Blackened Home-Fried Potatoes From Hell image

I found this on Food Network Canada, courtesy of the Surreal Gourmet. These are amazing, and practice makes perfect!

Number Of Ingredients 7

2 lbs potatoes (Yukon Gold, white, or, red, are best)
too much butter
too much olive oil
6 cloves garlic, diced
1 medium cooking onion, diced
1/2 cup thyme or 1/2 cup dill, stems discarded before measuring
salt & freshly ground black pepper, to taste

Steps:

  • Quarter potatoes, skin on, and boil them in eight cups of water with a teaspoon of salt for approximately 20 minutes, or until tender to the poke of a fork.
  • Drain water.
  • In your best large nonstick pan or well-seasoned skillet, over medium-high heat, add 1 tablespoon butter and 1 tablespoon olive oil.
  • When the butter/oil mixture is hot, transfer potatoes to pan and use a spatula to chop the quarters into smaller pieces (there is no science here).
  • As the potatoes absorb the butter and oil during cooking, continue to add equal amounts of each, as required, to keep the pan well greased.
  • Sauté for 20 minutes, turning occasionally, or until potatoes begin browning on all sides.
  • If the potatoes start burning before they brown, reduce the heat.
  • Add garlic, and onions and continue cooking for 15 more minutes, or until potatoes, garlic and onions are all very browned and crispy.
  • When it seems potatoes are almost done to your liking, add herbs, salt, and pepper to taste and toss well.
  • Serve immediately on warmed plates.
  • Note: It’s all in the timing of adding the garlic and onions (which can only really be learned through trial and error).
  • Adding them too soon will cause them to burn before the potatoes are crisp, and too late will prevent the garlic and onion from fully caramelizing.

1/4 cup canola oil

pepper
paprika

Steps:

  • Peel potatoes and cut in slices.
  • Rinse potatoes and set aside.
  • Heat skillet and add enough oil to coat bottom of skillet.
  • Add potatoes and season with salt, pepper, and paprika.
  • Halfway through flip potatoes and add more salt, pepper, and paprika.
  • Cook covered for about 20 minutes or until cooked through.
  • Enjoy!

16 baby potatoes
6 cloves garlic, minced
1/3 cup fresh basil leaves, stems discarded, minced
1/4 cup olive oil
1/2 teaspoon salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Preheat the oven to 400 degrees F.
  • Roast potatoes, skin on, for approximately 30 minutes, or until cooked throughout and crispy on the outside.
  • In a large bowl, add garlic, basil, olive oil salt and pepper. Add roasted potatoes. Use a fork or whisk to smash potatoes, but do not smash so much that they are totally mashed. Toss thoroughly so that potatoes are coated with the oil, herbs and spices.

This was such a wild combination I just had to try it! And I'm glad I did. Anyone looking for something unusual? This is from the Hot & Spicy & Meatless cookbook, which also mentions that you can top this with parmesan cheese, though I haven't tried that. This gives pasta a spicy, tropical flavor that is fresh and delicious. Feel free to add some habanero sauce if it's not spicy enough for ya!

2 tablespoons olive oil
1 onion, diced small
1 red bell pepper, diced small
2 bananas, sliced
1/4 cup pineapple juice
3 oranges, juice of
2 limes, juice of
1/4 cup chopped fresh cilantro
3 -4 tablespoons minced habanero peppers
8 -16 ounces cooked pasta, depending on how much sauce you like on your plate (fettuccini or linguine works well)

Steps:

  • Heat oil in saucepan and saute onion and bell pepper on medium heat about 4 minutes or till almost tender.
  • Add bananas and pineapple& orange juices, simmer 5 minutes till bananas are soft.
  • Remove from heat and add lime juice, cilantro and habaneros.
  • Mix well.
  • Add this to the hot pasta and mix.
  • Season with salt and pepper if you wish.

12 red potatoes, small
1 red onion, cut in julienne
1 garlic clove, crushed
2 tablespoons canola oil
2 tablespoons olive oil

This salsa will keep, covered and refrigerated, about 5 to 6 weeks, mainly because no mold or bacteria would dare to come near the stuff.

1 tablespoon minced garlic
1/3 cup virgin olive oil
6 ripe plum tomatoes, halved freshly ground black pepper
10 habanero peppers
1/4 cup lime juice (about 2 limes)
1/4 cup chopped cilantro

Steps:

  • Combine tablespoon of olive oil and garlic and mix well.
  • Rub tomato halves with this mixture, sprinkle with salt and freshly cracked pepper and roast in 500-degree oven until they begin to take o some serious color, about 15 to 20 minutes.
  • Remove from oven, cool to room temperature and dice.
  • Meanwhile, grill habanero peppers over a medium-hot fire until slightly colored, 2 to 3 minutes.
  • Remove peppers from fire and mince.
  • Be very careful when working with this pepper.
  • Wear gloves when mincing it, and if you get any of the juice on your skin, wash it off with a mild bleach solution, which neutralizes the capsaicin.
  • Also, be sure not to rub your eyes while working with these peppers, and wash your hands well after you're done.
  • These little guys are incendiary.
  • In medium-size bowl, combine tomatoes, peppers, 1/4 cup olive oil, lime juice and cilantro, mix well, and prepare for takeoff.
