place milk, coconut, eggs, vanilla, flour, margarine, and sugar in blender. Mix well. Pour into a greased and floured 10 inch pie plate. Sprinkle nutmeg on top.
  • Bake at 350 degrees F (175 degrees C) for 45 minutes.

2 cups 2% milk
1 cup sugar
4 eggs
1/2 cup all-purpose flour
6 tablespoons butter
1 teaspoon vanilla extract
1/2 teaspoon salt
1 cup sweetened shredded coconut

Steps:

  • In a blender, combine the first seven ingredients. Cover and process for 10 seconds; scrape the sides. Process for another 10 seconds. Add coconut; process for 2 seconds or until blended. Pour into a greased 10-in. pie plate., Bake at 350° for 50-55 minutes or until a knife inserted in the center comes out clean. Serve warm.

Pastry for single-crust pie (9 inches)
3 medium limes
2 cups sweetened shredded coconut, divided
1 can (13.66 ounces) coconut milk
4 large eggs
1 cup sugar
1/4 cup all-purpose flour
1/4 teaspoon salt
1/2 teaspoon coconut extract, optional
1 cup heavy whipping cream
1 tablespoon confectioners' sugar
Toasted sweetened shredded coconut

Steps:

  • Preheat oven to 350°. On a lightly floured surface, roll pastry dough to a 1/8-in.-thick circle; transfer to a 9-in. pie plate. Trim pastry to 1/2 in. beyond rim of plate; flute edge. Refrigerate while preparing filling., Finely grate, peel and squeeze juice from limes; place both in a blender. Add 1 cup coconut, coconut milk, eggs, sugar, flour, salt and, if desired, extract. Cover and process until blended. Add remaining 1 cup coconut; cover and pulse just until combined. Pour into pastry-lined pie plate (pie will be full)., Bake on a lower oven rack 50-55 minutes or until a knife inserted in the center comes out clean. Cool on a wire rack; refrigerate until cold., In a small bowl, beat cream until it begins to thicken. Add confectioners' sugar; beat until soft peaks form. Spread over pie. 4 eggs
2 c milk
1/2 c flour
1 tsp vanilla
1 3/4 c sugar
6 Tbsp butter
1 c coconut

Steps:

  • 1. Add all liquid ingredients directly into blender.
  • 2. Then add flour, sugar and coconut.
  • 3. Blend 15 seconds in blender.
  • 4. Pour into greased and floured pie pan. Bake at 350 degrees. Bake time might be shorter or longer depending on oven. Bake till a golden brown.

1/2 c sugar
1/2 c biscuit mix
1/4 c soft butter or margerine
4 medium eggs
1-1/2 tsp vanilla
1-1/2 c flaked coconut

Steps:

  • 1. Combine milk, sugar, biscuit mix, eggs, butter and vanilla, in a blender. Cover and blend for3 minutes on low speed.
  • 2. Pre-heat oven 350 F. Butter a 10 inch pie plate, sides and all. Pour batter into the pie plate. Let set for 5-10 minutes.
  • 3. Sprinkle the top gently with the coconut. Put in the heated oven ,on the middle rack. Bake for 40-45 minutes.
