Bourbon has been popular at our house since we visited the Kentucky Bourbon Trail a few years ago. Every bite of this jam reminds me of that fun trip. -Katie Ferrier, Houston, Texas

Yield 3 half-pints.

Number Of Ingredients 5

4 cups finely chopped peeled fresh peaches (about 6 medium)
1-1/2 cups packed brown sugar
1 cup sugar
1 tablespoon lemon juice
3 tablespoons bourbon or 3 teaspoons vanilla or bourbon extract

Steps:

  • In a large saucepan, combine peaches, sugars and lemon juice; bring to a boil. Reduce heat; simmer, uncovered, until mixture is thick and a thermometer reads 220°, about 60 minutes. Remove from heat; skim off foam. Stir in bourbon., Ladle hot mixture into 3 hot half-pint jars, leaving 1/4-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight., Place jars in canner, ensuring that they are completely covered with water. Bring to a boil; process for 10 minutes. Remove jars and cool.

1 pound Blackberries
1 tablespoon Lemon Juice
1/2 cup sugar
1 package Vanilla Bean
1 tablespoon Bourbon

Steps:

  • Place 3 spoons in the freezer. Split a vanilla bean and scrap the beans using the back of your knife. Place blackberries in a pot and add sugar, lemon juice, vanilla bean, and bourbon and using a potato masher or fork, mash the blackberries. Add the lemon tip and let the fruit macerate for a couple hours.
  • Heat pot on medium and adjust heat so fruit is at a gentle boil. Cook for about 10-15 minutes. During this time, check if the jam has set by testing it on the frozen spoons. Pour some jam over the back of a frozen spoon and if the liquid doesn't run off the spoon, the jam is set.
  • Let the jam cool and store in jars

  • If using fresh blackberries, place the rinsed blackberries in a medium-sized sauce pot. Use a wooden spoon or a potato masher to mash the blackberries a bit to help break them open a little. If using frozen blackberries, simply place them in the pot and let them thaw a little. No need to break them up too much because they will break up as they cook.
  • Add the bourbon, vanilla, lemon zest, lemon juice, and sugar. Stir and let the mixture sit for about 10 minutes.
  • Cook over medium-high heat until the mixture begins to bubble (or if using frozen blackberries, until they thaw - stir frequently). Turn the heat to low and simmer for about 20-25 minutes, or until desired thickness. For thicker consistency, simmer an extra 5-10 minutes. The jam will thicken a little as it cools. Carefully taste the jam (it's hot!) and see if you need to add more sugar. If adding more sugar, let it dissolve before removing from heat.
