Roasted Rockfish Rockefeller image

Provided by Food Network

Categories     main-dish

Time 55m

Yield 2 servings

Number Of Ingredients 20

1 pound fresh spinach
1 cup heavy cream
1/2 cup prosciutto ham, sliced and diced
3 ounces Parmesan cheese
10 gulf oysters
1 cup fish stock
Pinch saffron
2 ounces Pernod
Sea salt and pepper, to taste
Arrowroot, if needed
6 ounces local rockfish
2 garlic cloves, minced
2 shallots, chopped
3 sweet potatoes, one sliced on mandoline
1 zucchini
1 summer squash
1 turnip
Butter
1 bulb fennel, thinly sliced
Chervil sprigs

Steps:

  • Make Rockefeller mixture: Saute spinach. Mix in cream, ham and Parmesan cheese. Poach the oysters in fish stock, then add to spinach mixture.
  • To make the sauce: Reduce fish stock, add garlic, shallots, saffron and Pernod. Season with salt and pepper. Thicken with arrowroot, if needed.
  • Preheat oven to 350 degrees. Prepare the fish: Use 2 pieces of fish. Leave 1whole and cut a slit in the middle of the second. Place stuffing on whole piece. Lay the second piece over the stuffing so the stuffing shows through the slit. Bake in oven for about 15 minutes.
  • Make the Sweet Potato Napoleon: Deep-fry the 1 sliced sweet potato until crisp. Boil the rest of the potatoes until soft. Put through food mill. Plate by layering the sweet potato chips and pureed potatoes.
  • Make the Parisian Vegetables: Make Parisian balls with a melon scoop out of the zucchini, summer squash, and turnip. Blanch and toss in butter.
  • Deep-fry the fennel flames.

TILAPIA OVER LEEK RAGOUT

Tilapia over Leek Ragout image

Provided by Robert Irvine : Food Network

Categories     main-dish

Time 45m

Yield 6 servings

Number Of Ingredients 19

2 tablespoons olive oil
2 tablespoons unsalted butter
2 onions, chopped
1 cup white wine
6 leeks, white and tender green parts only, thoroughly soaked in salt water to release grit, and sliced on the diagonal into 1/2-inch pieces
1/4 cup cornstarch
1/2 cup heavy cream
1/4 cup freshly grated Parmesan, preferably Parmigiano-Reggiano
Salt and pepper
12 (3-ounce) tilapia fillets (these are thin fillets, so each person will get about 2 fillets)
1 1/2 cups cornmeal
1 1/2 cups semolina flour
2 tablespoons Irvine Spices Roasted Garlic Pepper Seasoning
1 teaspoon salt
1 to 2 cups milk, as needed to moisten fish
1/4 cup olive oil
2 tablespoons unsalted butter
2 fresh lemons, sliced
12 sprigs fresh parsley (about 2 ounces)

Steps:

  • To begin the creamed leeks, heat the olive oil and butter in a medium saute pan over medium heat and saute the onions until translucent. Deglaze the pan with wine and add the leeks, cooking gently until the liquid is almost all gone. Make a slurry by gradually adding the cornstarch to the cream, and then whisk in the Parmesan. When the wine has mostly evaporated, stir the slurry mixture into the leeks, season with salt and pepper, and reduce heat to a simmer to allow reducing and thickening. Set aside in a warm place.
  • Slice each fish fillet in half lengthwise. In a plastic bag, shake together cornmeal, flour, garlic pepper seasoning, and salt. Moisten fish by dipping in milk and shake in bag to coat with cornmeal mixture. Heat olive oil and butter over medium heat in a large skillet, and cook each side of coated fish until golden brown. Do not overcook the fish - it is done when it springs back upon gentle prodding.
  • Spoon some leek ragout in the middle of serving plate, top with tilapia, and garnish with parsley and lemon slices.

ROASTED HALIBUT WITH LEMONS, OLIVES AND ROSEMARY

Roasted Halibut With Lemons, Olives and Rosemary image

Fish can be finicky dinner-party fare, especially for the distracted cook. Step away for a moment to sip your cocktail and your fillets might go from pearly to parched. This dish, though, inspired by one from Southern Italy, elegantly feeds a crowd. The fish, halibut, is seasoned with chile, salt and olive oil, then topped with rosemary, lemon and olives and roasted. It's a lighter main dish that won't leave anyone hungry.

Time 10m

Yield 2 servings

Number Of Ingredients 7

2 (8-ounce) halibut fillets, preferably at least 1-inch thick
1 1/2 teaspoons extra virgin olive oil, more to taste
Kosher salt
Ground chile pepper, preferably Turkish or Aleppo
2 rosemary branches
1 small lemon, very thinly sliced
1/4 cup sliced, pitted calamata or other good-quality black olives

Steps:

  • Heat oven to 450 degrees. Place fish in a baking dish, brush fillets with 1 teaspoon of oil and season with salt and chile pepper. Top each fillet with a rosemary branch and several slices of lemon. Drizzle remaining oil over lemon slices and sprinkle with additional salt. Scatter olives over fish and pan.
  • Bake until just opaque, about 10 minutes. If lemon slices have not browned or singed (this will depend on how thinly you slice them), place pan under broiler for 1 to 2 minutes. Serve drizzled with more olive oil; sprinkle with more salt and chili, if desired.
